This baked cod is an easy and foolproof recipe for perfectly buttery, garlicky, and flaky fish every time!

Steps:
- Preheat your oven to 400F/200C. Place the cod in a baking dish.
- In a small bowl, mix together the butter, olive oil, minced garlic, parsley, paprika, salt, and pepper.
- Spread the compound butter mixture on top of each filet.
- Lay the lemon slices both on top and under the cod filets.
- Bake in the oven for 13-15 minutes, or until the cod is opaque and flakes easily with a fork. Before serving, spoon the juices from the baking dish over the cod.

GARLIC AND HERB COD
A flavorful panko topping adds crunch to this quick and easy weeknight dinner.

- Preheat oven to 425 degrees.
- Coat a 9 x 13 inch baking dish with 1 tablespoon of butter. Place the cod in the dish and season with lemon juice, salt, and pepper.
- Melt the remaining 4 tablespoons of butter in a medium sized sauté pan. When the butter has melted and just begins to foam, turn off the heat and add the garlic. Let garlic infuse the butter for a minute or so.
- Add the panko and lightly toss until all the butter has been absorbed. Stir in the parsley and season to taste with salt and pepper.
- Evenly divide the panko mixture on top of each cod fillet.
- Bake for 10 to 15 minutes or until panko crumbs are golden brown and fish is just cooked through.

- Heat oven to 220C/200C fan/ gas 7 and put the fish fillets in a shallow ovenproof dish so they fit quite snugly in a single layer. Mix 1 tbsp rapeseed oil with the thyme and garlic, spoon over the fish, then grate over the lemon zest. Bake for 10-12 mins until the fish is moist and flakes easily when tested.
- Meanwhile, heat the remaining oil in a non-stick pan and fry the pepper and leeks for 5 mins until softened. Add the almonds and cook for 5 mins more. Tip in the tomato purée, 5 tbsp water, the bouillion powder and vinegar, and cook briefly to warm the mixture through.
- Add the juice of up to half a lemon and blitz with a stick blender until it makes a thick, pesto-like sauce. Serve with the fish and the wilted spinach.

This recipe comes from The Black Dog Summer on the Vineyard Cookbook. Just buy the cod and parsley; and you probably have everything else at home. Such a simple fish recipe and it packs a lot of flavor. This is for garlic lovers! Note: if the breadcrumb coating doesn't immediately adhere to the fish, just pat it on. It works great.

- Preheat oven to 400 degrees F.
- Heat butter and oil in a saucepan over low heat and add the garlic for one minute to soften, not brown.
- Remove pan from heat and add the bread crumbs, parsley, salt and pepper.
- Mix to moisten the crumbs and seasonings.
- Dredge each fish fillet in the beaten egg first.
- Then dredge each fish fillet into the crumb mixture.
- Place the coated fish fillets in an oiled roasting pan for the oven.
- Bake the fillets in the preheated oven for about 10 to 12 minutes, until the crust is golden brown. The fish inside should be flaky. Use a fork to make sure the fish flakes and is done.
- Serve with lemon wedges.
