MALTED MILK FUDGE

Steps:
- Grease a 9-by-13-inch pan lightly with cooking spray and then line it with parchment so that the paper hangs over all the sides (this will allow you to remove the fudge from the pan).
- Combine the sugar, butter, cream, vanilla and salt in a large saucepot over high heat. Bring to a boil and then cook until the mixture reaches 240 degrees F on a candy thermometer, about 4 minutes.
- Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, mix the milk chocolate and white chocolate chips, marshmallow cream and malted milk powder. With the speed set to low, slowly pour in the boiling sugar mixture and paddle until well combined.
- Pour the fudge into the prepared pan; tap the pan to even out the fudge. Evenly sprinkle the broken malted milk balls over the top of the fudge and lightly press them down into the fudge.
- Chill the fudge until completely cooled, about 3 hours. Remove the fudge from the pan and cut it into squares.
- Serve with vanilla ice cream. Store any remaining fudge in an airtight container.

Wonderful little treats, great to take to potlucks (they travel well). I have made these without using the dried fruit, and just with raisins, and they are still wonderful, but even better with the dried fruit!

Steps:
- Combine butter, sugar and salt in a saucepan over medium heat; bring to a boil, cook 4-5 minutes, stirring constantly (start timing when mixture starts to bubble around the edges of pan).
- Remove from heat; add marshmallows, chocolate chips, vanilla, walnuts, raisins and candied pineapple OR apricots.
- Stir vigorously for 1 minute (until marshmallows melt and are blended), working quickly, drop by teaspoonfuls onto waxed paper.
- Store in an airtight covered container, in the fridge or out of the fridge.

- Microwave chocolate, milk and coffee in large microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted.
- Stir in nuts and vanilla. Spread into 8-inch square pan. Refrigerate 2 hours or until firm enough to handle.
- Shape into 1-inch balls. Roll in desired coatings.

VELVEETA CHEESE FUDGE BALLS
I like to call these "White Trash Fudge Balls!" Using Velveeta to make fudge?!? These were inspired by Paula Deen, who made a version of this on Iron Chef. I was motivated to make them for a cookie exchange. There are endless possibilities for this fudge!!

- Melt cheese and butter over low heat, stirring occasionally.Remove from heat and add vanilla. (You may also add the chopped nuts here, or save them for a garnish, later.).
- Sift together sugar and cocoa in a large bowl. Add cheese mixture and stir until it becomes stiff. Use your hands to finish the mixing.
- Once fudge is completely mixed (add more powdered sugar, a little at a time, if needed), pinch small sections off and roll into balls. Set on wax paper-lined cookie sheet. Refrigerate for 20-30 minutes.
- While chilling fudge balls, melt almond bark in double-boiler, over a low heat. If you have chosen to melt caramels, do so, as well, in a separate double-boiler.
- Place a skewer in each fudge ball. Then, dip into caramel, then almond bark, finally rolling in nuts. Or, use whatever combination you would like.
- These can be made a day or two before dipping--store in refrigerator. Enjoy!
FATTY NATTY'S PEANUT BUTTER FUDGE BALLS

- Mix confectioners' sugar, peanut butter, butter, cocoa powder, marshmallow creme, and vanilla extract together in a bowl until smooth. Roll mixture into 2-inch balls and place in a sealed container. Refrigerate until set, at least 30 minutes.

PEANUT BUTTER BALLS

- Spoon the peanut butter into a mixing bowl.
- Sift the powdered sugar over the peanut butter and pour the melted butter over top.
- Stir until well combined.
- Scoop out twenty 1 tablespoon-size portions of the fudge.
- Roll them into balls.
- Chill for at least 2 hours until really firm.
- Insert the flat end of a thin wooden skewer into a cold peanut butter ball.
- Dip the fudge ball into the melted chocolate leaving about a 1/4 inch circle around the stick.
- Lift the fudge ball out of the chocolate and allow the excess chocolate to drip off.
- Insert the pointed end of the skewer into a block of styrofoam.
- Once you have all the fudge balls dipped in chocolate chill them in the refrigerator for 1 hour.
- Remove them from the fridge and gently pull them off the skewers.
- Spread melted chocolate over the hole and set the fudge ball wet side down on a parchment paper-lined baking sheet.
- Chill the peanut butter balls in the refrigerator for at least 30 minutes.
- Set the chocolate-coated fudge balls out at room temperature for about 30 minutes before serving.

- 1. Melt chocolate in a heavy saucepan over low heat, stirring until smooth. Meanwhile, beat whipping cream at medium speed with an electric beater until soft peaks form. Gradually add melted chocolate, and beat 15 minutes. Cover and chill 8 hours.
- 2. Working quickly, shape half of chocolate mixture into 1-inch balls. Place balls on a wax paper-lined rimmed baking sheet. (Keep remaining half of chocolate mixture chilled.) - In a food processor, combine all ingredients. Puree until combined (mixture should stick together in a ball when done).
- Scoop out a tablespoon of dough and roll into a ball. Roll in extra cocoa or chopped nuts or seeds to coat. You could probably eat them without this coating, but it helps them be less sticky and looks nice. If rolling in cocoa, dust off excess or you will be inhaling a bit of cocoa powder when you eat them. Makes 10-12 balls, depending on how big you make them.
- Place rolled balls in a storage container. Keeps on the counter for 1-2 weeks, but we prefer them cold out of the fridge or freezer. Keeps in fridge for 3-4 weeks, freezer for 3+ months. If traveling with them, putting them in lunches, etc. I recommend freezing and then they will be perfectly thawed by lunchtime!
