Steps:

  • Slice 2 green tomatoes 1/2 inch thick. Whisk 1/3 cup flour, 1/2 teaspoon kosher salt and 1/4 teaspoon each garlic powder and cayenne in a dish. Whisk 2 eggs and 1 tablespoon milk in another dish. Put 1 1/2 cups panko in a third dish. Dredge each tomato slice in the flour, then egg, then panko. Fry in 1/2 inch 350 degrees F vegetable oil, turning, until golden, 3 to 5 minutes. Serve with ranch dressing.

1/4 cup all-purpose flour
1/4 cup yellow cornmeal
1/2 teaspoon salt
1/2 teaspoon garlic salt
1/2 teaspoon ground red pepper
1/2 teaspoon cracked black pepper
1 cup buttermilk
1 cup vegetable oil
hot pepper sauce (optional)

Steps:

  • Cut tomatoes into 1/4-inch-thick slices.
  • Combine flour, cornmeal, salt, garlic salt, red pepper and black pepper in pie plate or shallow bowl; mix well.
  • Pour buttermilk into second pie plate or shallow bowl.
  • Heat oil in large skillet over medium heat.
  • Meanwhile, dip tomato slices into buttermilk, coating both sides.
  • Immediately dredge slices in flour mixture; shake off excess flour mixture.
  • Cook tomato slices in hot oil 3 to 5 minutes per side.
  • Transfer to parchment paper or paper towels.
  • Serve immediately with pepper sauce, if desired.

4 large, firm green tomatoes, cut crosswise into 1/2-inch slices
Kosher salt and freshly ground black pepper to taste
1 cup finely ground cornmeal
1 teaspoon paprika or pimentón (a Spanish smoked paprika, available at latienda.com)
2 eggs
Vegetable oil

Steps:

  • 1. Sprinkle the tomato slices with the salt and pepper; set aside.
  • 2. Combine the cornmeal and paprika in a shallow bowl. In another bowl, beat the eggs.
  • 3. Cover the bottom of a heavy skillet with 1/2 inch of oil, then place it over medium-high heat.
  • 4. Coat the tomato slices in the egg, then dredge them in the cornmeal mixture.
  • 5. Fry as many tomatoes as fit comfortably in the pan until nicely browned, about 2 minutes a side.
  • 6. Transfer them to a paper towel-lined platter. Repeat until all the tomatoes are cooked.

6 green tomatoes, cored and cut into 1/16-inch slices
salt and ground black pepper to taste

Steps:

  • Heat vegetable oil in a skillet over medium heat.
  • Place cornmeal in a bowl; dip and coat each tomato slice until thoroughly coated.
  • Place coated tomato slices side by side in the hot oil; fry until coating is browned and crusty, 1 to 2 minutes per side. Remove with a slotted spoon and transfer to a paper towel-lined plate to drain. Season with salt and black pepper. Repeat with remaining tomato slices.

I came up with this recipe on my own while trying to make the perfect fried green tomato...It's absolutely fantastic! Don't skip the step of drying!

3 green tomatoes
2 cups flour
2 tablespoons black pepper
2 tablespoons italian seasoning
1 teaspoon cayenne pepper
2 eggs
1/4 cup milk

Steps:

  • First, cut your tomatoes at 1/8 inch and lay out to dry -- I lay down paper towel and then place tomatoes on a cooling rack and then layer more paper towels on top. THIS STEP IS VERY IMPORTANT!
  • While tomatoes are drying, mix together flour, black pepper, Italian seasoning, and cayenne pepper.
  • Dip tomatoes slices into egg and milk mixture and then coat with flour and seasoning mixture.
  • Place in a hot skillet with oil and fry for about 3 minutes on both sides or until browned.
  • I usually place them back on the cooling rack so they don't get soggy when they are finished.
  • Serve immediately!
