This simple chickpea salad has a good mix of protein, healthy fats, nourishing and cooling ingredients that is perfect for the warm season.

- Add chickpeas, spinach, tomatoes, cucumber and microgreens to a big bowl. Toss to combine
- Add the eggs and avocado on top.
- Stir the juice from one lemon with oil of choice, salt and pepper and pour over the salad. Serve

- For dressing, in a dry small skillet, toast cumin seeds over medium heat until aromatic, stirring frequently. Transfer to a small bowl. Stir in tomato, lemon juice, oil, garlic, salt and cayenne pepper., In a bowl, combine chickpeas, carrot, zucchini, green onions, parsley, radishes, cheese and walnuts. Stir in 1/3 cup dressing., To serve, divide greens between 2 plates; top with chickpea mixture. Drizzle with remaining dressing.

- To a heated wok, add the oil. Then add the zucchini chunks and toss gently until they are lightly golden.
- Place the cooked zucchini in a bowl and add the remaining ingredients. Lightly toss.

- Preheat the oven to 220°C.
- Put the onion, zucchini, red pepper and tomatoes into a shallow roasting tray and season with black pepper. Drizzle with 2 Tbsp of the olive oil and toss to coat. Roast for 30 minutes, stirring halfway through, until vegetables are tender.
- Meanwhile, mix together the lemon juice, olive oil and herbs. Season to taste.
- Allow the vegetables to cool for 5 minutes, then tip into a bowl with the chickpeas, feta, and the lemon & olive oil dressing. Toss lightly before serving.
