Steps:
- Heat oil in a pot over medium-high heat. Saute onion until translucent, about 5 minutes. Add garlic, ginger, and anise; stir. Add chickpeas, tomato sauce, water, chile powder, garam masala, salt, cumin, coriander, turmeric, and clove. Reduce heat to medium-low and simmer, covered, until chickpeas start to soften, 5 to 7 minutes.
- Mash some of the chickpeas directly in the pot to give the sauce a chunkier consistency. Cover and continue simmering, stirring occasionally, until flavors come together, about 15 minutes. Remove star anise pieces and clove before serving.

CRISPY GARBANZO BEANS

Steps:
- Spread out the garbanzos on a baking sheet and let them dry, uncovered, in the refrigerator overnight. (If you forget to let them dry overnight, it's okay; you'll just need to cook them longer.)
- Place the bacon in a large skillet over medium-low heat and cook until browned and crispy, 4 to 5 minutes per side. Drain on a paper-towel-lined plate; reserve the fat in the pan. Eat the bacon as snack while you cook.
- Preheat the oven to 400 degrees F.
- Add the dried garbanzos to the pan with the rendered bacon fat. Season with a generous pinch of salt and add the rosemary. Cook over medium-low heat for about 2 minutes, then remove the rosemary sprig. Transfer the garbanzos to a baking sheet and bake until crispy, 35 to 40 minutes, stirring every 10 minutes. (If you did not dry the garbanzos overnight, bake them for 45 to 50 minutes.)
- Let cool to room temp before serving.

SPANISH GARBANZO BEANS AND TOMATOES
I took a Cooks illustrated recipe for tomatoes and combined it with ideas from other recipes on this site for garbanzo beans. Adding the smoked Spanish paprika added a subtle but exotic complexity. This is wonderful as a main dish for vegetarians (without the anchovies), as a base for grilled fish, or add sausage for meat-lovers - Please do not be afraid of the anchovies: they aren't 'identifiable' in this dish but do add to the overall flavor. Small portions would work well in a tapas selection. I recommend using grape tomatoes in this recipe.

- Chop the onions roughly to make up about 1 1/2 C chopped onions. Finely dice the remaining onions and set aside.
- Cut the tomatoes crosswise and remove the seeds. Roughly chop and and process to a puree, in the blender. Set aside.
- Heat 1 to 2 tablespoons of oil in a heavy bottomed pan and add the cloves and half the cumin seeds. Add the chopped onions as soon as the spices become aromatic. Stir fry for 2 minutes and add the garlic and sliced ginger. Saute until the onions begin to turn brown. Turn off the heat , cool for a minute and transfer to a blender jar. Process till the mix turns to a coarse paste.
- Wipe the pan and heat 1 tsp oil in it. Add the remaining cumin seeds and carom seeds to it. When the seeds splutter add the onion paste. Keep the flame on medium and stir fry till the onion mix turns golden brown. If needed add 1 to 2 teaspoons of oil to prevent the mix from sticking to the bottom of the pan. Add the powdered spices and tomato puree to this. Stir fry till the tomatoes turn color and the raw smell dissipates. A good rule of thumb will be to look for oil separating from the mix.
