1 1/4 lbs chicken tenderloins
2 tablespoons soy sauce
2 medium carrots, sliced
1 (8 ounce) can sliced water chestnuts
1 (8 ounce) can pineapple chunks
1/2 cup sweet and sour sauce
2 teaspoons cornstarch
1/2 teaspoon ginger
1 (9 ounce) package frozen oriental-style vegetables

Steps:

  • Combine chicken and soy sauce in slow cooker and mix to coat. Stir in carrots, water chestnuts, and juice only from pineapples.
  • Cook on Low setting for 3 to 4 hours. Refrigerate pineapples until later.
  • Twenty minutes before serving, turn heat to High setting. Whisk together sweet and sour sauce, ginger, and cornstarch. Add to crock pot, along with pineapple and vegetables.
  • When vegetables are tender, the dish is ready to serve or hold on low. I often serve with white rice.

4 boneless, skinless chicken breasts ((total weight about 1 pound))
2 cups heavy cream
1 cup low-sodium chicken broth
4 tablespoons unsalted butter (cut into pieces)
8 ounces cream cheese (cut into pieces)
1/2 teaspoon salt
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 pound rigatoni (uncooked (see notes))
4 ounces Parmesan cheese (shredded)
Fresh parsley (finely chopped)

Steps:

  • To your slow cooker add the chicken breasts, heavy cream, chicken broth, butter, cream cheese, salt, Italian seasoning, pepper, and garlic powder.
  • Cover and cook for 2 hours on HIGH or 3 to 4 hours on LOW.
  • Remove chicken and shred it. Return chicken to slow cooker and add pasta & parmesan. Mix to combine. Recover and cook for 30 minutes on HIGH or until pasta is tender.
  • Remove lid and stir on more time. Top with parsley and extra parmesan cheese if desired.

1.5 lbs boneless, skinless chicken thighs cut into 1 inch chunks
3 medium russet potatoes, rinsed and chopped into 1/2 inch chunks
2 cups sliced carrots
1 cup diced onions
1 1/2 cups frozen corn
21 oz condensed cream of chicken soup ( 2 x 10.5 oz cans)
0.87 oz chicken gravy mix
1 tsp salt
1 tsp pepper
1 tbsp onion powder
1 tbsp garlic powder
1/2 tsp ground sage
1 cup chicken broth
1 cup heavy cream
1/4 cup water
2 tbsp cornstarch

Steps:

  • Spray inside of Crock Pot well with cooking spray.
  • Dump the chicken thigh chunks into the bottom of the pot and spread them out evenly.
  • Dump the potato chunks on top of the chicken and spread them out.
  • Dump the sliced carrots, diced onions and frozen corn on top spreading them out as evenly as possible.
  • Dump the cream of chicken soup into a large mixing bowl.
  • Add the chicken gravy mix, salt, pepper, onion powder, garlic powder and ground sage to the bowl.
  • Stir well.
  • Add the chicken broth and heavy cream to the bowl.
  • Stir well again.
  • Pour the mixture over the ingredients in the Crock Pot.
  • Place the lid on the Crock Pot and set it to cook on LOW.
  • After 6 - 7 hours of cooking time, remove the lid and stir the contents well.
  • Combine the water and cornstarch and stir until the cornstarch is completely dissolved.
  • Add the cornstarch mixture to the stew and stir well.
  • Return the lid to the Crock Pot and leave the stew to simmer and thicken for at least 15 minutes.
  • Serve and enjoy!
