HAM BALLS
Ham Balls are a classic midwestern meatball recipe. Ground ham and ground beef are mixed together with graham crackers and topped with a tomato brown sugar sauce.

- Preheat the oven to 350°
- Combine the meatball ingredients. In a large bowl lightly combine the 1 lb ground ham, 1 lb ground beef, 1 cup graham cracker crumbs, 3/4 cup milk, and 1 egg. Make large meatballs. Form the mixture into large meatballs, about 1/3 cup in size each. Place into a 9x13 baking dish. You will have about 12-15 meatballs.
- Whisk together the sauce ingredients & pour over meatballs. In another bowl whisk together the can of condensed tomato soup, 1 cup brown sugar, 1/2 cup white vinegar, and 1 tsp dry mustard. Pour the sauce over the meatballs.
- Bake 1 hour. Bake in the oven, uncovered, for 1 hour, basting the tops of the ham balls with the sauce once or twice during cooking.
- Cool & eat! Let the meatballs cool for about 5-10 minutes and then serve with mashed or baked potatoes and veggies.

- In a small mixing bowl, combine the first 6 ingredients. Shape tablespoons of cheese mixture into balls. Roll in walnuts and parsley. Cover and refrigerate for 20 minutes before serving. Serve with pretzel sticks or crackers.

- Beat first six ingredients until smooth. Shape into a ball; wrap in plastic. Refrigerate several hours. Sprinkle with parsley; serve with crackers.

- In a bowl, combine ham, bread crumbs, onions, 1 tablespoon fresh dill (or 1 teaspoon dried), milk, egg, mustard and 1/4 teaspoon pepper mix well. Shape into 1-in. balls. In a large skillet, heat 1 tablespoon butter and 1 tablespoon oil. Brown ham balls, adding remaining butter and oil as needed. Remove ham balls to a serving dish cover and keep warm. Pour ham drippings into a saucepan blend in flour. Gradually add water and stir until smooth. Cook over low heat, stirring constantly until mixture thickens. Steps:
- In a bowl, combine the breadcrumbs, onions, garlic powder, 1 tbsp fresh dill (or 1 tsp dried dill) milk, egg, mustard and black pepper to taste.
- Add chopped ham; mix well.
- Shape into 1-inch balls.
- In a large skillet, heat 1 tbsp oil with 1 tbsp butter.
- Brown the ham balls, adding remaining butter and oil as needed.
- Remove to a serving dish; cover and keep warm.
- Drain the drippings into a saucepan; blend in the flour until smooth.
- Gradually add water.
- Cook over low heat; stirring constantly, until mixture thickens.
- Add sour cream and remaining dill and pepper; heat through (do not boil).
- Pour over the ham balls.
- Serve over noodles.
