Steps:
- Preheat oven to 375˚F (190˚C).
- In a medium-size bowl, combine almond flour, sliced almonds, coconut oil, maple syrup, cinnamon, nutmeg, and salt. Set aside.
- Divide the blueberries evenly among ramekins. Squeeze the lemon juice over the blueberries.
- Sprinkle the almond mixture over the blueberries.
- Bake for 30-35 minutes, or until browned.
- Let cool before serving.
- Garnish to your liking.
- Enjoy!

FRUIT COBBLER - PALEO AND THERMOMIX
Any fruit will do - berries, apples, whatever you like. I wrote the recipe for berries because I had to choose, but I've made it often with apples and peaches as well. This recipe is adapted for the Thermomix from balancedbites.com

Steps:
- Preheat the oven to 375ºF.
- Place walnuts in Thermomix Bowl. Set lid to closed position and hit turbo 2 or 3 times to chop the nuts. Tip out and set aside.
- Place coconut oil in TMbowl. Melt at 50º/speed 1.5/2 minutes. In summer you may not need to melt the oil at all - in winter it may take longer than 2 minutes - just make sure it is completely liquified.
- Add the almond meal, maple syrup, cinnamon and salt to the melted oil. Mix 15 seconds/speed 4.
- Add the chopped walnuts to the TMbowl and mix the whole lot together 10 seconds/speed 4.
- Place the fruit in the bottom of a 9x9 baking pan. Squeeze the lemon over all. Sprinkle on the topping. Don't worry about trying to cover every bit of fruit.
- Bake 20-30 minutes - or until crumbly and golden brown.

Steps:
- For the fruit, put all the ingredients in a saucepan. Cook over a low heat, stirring until the butter has melted and the sugar has dissolved, then leave to simmer until you have a chunky fruit compote, then set aside.
- Heat oven to 190C/170C fan/gas 6. Whisk the egg into the milk and set aside. Rub the butter and the flour together until it has the texture of chunky breadcrumbs, then stir in the caster sugar, cinnamon, baking powder and a large pinch of salt. Pour in the milk mixture and bring together to form a thick, batter-like texture.
- Tip the compote into a baking dish and top with large spoonfuls of the cobbler mix, making sure there are a few gaps for the fruit to bubble through, then sprinkle everything with the demerara sugar. Bake for 35-40 mins or until the topping is golden and just cooked through. Remove from the oven and leave to rest for 5 mins before serving straight from the dish with generous spoonfuls of clotted cream.

- Prepare a 7-8 cup baking dish by coating with a bit of coconut oil, or a well seasoned 10” cast iron skillet will also work well. Preheat the oven to 400°.
- Prepare peaches by pitting, peeling (or not, your call) and slicing. You can use equal parts blueberries and peaches.
- For filling: place fruit in a large mixing bowl. Add maple sugar, salt, lemon zest/juice and cassava flour. Using a rubber spatula, carefully fold all ingredients together until all fruit is evenly coated. Pour into the baking dish and set aside.
- For topping: in a medium bowl add flour, maple sugar, baking powder and salt. Using a fork, toss about to combine. Add butter and work it into the dry ingredients using your finger tips or a pastry cutter until well combined. Add egg and mix with a small wooden spoon until it resembles a coarse crumb mixture. Pour in milk and stir until dough comes together. This is a very rustic dough, no need to get it all nice and smooth.
