PERFECT SUMMER FRUIT SALAD
The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

- Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
- Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

VERY BASIC FRUIT SALAD
I love how simple and refreshing this is and the ability to adjust the recipe for the types of fruits which are fresh in your local area. Allow at least 4 hours for chilling before serving. From TOH Cookbook. I like changing out the cantaloupe with fresh pineapple and/or grapefruit slices (which sometimes means a bit of sugar added to balance the tartness), or I have added blueberries also just as a topping.

- Cut the oranges in half and scrape out the pulp, making sure you don't break the rinds. (A grapefruit knife makes this an easy job.)
- Slice off the very tip of the base of each orange rind, if necessary, so it sits flat and forms a cup. Be careful that you don't cut too much, as you don't want to make a hole at the bottom. Set aside.

- Begin with the Oranges & Pineapple: If you are using canned mandarin oranges, open the can and drain all the juices into the sink. Place the canned or fresh oranges, in slices, in a large bowl. Next, add the pineapple to the bowl. If you are using canned pineapple, drain the juice but reserve it for the sauce later on. If the reserved juice does not equate to two cups, add water until you have two cups. Mix the two fruits well.
- Add Berries & Nuts: Next, you will add the berries you've chosen for your project. If you are using a larger berry, like strawberries, you need to slice them into smaller pieces. Then, you will add the nuts of your choice to the bowl. Don't mix yet.
- Heat the Juice: The first step for making the sauce is to put the pineapple juice in a mid-size pot. Turn your heat to medium and allow the juice to warm. Whisk the mixture every few minutes as the juice warms. When the juice is continuing to boil, add the box of pudding mix. Whisk the mixture until you see that the powder is completely disappearing into the liquid and it is becoming thicker. Remove the concoction from the heat and turn off the range. Let the mixture cool for a while. When the mixture is cool, whisk in your yogurt. Again, you will see the mixture begin to thicken.
- Drizzle the Sauce Over the Fruit: The final step for your fruit salad is to mix the sauce with your fruit salad. Before you do this step, make sure that the sauce is totally cool. You don't want to drizzle hot sauce on the fruit. Be gentle with your drizzle.
