- Cook quinoa according to package directions; transfer to a large bowl and cool slightly., Add beans, tomatoes, cheese, avocado and green onions to quinoa; gently stir to combine. In a small bowl, whisk the first 5 dressing ingredients. Gradually whisk in oil until blended. Drizzle over salad; gently toss to coat. Refrigerate leftovers.

- Mix first 5 ingredients together and set aside.
- Rinse garbanzo beans and set in mixing bowl. Cut cucumbers, avacados, and tomatoes, and mix with garbanzo beans.

- For dressing, mash half of the avocado. Stir together mashed avocado, sour cream, lemon juice, celery salt and hot pepper sauce. Stir in milk til desired consistency. Cover and chill while preparing salad.
- For salad, combine spinach, garbanzo beans, tomatoes, cucumber, cauliflower, mushrooms, onion and walnuts. Slice one hard boiled egg and add to salad. Slice remaining avocado half, brush with additional lemon juice if desired, and add to salad. Top with dressing and toss to mix. Cut the remaining egg into wedges and use to garnish salad.

This is a corruption of another salad that has 4 varieties of beans in it. When I don't want to make enough for a crowd, I use this version. It's pretty healthy and is full of good carbs (especially if you skip the corn).

- Mix together drained beans and thawed corn.
- Chop red pepper, onion, celery and carrot and add to bean mixture.
- Add rest of ingredients, stir to mix.
- Chill for two hours or more before serving.
- (Hot pepper sauce and salt can be adjusted to taste.).
- (Cooking time is chilling time.).

I'm always on the lookout for any recipe containing avocado, black beans and corn. This great summer salad was sent to me in a recipe exchange and I fell in love with it. Great salad to have for Cinco de Mayo.

- Mix together all of the above ingredients. I'm an avocado lover, so I use three, but two is good. You can use fresh corn if you prefer and also use as much chopped onion or squeezed lime as you like. In fact, all of the ingredients are to your own liking, use as much or as little as you want. The lime juice helps to keep the avocado from turning brown. Refrigerate for a couple of hours and serve cold. Enjoy!

- Finely dice the red onion and pepper.
- Cut the avocado in half lengthways, remove the seed and skin, slice the flesh in long strips.
