HOT & SPICY SWEET POTATOES
Tantalise your buds with hot and spicy sweet potatoes

Steps:
- Peel the sweet potatoes and cut crossways into slices 2.5cm thick. Lay each potato on a large sheet of foil, keeping the slices together.
- Drizzle each potato with the olive oil, sprinkle with the thyme leaves, about half of the chopped chilli and season with plenty of salt and pepper. With your hands, massage the flavourings into each slice. Replace the slices in their original positions. Lay a thyme sprig across the top of each potato and sprinkle with the remaining chilli. Wrap the foil securely round the potatoes to make two parcels. (You can prepare to this stage up to 24 hours ahead.)
- Put the foil parcels on the rack over the hottest part of the barbecue and cook for 45 minutes until the potatoes are buttery and softened. (Unwrap and test with the point of a knife to check if they're ready).

SWEET POTATO STREUSEL BARS
Sweet potatoes and pecans pair up in these streusel bars - a great Christmas dessert.

- Heat oven to 350°F. Line 8-inch square pan with foil; spray foil with cooking spray.
- In medium bowl, mix cookie crumbs and melted butter. Press mixture in bottom of pan. Bake 10 to 12 minutes or until set.
- Meanwhile, in large bowl, mix sweet potatoes, 1/3 cup brown sugar, the gingerroot, orange peel and egg. In medium bowl, mix flour, 1/2 cup brown sugar and the pecans. Cut in 1/3 cup butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly.
- Spoon and spread filling evenly over crust. Sprinkle topping over filling; pat gently.
- Bake 35 to 40 minutes or until center is set and edges are golden brown. Cool completely in pan on cooling rack. Cut into 4 rows by 4 rows. Store in refrigerator.

SPICY SWEET POTATO BALLS
Steps:
- Preheat oven to 400 degrees F.
- Mash sweet potatoes while they are hot, then add, butter, salt, and spices. Add egg and continue to whip until thoroughly combined. Chill until firm. Form into golf ball sized pieces and place 2 to 3 marshmallows in center of each ball. Roll in ginger snap crumbs. Place on non-stick or lightly greased baking sheet. Bake for 10 to 15 minutes.
SWEET POTATO BARS
These bars have a gooey, cheese cake-like top layer and a buttery cookie bottom layer. I adapted the recipe from one that called for pumpkin. I made these for Thanksgiving and they were gone before the meal was even served. We enjoyed them warm from the oven, topped with a dollop of whipped cream, heaven! We'll be haveing these every year from now on.

- Preheat the oven to 350 degrees.
- Mix melted butter, cake mix and the egg with a mixer.
- Spread into a greased 13x9 baking dish and pack it down to form an even crust layer. Set it aside.
- Cream together the sweet potato, cream cheese and butter with an electric mixer until smooth.
- Add the vanilla, sugar and spices and continue blending.
- Beat the eggs, add to the mixture and blend until fully incoptorated.
- Spread the sweet potato mixture evenly over the cookie layer.
- Bake for 50-60 minutes until the center is set but still soft.
- Cool and cut into squares.

SPICY SWEET POTATO CHIPS

- Special equipment: deep-fry thermometer, mandoline slicer
- Pour oil to a depth of 4 inches in a heavy-bottomed pot and heat over medium-high heat to 350 degrees F. Line a baking sheet with paper towels.
- Mix the salt, sugar, chili powder and cayenne in a small bowl and set aside. Very thinly slice the sweet potatoes on a mandoline slicer and carefully drop into the hot oil in batches, being careful to not overcrowd the pan. Deep-fry until golden around edges, 45 seconds to 1 minute, and transfer to a lined baking sheet. Sprinkle the chips with seasoning while they are still hot and let cool to crisp. Remove the chips from the baking sheet to a serving bowl and eat immediately while still crunchy!
FROSTED SPICY SWEET POTATO BARS
One bite of these sweet potato bars and you'll think they were pumpkin - the flavors are very similar. Raisins and pecans add texture to the bars. Cream cheese frosting on top is slightly tangy and sweet. A nice complement to the bars that are filled with fall flavors. Easy to make, these will be a great addition to a holiday dessert tray.

- Heat oven to 350 degrees. Spray bottom and sides of a jelly roll baking pan, 15 1/2 X 10 1/2 X 1-inch, with no-stick cooking spray; set aside.
- In a large bowl, with an electric mixer on medium speed, beat together butter, sugar, eggs, sweet potatoes, molasses, and vanilla extract for 1 to 2 minutes or until creamy.
- Gradually add in flour, baking powder, baking soda, salt, and pumpkin pie spice.
- Once all dry ingredients are added, beat for an additional 1 to 2 minutes longer or until blended.
- Stir in raisins and 1 cup chopped pecans.
- Spoon and evenly spread the mixture onto prepared greased jelly roll baking pan.
- Bake for 15 to 20 minutes or until lightly brown and a toothpick inserted in center comes out clean. Cool completely on a wire rack, about 30 minutes.
- Frost top evenly with cream cheese frosting. Sprinkle over top of frosting with remaining 1/2 cup chopped pecans.
- For bars, cut into 8 rows by 6 rows, to form 48 bars. Store in an airtight container.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan.
- Mix brown sugar, butter, eggs, and vanilla extract together in a bowl. Stir in flour, baking soda, cinnamon, and cloves. Stir in zucchini and walnuts. Spread batter into the prepared baking pan.
