HAM WITH MIXED FRUIT
Apple pie filling and fruit cocktail are combined with a little brown sugar to create a sweet chunky sauce that nicely complements ham steaks. "I make this often for birthdays, and it's delicious," she assures. "It can be reheated, but I never have leftovers. "For easy cleanup, I sometimes place the ham on a large piece of heavy-duty foil, put the fruit mixture on top, then pull up the corners of the foil and twist them to form a bundle," she explains. "I pop it in the oven to bake, and when it's done, there's no pan to wash."

- In a small bowl combine fruit bits and apple butter. In a large bowl, combine egg, milk, graham cracker crumbs, pepper, ground ham, and ground pork. Crisscross 3 foil strips atop a sheet of waxed paper to keep counter clean. In center of foil strips pat half of the meat mixture into a 7 inch circle. Spread fruit mixture on meat circle to within 1 inch of edges. Top with remaining meat mixture. Press edges of meat to seal well. Bring up foil strips, lift and transfer to any size crockpot. Press meat away from sides of crockpot to avoid excess browning. Cover and cook on Low for 8 to 10 hours or on High for 4 to 6 hours. Loaf is done when meat thermometer inserted reads 170 degrees F. In a small bowl combine brown sugar, apple juice, and dry mustard. Spread over meat. Cover and cook on Low or High heat for 30 minutes more. Using foil strips, lift ham loaf from crockpot and transfer to serving plate; discard foil strips. Serve.

- Combine the tomato paste, Worcestershire sauce, red pepper flakes and paprika in a 5-to-6-quart slow cooker. Add the ham, beans, bay leaf and thyme. Pour in 4 cups water; cover and cook on low, undisturbed, 8 hours.
- Pour the tomatoes into a bowl and crush them with your hands. Add the tomatoes and their juices, the scallions and garlic to the slow cooker. Cover and cook 30 more minutes.
- Remove the ham from the slow cooker and transfer to a cutting board to cool slightly before slicing. Set aside about one-third of the ham and 3 cups of the stewed bean mixture to make Ham Jambalaya. Serve the remaining ham with the bean mixture.
