I saw this on The People's Cookbook and just had to try it. It was submitted by Lily's grand-daughter Helen, who told the story of how Lily left Hong Kong, bound for England on a three month sea voyage. At every port Lily would collect spices and experiment with them. When she arrived in England, she perfected this curry and made it for friends and neighbours, later opening a restaurant based on this dishes popularity.Lily is still alive and still cooking curry for friends and neighbours. This dish beat the opposition and won it's way into The Peoples Cookbook. It's a great curry with big, bold flavours, worth every bit of effort that goes into it. Just remember Lily when you eat it.

6 tablespoons vegetable oil or 6 tablespoons ghee
3 onions, finely chopped
4 cm piece gingerroot, peeled and thinly sliced
4 garlic cloves, sliced
4 mild fleshy red chilies, seeded and chopped
1/2 teaspoon turmeric
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 tablespoon chili powder
2 1/2 teaspoons curry powder
125 ml water
2 1/2 teaspoons plain flour
2 1/2 teaspoons self raising flour
400 -500 ml chicken stock
3 -4 tablespoons cornflour
2 boneless skinless chicken breasts, and cut into strips
2 tablespoons oil
1/2 onion, thinly sliced
2 tablespoons peas

Steps:

  • SAUCE:.
  • Heat the oil or ghee in a heavy based pan or wok over high heat. Add the onion and stir fry for 3 minutes, or until starting to soften, but not brown.
  • Add the ginger, garlic and chillies and continue stir-frying for 30 seconds and then reduce heat to very low and leave to cook, stirring occasionally, until the onion is completely soft, but nothing browns.
  • Stir in the turmeric, cumin, coriander, chili and curry powders and continue cooking very gently for 5 minutes. Don't burn the spices or they will taste acrid; sprinkle on a few drops of water if you're worried. Remove the pan from the heat and allow to cool a little.
  • Put the water into a food processor or blender, then add contents of the pan. Blend until everything is very smooth, then add both flours and blend again. Put the pureed mixture back into the pan and simmer for 20-30 minutes (longer the better) over a very low heat, stirring occasionally. Add a little hot water if it starts to catch, but the idea is to gently fry the sauce so that it darkens in colour to an orangey brown. Once you have a thick paste, gradually stir in the stock and simmer until the sauce has reduced.
  • CHICKEN:.
  • Season the cornflour and toss the chicken strips in this to coat them. Heat the oil in a large fry pan over high heat. Add the chicken and stir-fry for a couple of minutes, until they turn white. Add the onion and the peas and stir-fry a few minutes more. Then stir in the curry sauce and heat until everything is hot.

12 oz. boneless skinless chicken breast ((340g, thinly sliced))
Vegetable oil
1 teaspoon light soy sauce
2 teaspoons cornstarch ((divided))
1 medium onion ((halved and sliced into small wedges))
1 ½ cups chicken stock ((355 ml))
4 teaspoons curry powder
1 teaspoon turmeric
1/2 teaspoon sugar
salt

Steps:

  • In a medium bowl, combine the sliced chicken breast, 1 teaspoon vegetable oil, 1 teaspoon soy sauce, and 1 teaspoon cornstarch.
  • Heat your wok over high heat until smoking. Add a couple tablespoons of oil, and then add the chicken to the pan in one layer. Stir-fry the chicken just until it turns opaque, and remove from the wok. Set aside.
  • Add another tablespoon of oil to the wok, and add the onions. Stir-fry for one minute, then stir in the chicken stock, curry powder, turmeric, sugar, and salt to taste.
  • Combine the remaining 1 teaspoon of cornstarch with 2 teaspoons of water and mix until the cornstarch is dissolved. Stir it into the curry and stock mixture, and simmer for 1 minute, until thickened. If the sauce isn't thick enough, add more cornstarch slurry. If it's too thick, add more chicken stock.
  • Add the cooked chicken back to the wok, and stir for another 30 seconds. Serve with steamed rice.

  • Heat remaining oil in pot. Add chicken and curry powder. Stir fry 3 minutes. Add sugar, salt, soy sauce and water. Mix in potatoes (or you can add it carrots too). Bring mixture to a boil. Reduce heat and cover. Simmer 20 minutes.
  • Mix in onions. Cover and simmer 10 minutes longer. Stir cornstarch and water mixture into chicken. Boil 1 minute or until thick.

4 skinless chicken breasts, cut into chunks (or use thighs or drumsticks)
2 tsp cornflour
1 onion, diced
2 tbsp rapeseed oil
1 garlic clove, crushed
2 tsp curry powder
1 tsp turmeric
½ tsp ground ginger
pinch sugar
400ml chicken stock
1 tsp soy sauce
handful frozen peas
rice to serve

Steps:

  • Toss the chicken pieces in the cornflour and season well. Set them aside.
  • Fry the onion in half of the oil in a wok on a low to medium heat, until it softens - about 5-6 minutes - then add the garlic and cook for a minute. Stir in the spices and sugar and cook for another minute, then add the stock and soy sauce, bring to a simmer and cook for 20 minutes. Tip everything into a blender and blitz until smooth.
  • Wipe out the pan and fry the chicken in the remaining oil until it is browned all over. Tip the sauce back into the pan and bring everything to a simmer, stir in the peas and cook for 5 minutes. Add a little water if you need to thin the sauce. Serve with rice.

3 tablespoons canola oil
1 red onion, minced
1 jalapeno, seeded, minced
1 green bell pepper, minced
1 red bell pepper, minced
2 tablespoons garlic, minced
1 cup Roma tomatoes, diced
3/4 pound ground beef or turkey
2 cups long-grain rice
8 ounces kidney beans
2 cups chicken stock
1 1/2 cups water
1 teaspoon paprika
1 tablespoon chili powder
1 tablespoon salt
1 teaspoon freshly ground black pepper
3 tablespoons green onion, sliced, for garnish

Steps:

  • In medium stock pot over medium heat, add oil, onions and peppers and saute until translucent. Add the garlic, tomatoes and ground beef. Cook until meat is browned.
  • Add rice to mixture and cook over low heat for 3 minutes, coating rice with the oils from the pan. Add beans, chicken stock, water and seasonings, bring to a simmer, then cover and cook on low for 20 minutes.
  • Fluff with fork and garnish with green onions.

1 -2 garlic clove, smashed and slice
2 slices ginger
1 onion, 1/2-inch dice
1/2 lb chicken breast, 1/2-inch dice

2 -4 tablespoons peanut oil or 2 -4 tablespoons canola oil

Steps:

  • Put on rice to cook.
  • Prepare garlic, ginger, onion, chicken, potatoes, and carrots and have ready for cooking.
  • Heat empty wok over high heat until you can see the heat rising off the surface. Add oil and swirl to coat wok and heat oil thoroughly.
  • Add garlic and ginger to the wok, and toss briefly until fragrant.
  • Add onion and curry powder, and toss to thoroughly coat onion.
  • Add diced chicken, and stir-fry briefly until all the surfaces of the meat are coated and cooked (it need not be cooked through).
  • Add potatoes, carrot, and salt, and stir to thoroughly coat vegetables.
  • Add chicken stock or water to almost cover, bring to a boil, reduce heat, and simmer until meat, potatoes, and carrots are cooked through, 10-15 minutes.
  • Some people like to throw in some frozen peas at this point and heat them for about 3 minutes.
  • Thicken sauce with cornstarch/water mixture.
  • Serve over rice.

4 tablespoons butter or 4 tablespoons margarine
1/2 cup chopped onion
1 tablespoon all-purpose flour
3/4 cup water
1 -2 tablespoon curry powder, to taste
1/4 cup half-and-half
2 (6 1/2 ounce) cans tuna, well drained
3 cups cooked rice
1 tablespoon chopped parsley
salt, to taste
pepper, to taste
cumin, to taste
garlic powder, to taste
chutney
peanuts
coconut

Steps:

  • Melt butter in saucepan; add onion.
  • Saute until golden.
  • Stir in flour.
  • Cook until bubbly.
  • Gradually add water, cooking and stirring until smooth.
  • Blend in curry powder, seasonings and half-and-half.
  • Cook, stirring, for 1 minute.
  • Gently add tuna and simmer 5 minutes longer.
  • Spoon over hot cooked rice and sprinkle with parsley.
  • Serve with small bowls of the above condiments.

I've found it easier (and cheaper) to make Chinese food at home. No more waiting for the delivery driver to bring you cold food, no more waiting to be served in a restaurant, no more tipping. This is one of many Chinese recipes that I prepare, and we feast at home for a fraction of the price. The best part is, we know it is going to be good. I hope you enjoy this one of my many "stay at home" Chinese dishes. Prep time includes 1 hour marinade time and 1 hour refrigeration time after coating. 1 1/2 lbs boneless skinless chicken breasts (cubed to 1-inch)
1 cup cornstarch
2 tablespoons cornstarch
2 tablespoons cold water
2 eggs, lightly beaten
1 cup vegetable oil
sesame seeds (optional)
1 -2 scallion, sliced (optional)
1 cup chicken broth
1/2 cup freshly squeezed orange juice
1/2 cup granulated sugar
1/3 cup white vinegar
1/4 cup soy sauce
2 -3 garlic cloves, minced
1 tablespoon orange zest
1 teaspoon thai hot sauce (Sriracha, to taste)
1/4 teaspoon ground ginger
1/4 teaspoon white pepper

Steps:

  • Thoroughly mix together all the marinade ingredients. Put chicken pieces into a large zip-lock baggie. Add 1/2 cup of marinade to the baggie and seal, reserving the rest. Toss chicken to thoroughly cover and place baggie into a glass dish and refrigerate for 1 hour, tossing again after 30 minutes.
  • Meanwhile, place beaten eggs in a bowl on the counter. Place the 1 cup of cornstarch into a pie pan. Put the 1 cup oil into a deep, heavy bottom skillet. Place remaining, un-used marinade into a sauce pan.
  • Remove chicken pieces from the marinade, and place on a plate. Discard used marinade.
  • Dip the chicken pieces into the beaten egg, then dredge thru the cornstarch. Gently press pieces to be sure they are coated. Place chicken into the fridge for 1 hour to set the coating. EDITED: Place the dredged chicken pieces on a wire rack over a sheet pan to refrigerate, I do not recommend leaving the chicken pieces in the pan of cornstarch.
  • After 1 hour remove the chicken from the fridge and heat remaining marinade over medium heat to a boil, stirring occasionally. Combine water and the 2 tablespoons of cornstarch, and while stirring constantly, slowly add enough slurry to the boiling marinade until desired thickness (you may not need it all). Boil 1-2 minutes and remove from heat.
  • Heat oil in a deep, heavy bottom skillet over medium high heat. Oil is hot enough when a pinch of cornstarch is sprinkled in and it bubbles. (Sorry, I don't use a thermometer).
  • Now, working in batches, carefully add a small portion of the chicken pieces to the oil and gently roll for 2 minutes (or until chicken is cooked thru). Do not over crowd the pan because it will drop the oil temp and you will have greasy chicken rather than crispy. Remove the pieces using a metal slotted spoon (or a spider) to a paper towel lined plate, let oil temp return and begin another batch.
  • When all chicken pieces are done and thoroughly drained, toss them into the pan with the heated marinade. Serve immediately over white rice and garnish with sesame seeds and scallions, if using.
  • Enjoy!

BAKED CHICKEN CURRY PUFFS

These are literally steaming next to me as I write - they've just come out of the oven, crisp and delicious and thought I'd beter get the recipe down before I forget it. I've created this recipe myself, using a range of authentic Malaysian recipes as my inspiration. The spice blend itself is used in Malaysian meat curries, and makes more than the recipe needs. I've used reduced fat puff pastry (without compromising taste) and spray oil, so these are a healthier version than some of their counterparts -especially as they're baked and not fried. Serve with your favourite dipping sauce.

5 whole cloves
5 whole black peppercorns
2 whole cardamom pods
1/2 cinnamon stick (3 cm long)
2 small whole dried red chilies
2 tablespoons coriander powder
1 tablespoon cumin seed
1/2 teaspoon fennel seed
1/2 teaspoon turmeric powder
200 g minced chicken
2 medium potatoes, peeled and diced
1 brown onion, diced
1 clove garlic, finely sliced
spray oil
3 sheets puff pastry
1/2 teaspoon sugar
1/2 teaspoon salt (to taste)

Steps:

  • Pre-heat oven to 200 degrees C (fan-forced) or 200 C conventional.
  • Add the potatoes to a pot of boiling water and cook until just soft. Drain and set aside.
  • In the meantime, toast the first 3 spices (cloves, peppercorns, cardamon) in a medium size saucepan over a medium heat, until just beginning to smoke and becoming aromatic. Remove from heat and set aside in bowl,
  • Add the next 2 spices (cinammon and chilies), and repeat toasting instructions. Remove and add to same bowl as the other toasted spices.
  • Add the last 4 spices (coriander, cumin, fennel and tumeric powder) and repeat toasting. Remove and add to same bowl as the other toasted spices.
  • When the spices have cooled, grind with either a mortar and pestle, or in coffee grinder. (Note: I like my spice mix fine, so after grinding in mortar and pestle, I sieve the mixture using a fine net sieve).
  • Set the spice mixture aside (when cooled, store in a jar).
  • Add a bit of spray oil to the saucepan pan, add the chicken and cook until browned all over and cooked through. Remove and add to a medoim-sized bowl.
  • Add 1 1/2 tablespoons of the spice mix to the chicken.
  • If needed, add a bit more oil to the pan, and cook the onion until browned, about 4-5 minutes.
  • Add the garlic and cook for a further minute.
  • Return the chicken and spice mix, and the drained potatoes to the saucepan.
  • Cook for a further minutes until all ingredients have mixed in together.
  • Add in the sugar and salt, and stir.
  • Remove from pan, and add back into the medium bowl. Leave to cool for about 10 minutes.
  • Thaw out the puff pastry sheets, and cut each sheet into 9 squares.
  • When the mixture has cooled a little, add a heaped teaspoon into the centre of one the pastry square.
  • Fold square in half, and pinch edges together to form a triangle shape.
  • Place triangles on an oven tray, and spray with oil.
  • Cook for 10-15 minutes until golden brown.

On Okinawa they have a certain fast food restaraunt that serves these in all flavors and varieties. It is very popular with the americans over there. This is as close as i can reproduce it.

4 chicken breasts (or pork cutlets or medalions, whatever you prefer)
1 egg, beaten
2 cups flour
3 cups panko breadcrumbs (really use this not bread crumbs, makes all the difference)
oil, for frying
salt and pepper, to taste
1 (8 1/2 ounce) package s&b curry roux (this will be in the golden or black box that says S&B Golden Curry Sauce Mix, in your asian aisle.)
2 garlic cloves, SLICED and toasted till golden brown, don't burn
2 cups mozzarella cheese, shredded (use the cheap brick cheese in the cheese aisle and cube, Not pre-shedded, NOT the fresh balls)
rice, to serve with

Steps:

  • Wash chicken breasts. Pat dry with paper towel and then pound each flat between sheets of wax paper with a meat mallet, or whatever you use.
  • Toast your garlic before you start anything else. I usually just put it in a dry skillet over med heat till a little crispy. But it can be done in the oven, jsut don't let it burn. this is just to put on top of the finished dish, if you don't like garlic skip this step.
  • Pour oil in a frying pan until will cover chicken. Heat over med-high heat.
  • One at a time, dip chicken breasts in flour (seasoned with salt and pepper), then in egg (if run out just crack open another and beat it), then roll in panko crumbs (seasoned with salt and pepper, if desired.).
  • Fry the chicken till golden and juices run clear. Depending on your stove 10-15 minute.
  • while chicken's frying take your blocks of curry roux and put all of them, yes all, into a big pot. Heat over med-high heat. Add 6-8 cups of water. Add 6 at first, then if too thick looking add more water till consistency you want. i like mine not thick but not too runny, usually have to add about 7 or 8 cups of water. I also like to add a couple dashes of curry powder, i use S&B, to give it an extra kick!
  • Have some cooked rice ready. Put a chicken breast, may want to pre-cut it beforehand, on bed of rice then pour curry sauce over. Use a bowl for each serving! Put garlic and cheese on top, if desired. Cheese will melt and taste very yummy all mixed up in it. Warning, will fill your belly up quickly!
  • I really like to do steamed eggplant with this, but still have to fix chicken for hubby since he won't eat eggplant!
  • Enjoy!
