APPLE OR CHERRY OR BLUEBERRY PIE QUESADILLA
A quick and easy dessert that is quite tasty. You can change the fruit filling and cheeses to suit your mood or use fresh fruit in season.If using fresh fruit, you may have to cook atop the stove for a few minutes to help break down the fruit. Add 1/4 C sugar for each 2 C fruit. You may end up with extra fruit, so make 2 Quesadillas. Use cream cheese with cherry and top with sugar. Use provolone with blueberry or blue cheese with blueberry. Very inexpensive, too.

Steps:
- Preheat oven to 375.
- Spray iron skillet or cookie sheet with cooking spray.
- Microwave butter, cover with a paper towl and microwave about 15 seconds until melted.
- Place 1 tortilla in skillet or cookie sheet.
- Spoon fruit onto middle of tortilla leaving about 1/2 inch all around.
- Sprinkle with cheese.
- Place the second tortilla on top.
- Drizzle melted butter evenly over the crust.
- Mix the sugar and cinnamon (if apples are used) in a small bowl.
- Sprinkle over tortilla.
- Bake about 8-10 minutes until just beginning to brown.
- Remove from oven and cut into 4 wedges.
- Serve with vanilla ice cream!

- In a nonstick skillet, cook and stir the apricots, nectar and 1 teaspoon sugar over low heat until apricots are tender, about 5 minutes. Stir in the strawberries; cover and remove from the heat. Combine cinnamon and remaining sugar; set aside.
- In another nonstick skillet, cook one tortilla over low heat for 1-2 minutes on each side or until golden and crisp. Spritz one side with butter-flavored spray and sprinkle with half of the cinnamon-sugar. Repeat with remaining tortilla.
- Place a tortilla sugared side down; spread with fruit mixture. Top with remaining tortilla, sugared side up; cut into four wedges. Serve each wedge with 1/2 cup of ice cream and 1 tablespoon of raspberries.

GRILLED FRESH FRUIT QUESADILLAS
This recipe is from Company's Coming Greatest Hits Mexican. It's a wonderful creamy dessert dish that is almost like a Danish pastry but much lower in calories.

- Lightly spray an electric grill with olive oil or a nonstick spray (i.e. Pam).
- Preheat grill to medium-low.
- Combine cream cheese, brown sugar and vanilla in small bowl and mix until smooth.
- Spread mixture on 2 tortillas.
- Divide apple or mashed banana between remaining 2 tortillas.
- Sprinkle with cinnamon.
- Cover with first 2 tortillas.
- Place, fruit side down, on grill.
- Cook for 1 1/2 to 2 minutes.
- Turn over carefully.
- Cook for another 1 1/2 to 2 minutes until crispy and browned.
- Let tortillas stand for a minute.
- Cut each tortilla into 4 wedges (you'll have 8 pieces).
- Enjoy.

- Lightly brush one side of a tortilla with butter.
- Spread the tortilla with a thin layer of cream cheese, if desired.
- Spread about 1/4 cup pie filling on one-half of the tortilla, then fold the tortilla in half, pressing slightly to seal the edges.
- In a large skillet on medium-low heat, cook the tortilla until lightly browned (about 4 min.); turn and brown the other side.
- To serve, dust with confectioners' sugar or cinnamon-sugar.
- Each quesadilla may be served whole or cut into 3-4 wedges before serving.
- Serve hot.
