1 tablespoon butter or 1 tablespoon olive oil
1/2 onion, diced
12 ounces sugar snap peas, trimmed
1 carrot, sliced
500 ml vegetable stock
1/2 teaspoon salt
100 ml heavy cream or 100 ml non-dairy milk substitute
1 dash mixed Italian herbs
1/2 teaspoon parsley, for topping (optional)

Steps:

  • In a medium soup pan, heat butter or olive oil and sauté onion until translucent.
  • Add carrot and peas and sauté 1 more minute.
  • Add vegetable stock and cook until vegetables are tender for about 10 minutes. Turn off the heat.
  • Using a hand blender or blender, purée the soup.
  • Add cream or non-dairy milk. Season with salt and Italian herbs to your taste.
  • Infuse love and serve with some parsley flakes on top (optional)!

6 large Vidalia onions
6 tablespoons butter
4 tablespoons all-purpose flour
2 cups chicken broth
1 cup heavy cream
½ cup milk
1 bunch chopped fresh parsley for garnish

Steps:

  • Slice onions thinly. Place half of the onions in a skillet with half of the butter; cook, covered, over medium-high heat until soft, about 10 minutes. Remove to a platter, and cook remaining onions with butter. Return two-thirds of the reserved onions to the skillet. (Reserve the rest for garnish.)
  • Stir in flour until well combined with onions. Slowly stir in chicken broth. Remove from heat, and let cool about 10 minutes. Stir in cream and milk.
  • Pour into a blender, and blend until smooth and creamy. Return to stovetop, and heat through over medium-low heat. Pour into bowls, and garnish with reserved onions and chopped parsley.

2 tablespoons unsalted butter
2 cups chopped leeks, white and light green parts (2 leeks)
1 cup chopped yellow onion
4 cups chicken stock, preferably homemade
5 cups freshly shelled peas or 2 (10-ounce) packages frozen peas
2/3 cup chopped fresh mint leaves, loosely packed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup creme fraiche
1/2 cup freshly chopped chives
Garlic croutons, for serving

Steps:

  • Heat the butter in a large saucepan, add the leeks and onion, and cook over medium-low heat for 5 to 10 minutes, until the onion is tender. Add the chicken stock, increase the heat to high, and bring to a boil. Add the peas and cook for 3 to 5 minutes, until the peas are tender. (Frozen peas will take only 3 minutes.) Off the heat, add the mint, salt, and pepper.
  • *Puree the soup in batches: place 1 cup of soup in a blender, place the lid on top, and puree on low speed. With the blender still running, open the venthole in the lid and slowly add more soup until the blender is three-quarters full. Pour the soup into a large bowl and repeat until all the soup is pureed. Whisk in the creme fraiche and chives and taste for seasoning. Serve hot with garlic croutons.

2 tablespoons unsalted butter
2 medium Vidalia or other sweet onions, roughly chopped
Coarse salt and freshly ground pepper
6 cups homemade or low-sodium canned chicken stock, plus more for thinning
1 1/4 pounds sugar snap peas, ends trimmed and string removed (about 1 1/4 cups)
1 3/4 pounds garden peas, shelled (1 3/4 cups)
1/2 cup heavy cream

Steps:

  • Prepare an ice bath, and set aside. Melt the butter in a medium saucepan over medium-low heat. Add onions, and season with salt and pepper. Cook, stirring frequently, until onions are translucent, about 8 minutes.
  • Add stock; bring to a boil. Reserve about 1/4 cup each snap and garden peas. Add remaining snap peas to saucepan, and return stock to a boil. Add remaining garden peas; cook until all peas are tender, about 4 minutes. Transfer pan to ice bath. Stir until mixture is cool.
  • Working in batches, transfer mixture to the jar of a blender; process until it is smooth. Return to saucepan, and set over medium heat. Stir in cream, and adjust consistency with more stock, if needed. Season with salt and pepper.
  • Meanwhile, prepare a small ice bath, and bring a small saucepan of water to a boil. Add reserved snap peas and garden peas. Blanch until they are just tender, 2 to 3 minutes. Using a slotted spoon, transfer to ice bath; drain in a colander. Cut snap peas into small pieces.
  • To serve, divide soup among soup bowls, and garnish each serving with blanched mixed peas.

3 tablespoons butter
1/4 teaspoon pepper

4 cups beef broth
1-1/2 cups water
1 bay leaf
8 slices French bread, toasted
1/2 cup shredded Swiss cheese

Steps:

  • In a Dutch oven or soup kettle, saute the onions in butter until lightly browned. Sprinkle with pepper and flour. Cook and stir for 1 minute. Add the broth, water and bay leaf; simmer for 30-40 minutes, stirring occasionally. , Discard bay leaf. Ladle into ovenproof soup bowls; top with bread and cheese. Bake at 400° for 10 minutes or until cheese is golden brown.

5 teaspoons extra-virgin olive oil
1 medium onion, finely chopped
1 garlic clove, minced
Coarse salt and freshly ground pepper
1 3/4 cups homemade or low-sodium store-bought chicken stock
1 pound fresh English peas, shelled (about 1 cup)
8 ounces spinach (curly or flat leaf), tough stems discarded (about 6 cups packed leaves)
1 1/2 teaspoons fresh lemon juice
3/4 cup tiny greens, such as micro greens or mache
Parmesan Frico Bowls

Steps:

  • Heat 4 teaspoons oil in a medium saucepan over medium-high heat. Add onion, garlic, 1/2 teaspoon salt, and a pinch of pepper. Cook, stirring, 3 minutes. Add stock, and bring to a boil.
  • Add peas, and return to a boil. Reduce heat, and simmer, stirring occasionally, until peas are tender and bright green, 2 to 3 minutes. Stir in spinach. Cover, and cook, stirring occasionally, until spinach has wilted, 2 to 3 minutes.
  • Working in 2 batches, puree pea mixture in a blender, filling no more than halfway and adding up to 2 tablespoons water to each batch to achieve desired consistency. Stir in 1 teaspoon lemon juice, 1/2 teaspoon salt, and 1/8 teaspoon pepper.
  • Divide the soup among 4 bowls. Toss greens with remaining teaspoon oil and 1/2 teaspoon lemon juice; season with salt and pepper. Divide salad among frico bowls. Float a frico bowl on top of each soup. Serve immediately.

  • In a saucepan simmer peas, basil and bay leaf in the water and broth, partially covered, until peas are tender, about 35 minutes; discard bay leaf.

  • In a blender, puree soup in batches until smooth; return to pan and stir in onions and salt and pepper to taste.
