Steps:
- Cook milk over low heat, keeping it below the boiling point. Remove pan from heat and add in sugar, stirring until it dissolves.
- Gradually pour the milk mixture over the beaten eggs, stirring constantly until well blended.
- Transfer mixture to the top of a double boiler and cook, stirring constantly, until thick and smooth.
- Cool to room temperature, then add remaining ingredientsand mix thoroughly.
- Chill for 2-4 hours (or overnight). Freeze in ice cream maker according to manufacturer's directions.

Okay, so I really like iced coffee, so one day I tried putting it in a blender and this is what I came up with. Very easy and yummy. Enjoy. Note: Prep time doesn't include brew time or chill time on coffee. I brew it for hot coffee one day and take leftovers and put in fridge for this.

- Add brown sugar to freshly made hot coffee & stir until sugar has dissolved.
- Scrape seeds out of half of a vanilla bean & put them, along with the bean, into the hot coffee, then set aside for 10 minutes to infuse.
- Remove the vanilla bean & let the coffee cool, then put it in the refrigerator to chill for at least 30 minutes.
- When the coffee has chilled, peel the bananas & put them in a blender along with the coffee & almonds. Process until smooth, then add the ice & process until ice is roughly crushed.
- Pour into two glasses & serve immediately.
