DATE BALLS
A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

Steps:
- Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
- Grease your hands with margarine. Roll date mixture into 1-inch balls.
- Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

CHOCOLATE DATE ENERGY BALLS

- Place dates, chocolate and cherries in a food processor; process until finely chopped about 1 minute. Add nuts, coconut and sunflower kernels; process until blended. Add oil and vanilla; process until mixture comes together. Roll into 12 balls. Refrigerate, covered, at least 30 minutes before serving. Store in an airtight container in the refrigerator.

MOM'S FROSTED DATE BALLS
These are something good to make for Christmas.

Steps:
- 1. Sift the flour twice. Add salt. Cream the butter and gradually add sugar. Add milk and vanilla. Sift in flour. Blend in dates and nuts. Roll into 1 inch balls.
- 2. Place about 3 inches apart on undressed cookie sheet. Bake at 300 degrees F. for 20 minutes or until lightly brown. While still warm, roll in confectionary sugar. Makes about 3 dozen.

When I was a youngster, Mom always baked these tender old-fashioned cookies dotted with chewy dates and crunchy walnuts. Much to the delight of my family, I've continued her delicious tradition.

- Add dates to a bowl of a food processor and pulse until large crumb like consistency. If the mixture turns into one large ball, use your fingers or a spoon to pat it down.
- Add almond butter and continue to pulse until small crumbs/thick paste is formed.**
- Form the mixture into 1-1 1/4 inch balls and place on a parchment lined sheet pan.
- Pour the coconut into a small shallow bowl and roll the date balls in the coconut.
- Store in airtight container at room temperature, away from heat.

FROSTY DATE BALLS
My mom makes these every Christmas. They are really delicious and so pretty too, like they have snow sprinkled on top. Hence the name, "Frosty" :) These can be thrown together in about 30 minutes and keep in an airtight container for about 1-2 weeks.

- Cream butter and 1/3 cup powdered sugar until light and fluffy.
- Mix in water, vanilla, flour, salt, dates, and walnuts.
- Roll into balls a little larger than the size of walnuts and bake on an ungreased baking sheet 2 1/2 inches apart at 300 degrees F for 20 minutes (Till soft but NOT brown.).
- While warm, roll in powdered sugar OR sift powdered sugar over warm cookies.
