PENNE WITH VODKA SAUCE

Kosher salt
12 ounces whole-wheat penne
1 28-ounce can whole plum tomatoes
1 tablespoon unsalted butter
2 shallots, minced
1 clove garlic, minced
1/4 teaspoon red pepper flakes
1/2 cup vodka
2/3 cup heavy cream
1/2 cup freshly grated parmesan cheese, plus more for topping
Handful of fresh basil leaves, torn, plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the penne and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta. Empty the tomatoes into a bowl and crush with your hands.
  • Meanwhile, melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and red pepper flakes and cook, stirring, 30 seconds. Remove from the heat and stir in the vodka, tomatoes and salt to taste. Return the skillet to medium heat and simmer, stirring often, until the alcohol cooks off, about 7 minutes. Stir in the heavy cream and cook until the sauce thickens slightly, about 3 minutes. Stir in the parmesan and basil.
  • Add the pasta to the sauce and toss to combine, adding some of the reserved cooking water to loosen, if needed. Season with salt. Serve topped with more parmesan and basil.

  • Cook 2 chopped shallots in a skillet with 2 tablespoons butter over medium heat, about 3 minutes. Add 3/4 cup heavy cream, 2 cups Perfect Marinara Sauce (see Cook's Note) and a pinch of red pepper flakes; heat through. Stir in 1/4 cup grated parmesan and 1 to 2 tablespoons vodka; season with salt. Toss with penne.

1 large sweet onion, chopped
5 garlic cloves, coarsely chopped
3 tablespoons extra virgin olive oil
2 (28 ounce) cans crushed tomatoes
1 1/4 cups vodka, premium quality, will make a difference
2 cups heavy cream
4 tablespoons fresh basil, finely chopped
1 (5 1/2 ounce) can tomato paste

Steps:

  • Sauté onion, garlic, and olive oil in large sauce pot until translucent, do NOT overcook or brown.
  • Add 2 cans of crushed tomatoes, and vodka.
  • Cook about 1/2 hour or until all alcohol has burned off.
  • Add heavy cream and basil.
  • Add tomato paste to your discretion, although sauce should be of a thick consistency, some people like theirs thin.
  • Let sauté about 1/2 hour.
  • Serve with penne and freshly grated parmesan cheese.

1 lb penne pasta, cooked aldente
2 tablespoons extra virgin olive oil
1 onion, finely chopped
4 garlic cloves, crushed and chopped
2 (28 ounce) cans crushed tomatoes
1 pinch hot pepper flakes
3/4 cup vodka (top shelf)
salt and pepper
2 tablespoons fresh parsley, chopped
3/4 cup heavy cream
parmigiano-reggiano cheese

Steps:

  • Put the olive oil into the pan and add the onions and garlic.
  • Turn on the heat to medium-low and gently cook for a few minutes.
  • Add the red pepper flakes cook 1 minute add crushed tomatoes.
  • Raise the heat to medium and bring the mixture to a boil.
  • Add the vodka and a pinch of salt and pepper simmer uncovered for about 8 minutes over medium-low heat.
  • Add the cream and lower the heat, add drained pasta and toss in parsley.
  • Stir to coat well and grate a generous amount of parmesan into the pasta using our microplane grater.
  • Serve immediately sprinkled with more parmesan, and red pepper flakes.

  • Cook 2 minced shallots in a skillet with butter over medium heat until slightly softened, 3 minutes. Add 1 minced garlic clove and a pinch of red pepper flakes; cook 30 seconds. Remove from the heat. Add 1/2 cup vodka, a 28-ounce can crushed tomatoes and some salt. Simmer, stirring, 7 minutes. Stir in 2/3 cup heavy cream and simmer until thickened, 3 minutes. Stir in 1/2 cup grated parmesan and a handful of torn basil. Toss with 12 ounces cooked penne, adding some pasta-cooking water to loosen.

This recipe was given to me by the mother of one of my students. She made it quite often the summer I worked with her son in their home. The smell was out of this world when she was cooking it and she always sent me home with a serving. Now, many years later, I make it for my own family. Everyone loves it. It's nice any time of year as long as you can find good plum tomatoes. I make it a lot in the summer with my own homegrown tomatoes. It's really one of my favorite things that I make. I (like many people) don't really measure when I cook so measurements for things like cream and basil are not exact in this recipe.

12 plum tomatoes
1 medium onion
2 -3 garlic cloves (or I like to use jarred garlic in oil about 2 tablespoons)
2 (15 ounce) cans tomato sauce
1/4-1/2 cup vodka
1 cup heavy cream
1/2 cup fresh basil, chopped (approximate, to taste)
2 tablespoons olive oil
salt and pepper
grated pecorino romano cheese or parmesan cheese, to taste

Steps:

  • Chop onions and saute in olive oil.
  • Mince garlic and add to onions in oil.
  • Saute until onions are clear in color.
  • Chop plum tomatoes and add to onions and garlic. Season with salt and pepper.
  • Let simmer several minutes until tomatoes start to soften and let off juice.
  • Add vodka and cook till boil then lower and simmer several minutes.
  • Add canned tomato sauce (can use crushed, I prefer the plain tomato sauce).
  • Cook till boil then lower and simmer a few minutes more.
  • Add heavy cream and cook until desired thickness.
  • Add chopped fresh basil. I use alot because I love it.
  • Serve over pasta. I like angel hair or thin spaghetti but you can use any pasta.
  • Top with desired amount of grated cheese and enjoy!

  • Heat the olive oil in a large oven proof sauté pan over medium heat, add the onions and garlic and cook for about 5 minutes until translucent. Add the red pepper flakes and dried oregano (if using) and cook for 1 minute more. Add the vodka and continue cooking until the mixture is reduced by half, about 5 minutes more.
  • Meanwhile, drain the tomatoes through a sieve. UPDATE: I no longer drain the tomatoes. I find the sauce comes out just as well, and by eliminating this draining step, I don’t have to worry about using up that juice at a later date. If you have made this many times and wish to continue draining the tomatoes, go for it. Save the strained juice. It freezes well and can be used for future sauce-making days or bloody Mary mix, etc.
  • Put on an apron and crush the tomatoes into the pan with your hands—careful; this is messy. Add 2 teaspoons salt and a pinch of black pepper. Cover the pan with a tight-fitting lid or foil and place it in the oven for 1½ hours.
