This baked cod is an easy and foolproof recipe for perfectly buttery, garlicky, and flaky fish every time!

Number Of Ingredients 8

4 6-ounce cod filets
3 tablespoons butter (softened)
1 tablespoon olive oil
3 garlic cloves (minced)
2 tablespoons parsley, chives, thyme or other herbs (finely chopped)
1/2 teaspoon paprika
1 lemon (thinly sliced)
salt and pepper (to taste)

Steps:

  • Preheat your oven to 400F/200C. Place the cod in a baking dish.
  • In a small bowl, mix together the butter, olive oil, minced garlic, parsley, paprika, salt, and pepper.
  • Spread the compound butter mixture on top of each filet.
  • Lay the lemon slices both on top and under the cod filets.
  • Bake in the oven for 13-15 minutes, or until the cod is opaque and flakes easily with a fork. Before serving, spoon the juices from the baking dish over the cod.

5 tablespoons of butter, divided
4 (6 - ounce) cod fillets
½ lemon
Salt
Pepper
3 garlic cloves, minced
½ cup panko
3 tablespoons chopped parsley

Steps:

  • Preheat oven to 425 degrees.
  • Coat a 9 x 13 inch baking dish with 1 tablespoon of butter. Place the cod in the dish and season with lemon juice, salt, and pepper.
  • Melt the remaining 4 tablespoons of butter in a medium sized sauté pan. When the butter has melted and just begins to foam, turn off the heat and add the garlic. Let garlic infuse the butter for a minute or so.
  • Add the panko and lightly toss until all the butter has been absorbed. Stir in the parsley and season to taste with salt and pepper.
  • Evenly divide the panko mixture on top of each cod fillet.
  • Bake for 10 to 15 minutes or until panko crumbs are golden brown and fish is just cooked through.

2 x 140g skinless cod loin or pollock fillets
1 tbsp rapeseed oil, plus 2 tsp
1 tsp fresh thyme leaves
1 large garlic clove, finely grated
½ lemon, zested and juiced
1 large red pepper, sliced
2 leeks, well washed and thinly sliced
2 tbsp flaked almonds
1 tbsp tomato purée
¼ tsp vegetable bouillon powder
1 tsp apple cider vinegar
100g baby spinach, wilted in a pan or the microwave

Steps:

  • Heat oven to 220C/200C fan/ gas 7 and put the fish fillets in a shallow ovenproof dish so they fit quite snugly in a single layer. Mix 1 tbsp rapeseed oil with the thyme and garlic, spoon over the fish, then grate over the lemon zest. Bake for 10-12 mins until the fish is moist and flakes easily when tested.
  • Meanwhile, heat the remaining oil in a non-stick pan and fry the pepper and leeks for 5 mins until softened. Add the almonds and cook for 5 mins more. Tip in the tomato purée, 5 tbsp water, the bouillion powder and vinegar, and cook briefly to warm the mixture through.
  • Add the juice of up to half a lemon and blitz with a stick blender until it makes a thick, pesto-like sauce. Serve with the fish and the wilted spinach.

  • Heat broiler.
  • Mix dressing and seasonings until blended.
  • Place fish on rack of broiler pan sprayed with cooking spray; brush with dressing mixture.

Such a simple fish recipe and it packs a lot of flavor. This is for garlic lovers! Note: if the breadcrumb coating doesn't immediately adhere to the fish, just pat it on. It works great.

1 tablespoon unsalted butter, plus a little more to oil roasting pan
2 tablespoons extra virgin olive oil
6 garlic cloves, chopped
1 cup breadcrumbs (I use seasoned)
1/4 cup parsley, chopped
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 egg, beaten
2 lbs boneless cod fish fillets, 1 inch thick and cut into 4 pieces
4 lemon wedges, for serving

Steps:

  • Preheat oven to 400 degrees F.
  • Heat butter and oil in a saucepan over low heat and add the garlic for one minute to soften, not brown.
  • Remove pan from heat and add the bread crumbs, parsley, salt and pepper.
  • Mix to moisten the crumbs and seasonings.
  • Dredge each fish fillet in the beaten egg first.
  • Then dredge each fish fillet into the crumb mixture.
  • Place the coated fish fillets in an oiled roasting pan for the oven.
  • Bake the fillets in the preheated oven for about 10 to 12 minutes, until the crust is golden brown. The fish inside should be flaky. Use a fork to make sure the fish flakes and is done.
  • Serve with lemon wedges.
