SEVEN-MINUTE FROSTING

Seven-Minute Frosting image

This old-school frosting of egg whites and sugar comes together fast to give your cakes and cupcakes piles of fluffy, marshmallow-y swirls.

Provided by Sara Bir

Categories     Dessert

Time 15m

Number Of Ingredients 7

1 cup plus 2 tablespoons (250g) sugar
1/3 cup water
4 egg whites
1 tablespoon light corn syrup
1/4 teaspoon cream of tartar
Pinch salt
1 teaspoon vanilla extract

Steps:

  • Use the frosting: Use the frosting within 30 minutes. As it sits, the frosting becomes too tacky and deflated to work with. If someone comes to the door and you can't use the frosting immediately, drape a warm, damp kitchen towel over the bowl. This can buy you a little time.
  • Serve: Cakes with this frosting are best enjoyed the day they are decorated; after about 4 hours, the frosting will look less glamorous and become tacky, with a chalky outer crust. It's still safe and delicious to eat. It's just not very pretty.
  • Store cakes uncovered: Store cakes iced with seven-minute frosting uncovered and avoid having plastic wrap come into contact with the frosting-it'll stick to the wrap. If your cake is sliced you can fold plastic wrap or parchment over and press it against the cut part of cake to prevent it from drying out.

  • Powdered Sugar. To add some sweetness to the marshmallow frosting, you’ll need one cup of powdered sugar or confectioners sugar. This type of sugar is just granulated sugar that’s been ground finely and blended with a little amount of cornstarch to prevent clumping.
  • Heavy Cream. Heavy cream is whipping cream that contains 36-40% milk fat. When whipped, the cream will double its volume. For the whipped cream frosting, you’ll need two cups of heavy cream.
  • Softened Butter. For the chocolate frosting, you’ll need two sticks or one cup of softened butter. You can soften small chunks of butter by placing it near the warming stove.

  • Vanilla Buttercream. Vanilla Buttercream is one of those frosting recipes that every baker should know, so it deserves a post of its own. Since it can be the base for other flavored buttercreams, I feel it’s essential to get it right from the beginning.
  • Cream Cheese Frosting. Cream Cheese frosting is creamy and velvety smooth with the perfect balance of tangy and sweet. This cream cheese frosting is a tried and true frosting that is pretty straightforward with only five ingredients required so anyone can make it.
  • Chocolate Buttercream. Chocolate buttercream is another popular frosting that everyone loves. You can use milk or dark chocolate cocoa powder in this recipe.
  • Lemon Thyme Buttercream. Lemon thyme buttercream is incredibly delicious with a lemon blueberry cake. This buttercream is made with thyme infused butter and a homemade lemon gel that packs a punch of lemon juice and zest without watering down the buttercream.
  • Red Hot Cinnamon Buttercream. The best way to describe this buttercream is that it tastes just like the Big Red chewing gum that you use to eat when you were a kid.
  • Dark Chocolate Stout Buttercream. Guinness is a dark rich beer that lends itself to pair perfectly with chocolate. The sweetness of the chocolate compliments the bitter notes of the Guinness beer.
  • Tequila Lime Buttercream. The tequila lime buttercream is unique in creating a lime gel that holds the concentrated flavor of lime juice without diluting the buttercream.
  • Stabilized Whipped Cream. The stabilized whipped cream is made with heavy cream, powdered sugar, vanilla, and gelatin. The addition of gelatin keeps the whipped cream fresh without falling or deflating in between the cake layers.
  • Swiss Meringue Buttercream. This silky smooth Swiss Meringue Buttercream that you will want to eat out of the bowl. Many of my clients swear they hate buttercream (and prefer whipped cream) because they think it’s so sickly sweet and everyone just scrapes it off their cake… until they try this buttercream.
  • Irish Cream Buttercream. This Irish cream buttercream is the swiss meringue buttercream base with Bailey’s Irish Cream added into it. The Bailey’s in the buttercream filling makes it light and airy looking like fresh whipped cream.
