Steps:
- Microwave chocolate and 2 Tbsp. of the milk in large microwaveable bowl on HIGH 1-1/2 to 2 min. or until chocolate is almost melted, stirring after each min. Stir until chocolate is completely melted. Add cream cheese, sugar and remaining milk; beat with wire whisk until well blended. Refrigerate 10 min. to cool.
- Add whipped topping; stir gently until well blended. Spoon into crust.
- Freeze 4 hours or until firm. Let stand at room temperature or in refrigerator about 15 min. or until pie can be cut easily. Store leftover pie in freezer.

- In a large bowl, beat cream cheese, sugar and vanilla until smooth. Add cocoa alternately with milk; mix well. Fold in whipped topping. , Pour into pie shell. Freeze for 8 hours or overnight. - In a bowl, combine cracker crumbs and 3 tablespoons of sugar. Stir in margarine. Press onto the bottom and up the sides of an ungreased 9 inch pie plate. Refrigerate for 30 minutes.
- In a microwave-safe bowl, combine 1/2 cup chocolate chips and 2 tablespoons milk. Microwave, uncovered, on high for 1-2 minutes or until melted. Stir to blend; set aside.
- In another bowl, beat cream cheese and remaining sugar. Stir in chocolate mixture and remaining milk; beat until smooth. Set aside 1/2 cup whipped topping for garnish. - In a large bowl beat sugar into cream cheese, using electric mixer.
- Beat in the milk all except 4 tablespoons
- In a pan CAREFULLY melt the chocolate chips and remainder of milk.
- Beat the chocolate mixture into cream cheese mixture till smooth.
- Fold in Cool Whip.

FROZEN CHOCOLATE PIE
Extraordinarily rich and decadent, this pie is a chocolate lover's dream. Like many of my favorite recipes, it is from the Betty Crocker Recipe Card Library. You can use a traditional, graham cracker or cookie crumb pie crust, but my favorite is a chocolate cookie crumb crust (that I will sometimes mix with some very well-dried and finely chopped maraschino cherries).

- In small bowl, combine 1 cup of confectioner's sugar with the butter on the low speed of a mixer until fluffy.
- Blend in the chocolate and vanilla.
- Then, on high speed, beat in the eggs, one at a time, beating thoroughly after each addition.
- Pour into the prepared pie shell and cover with plastic wrap.
- Freeze for at least 6 hours or until firm.
- For easier cutting, remove the pie from the freezer 10 to 15 minutes before serving.
- When ready to serve, remove the plastic wrap.
- Then, in a chilled bowl, beat the whipping cream and 2 tablespoons of confectioner's sugar until stiff.
- Pile decoratively onto the pie, and top with garnish if desired.
- NOTE: I have found my small hand-held mixer works better for this than my stronger tabletop model.
- If you use a tabletop mixer, be careful you don't overmix.
- This pie should be thick, dense and creamy, and overbeating the eggs will give it a more mousse-like texture.
- It's by no means bad that way, but it is much better when the consistency is thick.

BEST CHOCOLATE CREAM PIE
This filling just on it's own is good enough to serve for a pudding or mousse, this is a beautiful pie that makes a wonderful after dinner dessert to serve to your guests. It can also be made using a graham cracker crust, if you are a serious chocolate lover, then you will love this pie. Plan ahead this pie needs to chill for 6 hours or more before serving. Please do not cut into it before the 6 hours, as it will not be set enough. Make certain to finely chop the chocolate well so it will incorporate into the hot cream, you can do this, and bake the crust well in advance.

- Set oven to 350 degrees F (middle rack).
- To make crust: mix together all ingredients.
- Press into bottom and up sides of a 9-inch pie plate (1-quart capacity).
- Bake for 12 minutes: cool completely.
- For filling: in a 3-quart heavy-bottomed saucepan (make certain to use a heavy saucepan for this as it will scorch on the bottom) stir together 2/3 cup plus 2 tablespoons sugar, cornstarch, salt and egg yolks.
- Whisk in half and half cream; bring to a boil slowly over medium heat, whisking constantly, then add in the finely chopped chocolate until smooth and melted; cook about 1-2 minutes, whisking constantly until thick (filling will be very thick).
- Remove from heat and add in butter and vanilla.
- Cover the top of the filling with plastic wrap (lay the plastic wrap directly on top of filling) and cool slightly (about 1-1/2 - 2 hours).
- Spoon the filling into the crust and cover lighty with plastic wrap.
- Refrigerate pie for a minimum of 6 hours (don't try to cut into the pie before the 6 hours it will not hold together!).
- Just before serving whip the cream and spoon on top of pie, the grate chocolate on top of the whipped cream if desired.
