ROASTED GARLIC DEVILED EGGS

- Preheat oven to 350°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Drizzle cut cloves with oil. Wrap in foil. Bake until cloves are soft and light golden, 50-60 minutes. Unwrap; cool completely., Meanwhile, cut eggs lengthwise in half. Remove yolks to a bowl; reserve whites. Squeeze garlic from skins and add to yolks; mash yolks and garlic with a fork. Stir in mayonnaise, cheese and paprika., Spoon or pipe filling into egg whites. If desired, sprinkle with chives. Refrigerate, covered, until serving.

- Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil, then cover, remove from heat, and let sit for about 12 minutes.
- Transfer the eggs to a bowl of ice water for about 3 minutes, then peel them and cut them in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside.
- Mix the mayonnaise, mustard, relish, salt, and pepper with the yolks and transfer to a piping bag. (Alternatively, use a zip-top bag with a corner cut off.)
- Pipe the mixture into the egg whites, garnish with paprika and parsley, and serve chilled.
- Enjoy!

GARLIC AND PARSLEY DEVILED EGG RECIPE

- Begin by making hard boiled eggs. Now don't be embarrassed if you haven't quite mastered this skill yet. It seems like a lot of people struggle to properly boil an egg, so here are some helpful pointers. Place your eggs in a medium-sized saucepan and then cover them with cold or lukewarm water. Place the saucepan over high heat and let the water come to a boil. As soon as it does, immediately reduce the heat to low and continue cooking for no more than 10 minutes. You must time this, as just a minute more or less can completely mess your eggs up! Right at the 10 minute mark remove the pot and place it under a faucet of running cold water. Once the water in the pot in ice cold, you can turn it off and allow the eggs to cool longer. In the mean time, you can start preparing the filling for the eggs. In a small bowl, whisk together the mayonnaise, mustard, Worcestershire sauce, if using, lemon juice and one tablespoon of the parsley. Heat a small skillet over a medium-high heat and toss the garlic in the olive oil. Saute for just a minute, until the garlic starts to turn golden brown. Remove from the heat and mix in the other filling ingredients. Once the eggs have cooled, peel the shells and cut each egg in half. Using a small spoon, scoop out the yolk and add it to the rest of the filling mixture. Give it a good mix and then add salt and pepper to taste. When you are satisfied with the filling, it is time to stuff the eggs. I used a pastry bag to do this part, as I find it difficult to try and spoon the filling into such a small space, all the while trying to make it look presentable. Be sure to fill each egg white generously. Line a large platter with the Romaine lettuce leaves. Place the completed eggs atop the lettuce, sprinkle the remaining parsley on top and you are ready to serve! Now I am not going to lie, you and your guests will have a garlic breath, but it is way worth it! Enjoy!

LEMON CAPER DEVILED EGGS
I love deviled eggs. Love. I always say, "It's not a party at my house without deviled eggs." It's hard to beat the classic rendition, but every now and then I'll mix things up. I came up with this recipe for a dinner I cooked at the South Beach Wine and Food Festival, where I topped them with fried oysters. They're obviously delicious that way (anything fried, am I right?), but I like them just as well without the garnish. I've made them with lemon and capers so many times now, I have almost forgotten what they taste like plain!

- Fill a large saucepan with water and bring to a boil over high heat. With a ladle, slowly lower the eggs into the water, one by one. Reduce the heat to a low boil and cook for 10 minutes. Drain. When they are cool enough to handle, peel the eggs.
- Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites, cut-side up, on a serving platter. Blitz the egg yolks by themselves for about 10 seconds. To the yolks, add the mayo, mustard, capers, salt, pepper, garlic and lemon zest. Process until well blended and smooth, scraping down the sides as necessary.
- Transfer the mixture to a resealable plastic bag. Seal the bag, then use scissors to snip off the tip of one of the bottom corners to form a small hole. Pipe the egg yolk mixture into the egg whites or store the egg whites and yolk mixture separately in the fridge until ready to fill and serve, one to two days. Garnish the filled eggs with paprika and parsley and serve immediately.

- Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. - Preheat oven to 450°F.
- Prick eggplant with a fork several times and on a baking sheet rub with just enough oil to coat.
- Cut off and discard top quarter of garlic head to expose cloves and set garlic in middle of a large piece of foil. Drizzle garlic with 1 teaspoon oil and enclose completely in foil. Place foil packet next to eggplant on baking sheet and roast in middle of oven, turning eggplant after 30 minutes, 45 to 50 minutes, or until eggplant is very soft and collapsed. Unwrap garlic carefully and cool eggplant and garlic on baking sheet.
- Transfer eggplant to cutting board. Cut off and discard stem end and halve eggplant lengthwise. Scoop flesh out into a bowl, scraping as close to skin as possible. Pour off any liquid accumulated in bowl.
- Squeeze roasted garlic from skins into a food processor. Add eggplant, lemon juice, tahini, parsley, and salt to taste and blend until smooth and parsley is minced fine. Dip may be made 1 day ahead and chilled, covered.
- Transfer dip to a bowl and serve with pita wedges.
