These garlic cheesy potatoes are the ultimate comfort food! Thinly sliced potatoes are baked in a garlic cream sauce and topped with melted cheese.

8 medium smooth skinned potatoes (I used Vivaldi potatoes, mine weighed approx. 900g)
1 cup (240ml) milk
½ cup (120ml) double (heavy) cream
1 cup (200g) ricotta cheese
2 teaspoons dried garlic powder
2 tablespoons nutritional yeast (optional*)
2 good pinches sea salt
½ cup (50g) shredded Gruyère cheese

Steps:

  • Preheat the oven to Gas Mark 5 (375F degrees).
  • Slice the potatoes as thinly as you can (1/4 inch thickness or less).
  • Combine the milk, cream, ricotta, garlic, nutritional yeast (if using) and salt in a large bowl and whisk together until smooth.
  • Add the sliced potatoes to the bowl and stir gently so that all the slices get coated in the cream mixture.
  • Remove the potato slices using a large spoon and place into a 9 inch square roasting dish. Pour any remaining cream mixture over the top and using the back of the spoon, gently press the potatoes down.
  • Cover the dish with foil and bake on the middle oven shelf for 45 minutes.
  • Remove the foil, press down the potato slices again to keep the top layer from drying out, then return to the oven until most of the cream is absorbed and the potatoes are tender (mine took another 30 minutes).
  • Scatter the shredded cheese over the top and bake for a further 10 - 15 mins or until the cheese is melted and bubbling.
  • Leave to stand for a few minutes before serving.

8 -9 large russet potatoes, peeled and sliced
2 (10 1/2 ounce) cans mushroom soup, undiluted (can use 2 cans golden mushroom soup also)
1/3 cup whipping cream
1/3 cup sour cream
250 g Velveeta cheese, cubed small (can use more)
1/4 cup butter, melted
seasoning salt
fresh ground black pepper
1 tablespoon minced fresh garlic
1 small onion, chopped (can use 3-4 green onions also)
2/3 cup grated parmesan cheese, divided (or to taste)

Steps:

  • Set oven to 350 degrees F.
  • Grease a larger-size casserole dish (enough to hold the mixture, I use my white Corning Ware 13 x 9-inch baking dish for this).
  • Place the sliced potatoes in the the baking dish.
  • In another bowl, combine the soup, sour cream, cubed Velveeta cheese, whipping cream, melted butter, seasoning salt, (I use about 1 teaspoon) and pepper to taste minced garlic, chopped onion and 1/3 cup Parmesan cheese; mix well to combine.
  • Pour over the potatoes in the dish; mix/toss to coat.
  • Top with remaining 1/3 cup (or to taste) grated Parmesan cheese.
  • Bake, covered for about 1 hour and 15 minutes, or until potatoes are tender, (uncover for the last 15 minutes of baking).
  • NOTE about 15 minutes before removing from oven, if desired sprinkle about 1 cup of grated cheddar cheese on top, then return to oven for about 15 minutes, this is optional only.

8 medium golden potatoes
1 large head of garlic
1/4 cup butter
1/2 cup plain Greek yogurt
1/2 cup low-fat milk
1/4 cup grated parmesan cheese
2 tablespoons paprika

Steps:

  • Scrub potatoes and cut into eighths. Clean garlic, leaving cloves whole.
  • Place potatoes and garlic in a large stockpot and cover with water. Bring to a boil over medium high heat and cook until potatoes and garlic are tender, about 18 to 20 minutes.
  • Drain potatoes and garlic. Place in a large bowl and add butter and milk. Whip well; add yogurt and Parmesan cheese. Whip until smooth and creamy, about 3 to 4 minutes.
  • Place in a serving bowl and sprinkle with paprika.
  • Serves 6 to 8.

3 medium potatoes, scrubbed
¼ cup olive oil
1 slice vegan Cheddar cheese (such as Daiya®)
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
¼ teaspoon chopped fresh chives, or to taste

Steps:

  • Poke vent holes in the potatoes. Microwave on high for 13 minutes.
  • Meanwhile, put olive oil, vegan cheese, garlic, salt, and pepper in a small pot over medium-low heat. Heat until cheese is fully melted and garlic is cooked.
  • Let potatoes cool slightly. Halve them and scoop the flesh out into the pot. Discard skins.
  • Mash potatoes and cheese sauce together until fully incorporated.

I saw the original recipe in a Kraft Food & Family magazine. I have used it numerous times since then, and changed it a bit to meet our tastes. Here's what we usually do. The bacon can be easily subbed with vegetarian bacon, which I do frequently for our vegetarian guests. This is a favorite for our game watching!

4 large potatoes
1 head garlic
5 teaspoons olive oil
1/2 cup sour cream
4 ounces processed cheese, cubed (like Velveeta)
pepper, to taste
4 slices bacon or 4 slices vegetarian bacon, cooked and crumbled
2 green onions, chopped

Steps:

  • Preheat oven to 400°F.
  • Place each potato and head of garlic onto its own piece of foil, which should be large enough to fully wrap around the potato or garlic.
  • Prick the potatoes several times one each side with a fork. Cut off the top of the garlic to expose the top of the cloves.
  • Drizzle each potato and the heads of garlic with olive oil.
  • Move to oven and bake for an hour. (I usually place them on a cookie sheet to prevent any oil from dripping and to make it easier to put in and out at once).
  • Remove the potatoes and garlic from the oven and reduce heat to 350°F.
  • Unwrap each potato and halve the short way (so they look like little cups, as opposed to a long "boat"). Cut off a small bit on each of the smaller, round ends so that they will sit up straight. Gently scoop out the potato flesh, leaving a thin edge all the way around the cup. Avoid breaking the potato skin.
  • Mash the potato flesh in a medium bowl. Add sour cream, processed cheese (reserve 8 small cubes), and pepper, and beat until fluffy.
  • Stuff mixture into the cups - it will be quite full, so mound on top as needed.
  • Return to oven and bake for an additional 25 minutes, until heated through and cheese has melted.
  • Top each potato half with a remaining piece of cheese and return for an additional 5 minutes, or until the cheese on top has melted.
  • Garnish the potatoes with bacon and green onions before serving.

3 lbs Red Bliss potatoes (sliced 1/4-inch thick)
2 1/2 ounces savory herb with garlic (knorr's envelope)
3 tablespoons olive oil (extra light)
1/2 red pepper (diced) (optional)

8 ounces cheddar cheese (shredded)

Steps:

  • Slice Potatoes 1/4" thick and place in large plastic bag.
  • Add seasoning packet, red pepper and parmesan cheese.
  • Use enough olive oil to just coat potatoes and toss.
  • Refrigerate an hour if possible.
  • Place in casserole and bake 350 for 45 minutes.
  • Add shredded cheddar or any good meltable cheese and place back in oven for 5-10 minutes. (if you like golden & harder cook a bit longer before adding cheese).

They are rich, but oh so good! You can vary the cheeses according to taste and add onions, too. I originally got the recipe from AllRecipes, but I have altered a couple of things that helped the recipe we believe. It is a family favorite!

1 1/2 lbs potatoes, thinly sliced (I use my KitchenAid slicer attachment to make thin. SaladShooter or mandolin works well, too, as lon)
2 tablespoons butter, divided
1 pint heavy cream (or to make it lighter I have made with 2 cups milk and 2 T. cornstarch heated until thicker)
2 garlic cloves, minced
salt and pepper
2 cups cheddar cheese, shredded
4 slices provolone cheese
1/2 cup parmesan cheese or 1/2 cup romano cheese, grated

Steps:

  • Preheat the oven to 350 degrees F (165 degrees C).
  • Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
  • Layer half of the potato slices in the bottom of the casserole dish.
  • Dot with half of the butter cut or pinched into small pieces.
  • Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over.
  • Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, butter, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese.
  • Season again with salt and pepper. Cover with foil that the underside has been sprayed with cooking spray.
  • Bake for 1 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top.
  • This will create a semi-hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork.
