Tender heads of baby bok choy with a delicious ginger-and-garlic glaze can be served warm or at room temperature.

2 pounds baby bok choy (8 to 10), halved lengthwise and soaked in cold water to remove any dirt
2 teaspoons minced peeled fresh ginger
2 garlic cloves, thinly sliced
1 tablespoon plus 1 teaspoon toasted sesame oil
1/4 cup tamari soy sauce
2 tablespoons oyster sauce

Steps:

  • Bring a large pot of water to a boil. Add bok choy (in two batches, if necessary), and cook until tender, 5 to 7 minutes. Drain in a colander; let stand at least 5 minutes. Transfer to a serving dish.
  • Meanwhile, cook ginger and garlic in oil in a small saucepan over medium-low heat, stirring, until ginger and garlic are soft, about 8 minutes. Add tamari and oyster sauce; cook, stirring, until heated through, about 30 seconds more. Pour sauce over bok choy; toss to coat.

1 tablespoon dark brown sugar
1 ½ teaspoons corn starch
1 tablespoon water
2 tablespoons canola oil
3 cloves garlic, minced
2 tablespoons fresh ginger, grated
1 teaspoon red pepper flakes
2 pounds baby bok choy, sliced in half lengthwise
3 green onions, chopped
1 teaspoon toasted sesame seeds

Steps:

  • Combine soy sauce, brown sugar, corn starch, and water in a bowl. Stir well and set aside. Heat oil in a wok on medium high. Add garlic, ginger, and red pepper flakes. Cook until fragrant, about 1 minute.
  • Add baby bok choy and stir fry until tender, about 4 minutes. Stir in the soy sauce mixture and cook another 1 minute.
  • Toss in the green onions and sprinkle with toasted sesame seeds.

4 baby bok choy (sliced in half)
1 tsp minced ginger
2 garlic cloves (minced)
2 tbsp water
salt and pepper

Steps:

  • Heat the avocado oil in a wok or sauté pan on medium.
  • Add the minced ginger and minced garlic and stir for 30 seconds.
  • Add the bok choy and use tongs to turn and stir fry the bok choy in the garlic and ginger for 2 minutes.
  • Pour two tablespoons of water into the pan, cover and let cook for 2 minutes more.
  • Turn off the heat, add salt and pepper and serve.

2 tablespoons coconut aminos
2 tablespoons chicken broth (preferably home made)
1 tablespoon rice or white wine vinegar
2 teaspoons toasted sesame oil
1 medjool date, minced
3 tablespoons coconut oil
4 baby bok choy, each head halved lengthswise
3 cloves garlic, minced or pressed through a garlic press
1 tablespoon minced fresh ginger
sesame seeds (optional)

Steps:

  • Combine the coconut aminos, broth, vinegar, sesame oil, and date in a small bowl and set aside.
  • Heat 2 tablespoons of coconut oil in a large skillet over high hight.
  • Place the bok choy, cut-side down, in the skillet in a single layer. Cook without moving until lightly browned (about 2 minutes).
  • Turn the bok choy and cook until lightly browned on the other side, about 1 minute.
  • Remove bok choy to a plate and set aside.
  • Add 1 tablespoon coconut oil, garlic, and ginger to pan and cook for just a few seconds, then add the coconut aminos mixture and simmer for about 30-60 seconds or until thickened.
  • Return bok choy to the pan and cook, turning once, until glazed with the sauce, about 1 minute.
  • Sprinkle with the sesame seeds, if using, and serve immediately.

Grilled Soy, Ginger and Lime Tofu Steaks with Charred Baby Bok Choy image

These zesty marinated tofu steaks will become a summertime cookout favorite. Starting with well-dried tofu, adding brown sugar to the marinade and cooking slowly over medium heat helps create a crisp and flavorful crust on the tofu without drying out the center. Topped with extra marinade and sliced scallions and served with charred baby boy choy, this is a deliciously satisfying meal for all.

One 14-ounce block extra-firm tofu, drained and sliced into eight 1/2-inch-thick steaks
Kosher salt and freshly ground black pepper
1/3 cup low-sodium soy sauce or tamari
1/4 cup fresh cilantro leaves, roughly chopped
1/4 cup lime juice (from about 2 limes)
2 tablespoons light brown sugar
1 tablespoon chopped fresh ginger
2 cloves garlic, minced
2 scallions, whites finely chopped and green tops sliced thin
4 heads baby bok choy, halved lengthwise through the stems
3 tablespoons extra-virgin olive oil, plus more for the grill
2 tablespoons toasted sesame seeds

Steps:

  • Put the tofu steaks on a paper towel-lined rimmed baking sheet and top with more paper towels, pressing gently to remove excess moisture. Remove the paper towels and towel and sprinkle the tofu with salt and pepper on both sides.
  • Stir to combine the soy sauce, cilantro, lime juice, brown sugar, ginger, garlic and scallion whites in a medium bowl. Pour 1/3 cup of the marinade over the tofu steaks, flipping to coat both sides. Reserve the remaining marinade for serving.
  • Put the bok choy on another rimmed baking sheet and brush all sides with olive oil and sprinkle with salt and pepper.
  • Prepare a grill for medium heat and brush the grates of the grill with oil.
  • Put the tofu steaks and bok choy, cut-sides down, on the grill at an angle across the grates. Close the lid of the grill and cook for 5 minutes, then rotate both the tofu and the bok choy 90 degrees and cook another 5 minutes with the lid closed. Flip the tofu steaks and bok choy and cook for another 10 minutes with the lid closed, rotating 90 degrees halfway through to create crosshatch grill marks.
  • Remove the tofu and bok choy to a platter. Spoon the reserved marinade over the tofu and bok choy and sprinkle the tofu steaks with the scallion greens and toasted sesame seeds.

3 cloves garlic, minced
8 baby bok choy, halved lengthwise
2 tablespoons soy sauce
2 tablespoons soy molasses sauce, recipe follows, or oyster sauce
1/3 cup soy sauce
1/4 cup molasses
1 tablespoon sesame or olive oil
2 teaspoons minced garlic
1 teaspoon ginger powder
1 teaspoon fish sauce
1 teaspoon rice wine vinegar
1 teaspoon honey

Steps:

  • Heat a large skillet over medium-high heat. Add the oil and heat until shimmering. Add the garlic and cook, stirring, for about 30 seconds. Add the bok choy cut-side down and cook, continuing to stir the garlic to keep it from burning but without moving the bok choy to get a nice even sear, until the bok choy is dark brown on the bottom, 2 to 3 minutes. Add the soy sauce, soy molasses or oyster sauce and a few tablespoons of water. Serve immediately or cover and hold in the skillet until ready to serve.
  • Combine the soy sauce, molasses, sesame oil, garlic, ginger powder, fish sauce, rice wine vinegar and honey in a saucepan on medium-high heat. Bring to a slight boil, whisking or stirring constantly. Cook for 4 to 5 minutes. Set aside.
