FUDGY APPLESAUCE BROWNIES
Combination of a time-tested perfect from-scratch brownie recipe and a little improvization to make due with on-hand supplies resulted in this delicious recipe even the guys will love. Everybody loved this version MORE than the one with NO applesauce. Hope you enjoy as much as we did!

- 1. Preheat oven to 175 Celsius or 350 Farenheit. Grease a 13x9 pan or just spray with PAM
- 2. Combine all ingredients in a mixing bowl
- 3. Mix until well combined then give it a few extra beats to develop the gluten in the flour and make the brownies a little more chewy
- 4. Pour into pregreased pan and bake for 30-40 minutes or until knife inserted comes out clean. You want them to still be a little "uncooked" to the eye because they will continue to cook a little when you remove them from the oven. Be careful you don't mistake a melted chocolate chip for the batter still being uncooked!!!

- In a large saucepan, combine the sugar, cornstarch and cocoa. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg substitute; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Cover and refrigerate. , Meanwhile, for crust, in a large bowl, combine the applesauce, egg substitute, oil and vanilla. In another large bowl, combine the cocoa, sugar, flour and baking powder. gradually add to applesauce mixture just until blended. , Pour into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 20 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , In a large bowl, beat the chilled chocolate mixture until light. Fold in whipped topping; carefully spread over crust. Refrigerate for 2 hours.

- Lightly spray a 9" square baking pan with vegetable oil spray.

- Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
- In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.
