Quinoa Garden Salad image

Can feature the entire garden -- and makes quite a bit. This salad is an example of the cold grain salads I make often, especially for busy summer work days and weekends. I make a huge bowlful and we enjoy some with all our family meals for a few days, taking some meals off to keep from getting bored.

Number Of Ingredients 15

a few cucumbers (diced (peeled if desired))
a few bell peppers (diced)
a few tomatoes (diced (using Romas keeps them firm longer))
a few carrots (shredded)
an onion (or half, diced)
a few cloves garlic (crushed)
a few sprigs herbs (chopped (or use pinches of dried))
a hunk raw cheese (diced)
a few handfuls cooked chicken (diced)
3 to 5 cups quinoa (soaked and cooked*)
extra virgin olive oil (to taste)
a drizzle sesame oil (or toasted, to taste)
sea salt (to taste)
pepper (to taste)
apple cider vinegar (OR coconut vinegar or lemon juice, to taste)

Steps:

  • Combine all ingredients in a big bowl.
  • Mix well, but gently.
  • Taste and adjust seasonings.
  • Chill or serve immediately.
  • Chill leftovers.

1-1/2 cups quinoa, rinsed and well drained
3 cups water
1 pound fresh asparagus, cut into 2-inch pieces
1/2 pound fresh sugar snap peas
1/2 pound fresh green beans, trimmed
2 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
3/4 teaspoon salt
1 cup cherry tomatoes, halved
3 tablespoons salted pumpkin seeds or pepitas

Steps:

  • In a large saucepan, cook and stir quinoa over medium-high heat 3-5 minutes or until toasted. Add water; bring to a boil. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed. Transfer to a large bowl., Meanwhile, in a large saucepan, bring 4 cups water to a boil. Add asparagus and snap peas; cook, uncovered, 2-4 minutes or just until crisp-tender. Remove vegetables and immediately drop into ice water., Return water to a boil. Add green beans; cook 3-4 minutes or until crisp-tender. Remove beans and drop into ice water. Drain vegetables; pat dry. , In a small bowl, whisk oil, lemon juice, parsley, lemon zest and salt. Add tomatoes and blanched vegetables to quinoa; drizzle with dressing and toss to combine. Top with pumpkin seeds.

3 tablespoons freshly squeezed lemon juice
1 tablespoon red wine vinegar
1/4 teaspoon dried oregano
1 clove garlic, smashed and finely chopped to a paste
Kosher salt and freshly ground black pepper

1/4 cup extra-virgin olive oil
1 cup quinoa

2 cups red and yellow grape tomatoes, halved
1 cup pitted kalamata olives
2 green onions (green and pale green part), thinly sliced
2 pickled cherry peppers, diced
1 small red onion, halved and thinly sliced
1/2 English cucumber, cut into small dice
Feta, for sprinkling

Steps:

  • Whisk together the lemon juice, vinegar, oregano, garlic and some salt and pepper in a small bowl. Slowly whisk in the oil until emulsified. Let sit at room temperature while you prepare the salad to allow the flavors to meld.
  • Rinse the quinoa in a strainer until the water runs clear. Combine the quinoa, 2 cups water, 1 teaspoon salt and 1/4 teaspoon pepper in a small saucepan, bring to a boil and cook until the water is absorbed and the quinoa is tender, about 15 minutes.
  • Transfer to a bowl, fluff with a fork and let sit for 5 minutes to cool slightly. Add the tomatoes, olives, green onions, cherry peppers, red onions, cucumbers and dressing and toss to coat. Cover and refrigerate for at least 1 hour and up to 8 hours before serving. The longer it sits the better the flavor.
  • Just before serving, transfer to a platter and sprinkle feta on top.

  • Whisk together dressing ingredients.
  • Pour over quinoa mixture and toss.

1/2 cup wild rice, uncooked
1 cup quinoa, uncooked
1/2 cup green onion, thinly sliced

2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon dried thyme

  • Combine 1 cup water and wild rice in a medium saucepan; bring to a boil.

  • Cover, reduce heat and simmer 20 minute or until liquid is absorbed.

My husband learned to make salad from his mother, so the family has been making salads this way for 50 years. We have this virtually every day. It takes a little practice, because the dressing is made "to taste". If you change type of oil or vinegar, you'll need to experiment a little learn how much to use. Our favorites are olive oil, and balsamic or rice wine vinegars. But other oils and vinegars work too. Parmesan from the can works (and it's what we use for everyday) but fresh grated is even better. Change vegetables to suit your tastes or what's in season. Play with it, and have fun - this is more of a technique than a recipe. 1/2 head lettuce (or a combo of iceberg, romaine, butter, spring greens etc)
2 medium tomatoes, diced
1/2 cucumber, peeled as needed and sliced 1/4-inch thick
4 green onions, chopped
1/2 avocado, diced
2 radishes, sliced (optional)
1 celery rib, sliced (optional)
4 mixed mushrooms, sliced (optional)
1 carrot, peeled and diced (optional)

Steps:

  • Tear lettuce into bite sized pieces and wash and dry thoroughly. Place in large salad bowl (wider than it is deep). Top with prepared vegetables.
  • Sprinkle with salt, pepper, garlic powder, and cheese. Go lightly until you learn how much is "to taste" for you.
  • Pour oil over salad, then vinegar. It is important that the oil be first. Quantity requires a bit of practice - go light on the vinegar at first. You can add more if needed. Aim to coat the top layer of vegetables. Toss until well mixed. Taste - add vinegar or oil if needed, and toss again. Do not add dry ingredients (see below). Serve immediately.
  • Note: Your first couple salads may not be perfect. If you find that you didn't add enough salt or pepper, let diners add more as served - you can't get it well dispersed if you add to the salad bowl after the oil and vinegar have been added If you find that you added too much vinegar, a little salt can counteract - again, add as served.

1 1/2 cups water
1 teaspoon garlic, minced
2 tablespoons extra virgin olive oil
1/4 cup fresh lemon juice
2 teaspoons grated lemon zest
1/2 cup cucumber, peeled, seeded & diced small
1 (15 ounce) can garbanzo beans, drained
1 tablespoon fresh dill, chopped
1/2 cup fresh parsley, chopped
1/2 cup golden raisin
2/3 cup almonds or 2/3 cup hazelnuts, toasted & chopped
1/4 cup green onion, thinly sliced
1/4 cup carrot, grated
1 teaspoon sea salt

Steps:

  • Rinse quinoa in cold water; drain well.
  • Combine quinoa with water in a medium-sized saucepan, bring to a boil, then reduce heat to a simmer and cover with a tight-fitting lid.
  • Cook for 15 minutes or until all water is absorbed. (Or, you may cook in rice cooker. Use same proportions as above.).
  • Remove quinoa from heat and let stand, covered, for 10 minutes. Remove lid, fluff with fork, and cool quinoa to room temperature.
  • Combine cooked quinoa with the rest of ingredients, toss well, and enjoy!
