TOMATO AND GARLIC CHICKEN CURRY
If you are looking for a new way to eat lean chicken breast, but you don't like spicy food, then give this Tomato and Garlic Chicken Curry a try.

Steps:
- Add the olive oil to a large pan and add the onion, garlic and ginger and cook for 3 minutes until softened.
- Add the chicken and cook for a further 3 minutes until browned.
- Once the chicken is browned, add the red chilli flakes, cumin, turmeric, cinnamon and coriander to the pan and mix well and cook for 1 minute.
- Add the chopped tomatoes and tomato puree and gently simmer for 20 minutes until the chicken it cooked through.
- Stir through the Greek yoghurt and coriander before serving and serve with rice.

GARLIC CURRY CHICKEN & SPINACH
This one sounds so good to me but I haven't made it yet. I found it on a recipe card at Shop Rite and this is what is written about it: "Coconut milk adds a unique flavor to this chicken dish. Strips of fresh spinach are stirred in at the last minute for a nutritious meal." This is considered an easy recipe on the card. Serve with white rice.

Steps:
- In a large nonstick skillet, heat oil over medium-high heat until very hot but not smoking.
- Add chicken and cook and stir about 4-6 minutes or until browned.
- Add garlic and curry and cook, stirring, about 30 seconds.
- Stir in coconut milk; reduce heat to medium-low. Cook 3-4 minutes or until chicken is thoroughly cooked.
- Add spinach; toss and mix to wilt spinach. Cook just until spinach is wilted. Add salt and pepper to taste and serve with hot cooked rice.

STICKY GARLIC CURRY CHICKEN
I was dying for a sweet sauce and craving curry, so I threw this together. My family swooned over it! We poured it over Jasmine rice and stir-fried vegetables. Yummy! It is adaptable for any cut of chicken cooked with any method. It's the last part of the cooking that counts!!

- Mix all sauce ingredients together in a small bowl.
- Pour over chicken for the last 30 minutes of roasting, or if using other cooking method, use like you would bbq sauce.
- Baste often.
- Serve when chicken is cooked through and glaze is golden and bubbly.
- Cook time does not include initial cook time for chicken.

CURRIED CHICKEN THIGHS
Steps:
- Heat oil in large skillet and stir in butter to melt. Season chicken thighs with salt and pepper. Cook thighs skin side down until golden brown. Flip chicken and continue to cook until golden brown. Remove chicken to a plate.
- Stir in onions and cook until tender. Stir in curry, cayenne, cinnamon and cumin and cook until aromas are released. Stir in carrots and toss to coat. Add chicken stock and bring to a simmer.
- Place chicken thighs back into skillet and stir in broccoli. Cover and simmer for 15 minutes to cook chicken.
- Stir in cream and peas. Season to taste. Serve with basmati rice.
CURRIED CHICKEN
Steps:
- In a large frying pan, heat the butter and saute the onion, garlic, and ginger until the onion is soft, but not brown. Add the curry powder and chiles, stirring so that they do not stick or burn. Add the vinegar. There should be enough to make a smooth paste.(You may need up to 1/4 cup more vinegar.) Cover the chicken pieces with the paste and place them in a covered bowl in the refrigerator. Allow the chicken pieces to marinate for at least 2 hours. When ready to cook, place the chicken pieces in a large frying pan and add enough water to reconstitute the paste and prevent scorching. Cover and cook over low heat for 30 minutes. (You may find that you will have to add more water to prevent scorching.) After 30 minutes, add the potatoes, cover and continue to cook for an additional 15 minutes, or until the potatoes and chicken are done.
JAMAICAN CURRIED CHICKEN

- In sauce pot over medium heat put some oil and brown chicken pieces in batches. Do not crowd pot. Transfer chicken to bowl until all is browned. Pour off oil from pot. Now add a little fresh oil and start sauteeing onions. Just as they start to get color, add scallions, ginger, garlic, and curry powder. Stir and continue to saute for a few more minutes. Then, add tomatoes and chicken pieces back to pot. Now, add water or stock. Bring this all to a simmer and cover. In about 35 to 50 minutes, depending on size of chicken pieces, curry will be ready.
CURRIED CHICKEN
Steps:
- Mix curry, garlic and onion with water. Add to pot with hot oil. Fry for about 2 minutes, then add meat. Fry for a little while. Then add pepper, chives and 1 tomato diced. Fry for a little while again and then add coconut milk. Simmer for about 20 minutes. Keep turning. Have a kettle of boiling water, and add some to pot to make gravy. Sprinkle with ground cumin.
- This meal is usually served with white rice or roti skins.
CURRIED CHICKEN BREAST
This is easy. You can also put steamed cauliflower,or peas when you add the soup. Serve over rice. Top with fried onions (you can find in the Indian section of your grocery store).

- In a large skillet, heat 1 tablespoon of oil and butter.
- When hot, saute onions and garlic till soft, remove onions and garlic.
- Add more oil if needed and brown 4 boneless chicken breast.
- Add to chicken cream of mushroom soup and 1/2-cup water.
- Return onions and spices back to pan with chicken mixture; cover and simmer until done.

This one comes from my newlywed days when I received a whole set of illustrated recipe cards. I tweaked it to suit our tastes into a very flavorsome and aromatic meal! The rice cooks in the microwave while the chicken works in the frying pan; why--dinner will be ready before you know it--altho' you WILL have to listen to LOTS of begging (as in, "What are you making that smells so good?" and "Are we ever going to eat?").

- THE RICE: Dump ingredients into a microwave-safe casserole dish; zap in the microwave until fluffy; keep covered; set aside.
- THE CHICKEN: Melt butter in large HOT frying pan, add chicken and brown on all sides; remove pieces as it browns (keep warm).
- THE SAUCE: To butter in pan, add onion pieces, cook & stir until soft and beginning to brown.
- Mix in garlic and curry powder, stirring for one minute; quickly add ginger & tomato paste, pour in HALF of the broth, stirring up the fond, then the remainder of the broth.
- Return chicken to pan, spooning some of the sauce over each piece; cover & reduce heat.
- Simmer chicken until tender (about 30-40 minutes).
- Mix cornstarch & water.
- Pile half of chicken on the other pieces to clear a space in the pan; stir cornstarch-water into cleared spot and cook until thickened.
- Salt to taste, then return chicken to pan and coat on all sides with that rich-looking sauce.
- Serve with rice and use sauce for gravy.

CURRIED CHICKEN BREAST
Loosely based on a recipe I cut from the Daily Herald years ago. I added this, omitted that until it was just right. I use RedGold brand of tomatoes with HOT chili peppers, use whatever level of heat you enjoy. You can swap out for plain tomatoes and leave out the cayenne and it's still yummy. Use a large high sided skillet to contain spatters. I use my non-stick dutch oven. Pre-measuring everything helps.

- Measure spices into a small bowl.
- Place garlic, ginger and onion in another bowl.
- Place skillet over medium heat, add oil and butter. Wait for the butter to melt.
- Add the spices; stir and cook for a minute or two until the spices become fragrant.
- Add onion, ginger and garlic. Cook, stirring frequently, until softened, about 5 minutes.
- Cut the chicken in half crosswise, so you have 6 evenly sized pieces.
- Add the chicken and cook 3 minutes, flipping the chicken occasionally.
- Add potatoes, tomatoes with it's juice and cilantro.
- Reduce heat if necessary and simmer 20 - 30 minutes until chicken is cooked through.
- Remove from heat. Stir sour cream into sauce.
- Serve immediately with hot rice and garnished with raisins.

Has a mellow garlic flavored herb sauce for the chicken. Goes great with either mashed potatoes or rice.

- Brown chicken and garlic in hot oil in a large saute pan.
- Add wine, broth, lemon juice, and spices.

- Remove any bones or skin from the chicken breasts. Cut into 1 inch cubes. There should be about 3 cups chicken and 2 cups shrimp all together. Set aside.
- Heat half the butter in a Dutch oven over medium heat and add onion and garlic. Cook about 1 or 2 minutes, then add celery. Cook another minute then season with curry powder and stir. Add the tomato paste; stir. Add banana and apple; stir. Add the broth and stir until liquid is well blended. Salt to taste and simmer 10 minutes.
- Heat the remaining butter in a saucepan. Add the chicken. Season with salt and pepper. Cook about 2 to 3 minutes. Add shrimp and cook an additional 2 minutes, stirring.
- Meanwhile, pour the curry mixture into the bowl of a food processor or blender and process until smooth. Can also be done with an immersion blender.
- Pour the sauce over the chicken and shrimp, heat 2 minutes and serve.

- Preheat oven to 350 degrees.
- Spray baking dish with cooking spray.
- Heat oil, (and butter if using) in a small skillet.
- *Optional step*~I brown the chicken in this skillet first, on each side.
- Remove chicken if browning and put in baking dish.
- Or if you didn't brown chicken, just place salt and peppered chicken pieces in baking dish.
- Add onion and apple, cook until soft over med/high heat.
