This is based on a breakfast- or lunch-time recipe a co-worker gave me. It calls for a packet of gelatin; at some point, I'll add the exact gelatin measurement. The fruit can be any combination you desire.

1 ounce plain gelatin
1 cup water
3/4 cup ricotta cheese
3/4 cup cottage cheese
12 ounces fruit (she uses apples, pineapple, and berries, peeled and ready to eat)
4 teaspoons Splenda granular

Steps:

  • Stir the water and gelatin together and heat for 1 minute until thickened.
  • Allow to thicken for another 2 minutes.
  • Add fruit, gelatin mixture, cheeses, and Splenda to blender.
  • Blend until smooth.
  • Pour into serving containers and chill until serving time.

1 cup heavy cream
1/2 cup sweetened condensed milk
1/2 cup frozen passionfruit puree, thawed
1/2 teaspoon vanilla extract
1 fresh passionfruit, optional

Steps:

  • Beat the heavy cream in a large bowl with an electric mixer at medium-high speed until it holds stiff peaks. Add the condensed milk, passionfruit puree and vanilla and beat until combined. Spoon the mousse into two 10- to 12-ounce bowls. Cover the bowls with plastic wrap and refrigerate until the mousse is firm, at least 2 hours. If you have access to a fresh passionfruit, spoon a little of the fresh fruit on top. The mousse is also delicious with some granola sprinkled on top.

2 x 250g tubs quark (low-fat cream cheese)
50g icing sugar
squeeze or two of lemon juice
250g pack of frozen raspberries

Steps:

  • Tip the quark and sugar into a large bowl, squeeze in a few drops of lemon juice and beat with a wooden spoon until smooth and creamy (you can do this an hour or two ahead).
  • Gently stir in raspberries until they begin to break up and mixture is streaked pink; taste and add a little more lemon juice if liked. Spoon into glasses and serve.

I have not tried this recipe. I got this recipe from Switch Recipes. It was posted by trying2Bbuff. You can use chocolate protein powder as well for an extra chocolately mousse. Protein grams can equal 15 or higher, depending on how much protein powder you use.

1 cup heavy whipping cream (It fluffs & firms up the best)
2 tablespoons cocoa powder
2 teaspoons splenda sugar substitute
3 tablespoons unflavored 100% whey protein powder (1-3 scoops any brand)

Steps:

  • Stir dry ingredients together in mixing bowl.
  • Add cream and mix well on low speed for about a minute. Switch to High Speed and mix for about 2 minutes until mixture begins to firm and turn into mousse.
  • Spoon into bowl and refrigerate.
