These energy bites combine Emergen-C® Protein Fuel & Superfoods Pomegranate Mango, dried fruits, and nut butter for a delicious snack that's packed with protein in every bite. Chopped cashews are the finishing touch to add a satisfying crunch.

1 cup pitted whole dates
½ cup dried mango
2 scoops Emergen-C® Protein Fuel & Superfoods Pomegranate Mango
½ cup cashew butter, or more to taste
¼ teaspoon salt
¼ cup finely chopped roasted cashews

Steps:

  • Place dates and mango in a blender or food processor; pulse until very finely chopped. Add Emergen-C® Protein Fuel & Super Foods Pomegranate Mango; pulse to combine.
  • Add cashew butter and salt; pulse until well-combined and almost smooth.
  • Using your hands, roll 1 tablespoon of mixture into a ball, then roll ball in chopped cashews to coat. Repeat with remaining date mixture and cashews.

Shape a mix of peanut butter, flaxseeds, pecans, raisins and coconut into balls for a healthy, energy-boosting snack

100g pecan
75g raisin
1 tbsp ground flaxseed (or a mix- we used milled flaxseed, almond, Brazil nut and walnut mix)
1 tbsp cocoa powder
1 tbsp agave syrup
50g desiccated coconut
2 tbsp peanut butter

Steps:

  • Put pecans in a food processor and blitz to crumbs. Add raisins, peanut butter, flaxseeds, cocoa powder and agave syrup, then pulse to combine.
  • Shape mixture into golf ball-sized balls and roll in desiccated coconut to coat. Put in the fridge to firm for 20 mins, then eat whenever you need a quick energy boost.

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

1 cup rolled oats
½ cup mini semi-sweet chocolate chips
½ cup ground flax seed
½ cup crunchy peanut butter
⅓ cup honey
1 teaspoon vanilla extract

Steps:

  • Combine oats, chocolate chips, flax seed, peanut butter, honey, and vanilla extract together in a bowl; form into balls using your hands. Arrange energy bites on a baking sheet and freeze until set, about 1 hour.

Steps:

  • Whizz apricots with dates and cherries in a food processor until very finely chopped. Tip into a bowl and use your hands to work in coconut oil. Shape the mix into walnut-sized balls, then roll in sesame seeds. Store in an airtight container until you need a quick energy fix.
