FROZEN FRUIT PIZZA
A friend of mine used to have a sandwich shop-- she made this recipe and kept it frozen until purchased. It is best eaten while only slightly thawed!

Steps:
- Combine the first 5 ingredients and mix for about 2 minutes on medium speed. Mixture will be very thick. While mixing the crust, top a shiny, 16 in. pizza pan with parchment paper or aluminum foil (I prefer the paper.) If you do not have a 16 in. pan, two smaller pizza pans will work.
- Place batter in the middle of the pan. Spread the mixture to the edge of the pan. This is a bit tricky, you will need to grasp the paper and hold it opposite the direction that you are spreading. Also, I place a rubber no slip pad underneath the pan to hold it in place. Aim to make a consistent thickness throughout the crust, going to withing ½ inch of the edge. Don't worry if it is not pretty, it will not show in the final product. Consistent thickness is what is important.
- Preheat oven to 375 degrees. Bake in the middle rack of the oven for 10 minutes, and then check for the next 2 minute intervals until light brown. (I call this babysitting your oven) It will take 10 - 14 minutes, depending on your oven. Remove and allow to cool.
- While the crust cools, place the cream cheese, sugar and vanilla in your clean mixing bowl. Beat until well combined
- Now, spread the toppping over the cooled crust. Next, "decorate" with strawberries, bananas, berries, kiwi, pineapple slices. Make sure all are sliced thinly, or in small chunks. Cover with plastic wrap and freeze. Serve slightly thawed.

- Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

- In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, cream the softened butter for about 1 minute on medium speed. Get it nice and smooth, then add the sugar and beat on medium speed until fluffy and light in color. Beat in egg and vanilla. Scrape down the sides as needed.
- In a medium bowl, whisk the flour, salt, baking powder, baking soda, and cornstarch together. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients. Once completely combined, cover the dough tightly and chill in the refrigerator for 30 minutes and up to 1 day. Without chilling, your cookie dough may spread over the sides of the pan.
- Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan. Remove chilled cookie dough from the refrigerator and press onto the pizza pan in an even flat circle, as pictured above. Bake for 18-20 minutes or until the edges are very lightly browned. Overbaking will lend a hard crust. Allow crust to cool completely before decorating. I put the crust in the refrigerator after 10 minutes of cooling at room temperature – this sped up the process.
