CABBAGE FRUIT SALAD
This salad goes well with all meats-it's especially good at barbecues-and fish. I recently served it at the Prayer Brunch of our local women's club. After 55 years of marriage, I'm a wife, mother, grandmother and great-grandmother doing the things I like to do...and cooking's on top of that list!

- In a large bowl, toss cabbage, oranges, apples, grapes and currants; cover and refrigerate. In a small bowl, combine the mayonnaise, milk, lemon juice, sugar and salt; cover and refrigerate. Just before serving, stir dressing and pecans into salad.

FRUITED CABBAGE SALAD
"The recipe came from a neighbor who invited us for lunch after church," Kathy recalls. "I bring it to potlucks and family get-togethers. It's very versatile. You can substitute lettuce for the cabbage and add almost any fruit. Almonds, peanuts or sunflower kernels can be used in place of the pecans," she adds.

- In a large bowl, combine the first five ingredients; set aside. In a jar with a tight-fitting lid, combine mayonnaise, milk, sugar, lemon juice and salt if desired; shake well. Pour over cabbage mixture; toss to coat.

FRUIT & CABBAGE SALAD
If you're tired of boiled cabbage for Saint Patrick's Day--or green food dye--try this fresh salad instead. It's made with apples, oranges, fennel, and pomegranates. It isn't overly sweet either. In fact, it is so tasty, you'll pinch yourself... to make sure you're not dreaming.

Steps:
- In a large mixing bowl, combine 1 cup Greek yogurt, 1 tablespoon honey, 1/2 teaspoon apple cider vinegar, and 1/4 teaspoon sea salt. Mix to combine. Maybe drink some green beer while you're doing it.
- Add in 2 Honey Crisp apples and 1 fennel bulb. Learn how to buy, store, and cut fennel in the how to section on my website.
- Peel 4 Mandarin oranges, removing as much of the pith as possible. Cut them width wise, and then break apart the segments. Pat them down with a paper towel to remove any excess juice.
- Add the oranges, 1/4 teaspoon mint, and 1 tablespoon basil, and fold them into the yogurt dressing. Chill the mixture in the fridge for 1 hour.
- Cut the cabbages in half, coring out some of the center, to create four bowls. Divide the salad between the halves, top with pomegranate seeds, and serve with some cracked pepper. Enjoy!

- Wash, dry and shred cabbage.
- Place in a wooden salad bowl and add salt and pepper.
- Add fruit to cabbage and sprinkle with raisins and nuts.
- Blend mayonnaise with cream, pour over salad and mix gently.
- Sprinkle with chopped parsley.
- Mayonnaise:.
- Blend egg yolks with wine vinegar, mustard powder, garlic, sea salt and freshly milled black pepper.
- Add vegetable oil, drop by drop.
- Then add olive oil in a steady stream then vegetable oil, beating constantly.
- When thickened, check seasonings.
- If you need to thin a mayonnaise add vinegar or milk.
- Store in a tightly closed glass jar in a refrigerator for up to 2 weeks.
