The Best Egg Salad image

While we love a jazzed up version of egg salad, we always come back to this one for its simplicity, clean flavors and sheer nostalgia. This is the best version of a classic egg salad. It's bright with herbs and the mayonnaise-to-egg ratio is just right, making it perfectly mound-able on a sandwich or bowl of greens. If you are serving a crowd, the recipe is easily doubled, or you can just keep some extra in the fridge for whenever the craving strikes.

Number Of Ingredients 8

6 large eggs
1/3 cup mayonnaise
1 stalk celery, finely chopped
1/2 small onion, finely chopped
1 tablespoon chopped fresh parsley or dill
2 teaspoons Dijon mustard
1 tablespoon lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • Cover the eggs with at least 2 inches of water in a medium saucepan and bring to a rolling boil. Remove from the heat, cover and let sit for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely.
  • Mix together the mayonnaise, celery, onions, parsley, mustard, lemon juice, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. Peel and roughly chop the eggs, add to the mayonnaise mixture and toss gently to combine. Serve right away, or cover and refrigerate for up to 2 days.

This savory ham and egg salad is a great way to use the summer's best tomatoes, cucumbers and other farmers' market favorites.

2 cups cherry tomatoes, halved
1 small cucumber, peeled, seeded and finely chopped
1 small red pepper, finely chopped
1 cup frozen corn, thawed
4 oz. (1/2 of 8-oz. pkg.) CRACKER BARREL Vermont Sharp White Cheddar Cheese, finely chopped
4 oz. OSCAR MAYER CARVING BOARD Slow Cooked Ham, chopped
8 radishes, sliced
1/4 cup chopped fresh chives
3 cups tightly packed torn Boston lettuce
6 hard-cooked eggs, quartered
1 cup KRAFT Honey Mustard Dressing

Steps:

  • Combine first 8 ingredients.
  • Cover 8 serving plates with lettuce; top with tomato mixture and eggs.
  • Drizzle with dressing just before serving.

6 large eggs
1/2 cup low-fat mayonnaise
2 tablespoons whole-grain mustard
Kosher salt and freshly ground black pepper
2 scallions (white and green), thinly sliced,
1 rib celery, minced, scant 1/2 cup
2 radishes, grated on the large holes of a box grater
8 romaine lettuce leaves
1 cup pea or other sprouts

Steps:

  • Put the eggs in a saucepan with enough cold water to cover. Bring to a boil, cover, and remove from the heat. Set aside for 12 minutes. Drain the eggs and roll them between your palm and the counter to crack the shell, then peel under cool running water.
  • Dice the eggs. Combine the eggs with mayonnaise, mustard and season with the salt and pepper. Stir in the scallions, celery, and radish.
  • Divide the egg salad among the lettuce leaves, top with the sprouts and roll up. Serve 2 rolls per serving.

This came from the No Yolk Egg Noodle company, but you can use any type egg noodles you like. I made a couple of changes, but this recipe is very forgiving, you can put in your favorite fresh veggies and make it your very own. Cook time is actually "chill" time.

4 ounces egg noodles, cooked (measurement is for dry noodles)
1 (10 ounce) package frozen broccoli, thawed or 1 bunch fresh broccoli, steamed and cooled
1 cup frozen English peas, thawed
2 medium tomatoes, chopped
1 cup shredded carrot
3 green onions with tops, chopped
2/3 cup creamy Italian dressing
chopped fresh parsley (to garnish)

Steps:

  • Cook the noodles and drain good.
  • Combine remaining ingredients ingredients to make the dressing.
  • Put noodles in large bowl and toss with dressing.
  • Cover and refrigerate for at least 2 hours before serving.
  • I like to refrigerate overnight.

  • Boil a large pot of water and carefully lower the eggs into the water, making sure the shells don’t crack. Lower the heat and simmer the water for 10 minutes. Drain the water, leaving the eggs in the pot, and refill the pot with cool tap water. Set aside until the eggs are cool enough to handle. Transfer the chopped eggs to a bowl and add the mayonnaise, relish, mustard, dill, 1½ teaspoons salt, and ¾ teaspoon pepper. Combine lightly with a fork and taste for seasonings.
  • Place the toasted bread on a board, spread the egg salad on thickly, and garnish with a sprig of dill or chopped chives. Sprinkle with salt and pepper. Serve at room temperature either whole or cut in half.
