FUNFETTI COOKIES
This recipe is a favorite from the Pillsbury Bake-off. It is a simple cookie recipe that always pleases my family. It is also much more economical than buying those sprinkle cookies from the grocery store.

Steps:
- Heat oven to 375.
- In large bowl, combine cake mix, oil and eggs; stir by hand until thoroughly moistened.
- Stir in decorator sprinkles from the cake mix.
- Shape dough into 1-inch balls.
- Place 2 inches apart on ungreased cookie sheets.
- Flatten to 1/4 inch thickness with bottom of glass dipped in flour.
- Bake at 375 for 6 to 8 minutes or until edges are light golden brown.
- Cool 1 minute; remove from cookie sheets.
- Spread frosting over slightly warm cookies.
- Immediately sprinkle each with decorator sprinkles from frosting.
- Store in tightly covered container.
FUNFETTI COOKIES FROM SCRATCH
I needed to make some Funfetti Cookies but all the recipes I could find started with a box cake mix, which I didn't have in the house. I used Recipe #394495 as my starting point and went from there. I thought others might appreciate knowing how to make them from scratch as well, so I decided to post a separate recipe.

Steps:
- Preheat oven to 350°F.
- Mix together with a whisk the flour, salt and baking soda.
- Using an electric mixer, cream butter and sugar in a large bowl until light and fluffy. Beat in vanilla and egg.
- Add flour mixture and beat until smooth. Blend in milk. Mix in sprinkles until evenly distributed.
- Drop by teaspoon about 3 inches apart onto greased baking sheets. Flatten with bottom of glass that has been dipped in sugar.
- Bake for about 8 minutes or until edges are lightly browned. Cool on rack.

- In a stand mixer fit with the whisk attachment, beat the butter and sugar together until light and fluffy, about 3 minutes.
- Use a rubber spatula to scrape down the sides of the bowl, adding the egg and the vanilla extract. Beat until light and fluffy and pale in color.
- Add the flour, baking powder, baking soda, and salt and beat until just combined and no streaks of flour remain. Do not overmix. Add the sprinkles and turn the mixer on quickly to distribute the sprinkles. Try not to mix the dough much or this will cause the sprinkles to break.

- Combine the flour, salt, cornstarch, and baking soda in a bowl then whisk together and set aside.
- Cream the butter and sugar in the bowl of your stand mixer fitted with a paddle attachment, mix on high until light and fluffy. Mix in the egg and vanilla then scrape the bowl down and mix once more until well combined.
- Add the dry mixture to the butter mixture and mix on low until almost combined. Scrape down the bowl then add the sprinkles and mix in low until just combined.
- Use your spatula to fold in any extra flour hanging about then portion out two tablespoon-sized pieced of dough (40g), roll into balls and top with some more sprinkles.
