FROSTED MOLASSES GINGER SANDWICH COOKIES

1 cup margarine
1 cup white sugar
1 egg
½ cup molasses
2 ½ teaspoons baking soda
3 tablespoons boiling water
4 ½ cups all-purpose flour
1 tablespoon margarine
3 tablespoons boiling water
¼ teaspoon ground ginger
⅛ teaspoon salt
2 ½ cups confectioners' sugar

Steps:

  • In a large bowl, cream together 1 cup margarine and sugar until smooth. Beat in the egg and molasses until well blended. Dissolve the baking soda in boiling water; stir into the molasses mixture. Gradually mix in the flour to make a smooth dough. Cover and chill dough for at least 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to 1/8 inch in thickness. Cut into circles using a 3 inch round cutter. Cut a smaller 1 inch circle out of half of the cookies. It is easier to cut the center hole after the cookies have been placed onto the cookie sheets. Place cookies 1 inch apart onto ungreased cookie sheets.
  • Bake for 7 to 10 minutes in the preheated oven, until edges begin to darken. Allow cookies to cool completely before sandwiching. Frost solid cookies and place a cookie with the center hole on top.
  • To make the frosting: Beat 1 tablespoon of margarine and water together. Blend in the ginger and salt. Gradually beat in the confectioners' sugar until the desired consistency is reached. Sandwich between cooled cookies.

2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon fine salt
1 stick (4 ounces) unsalted butter, at room temperature
1 cup sugar, plus more for rolling
1/3 cup molasses
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
  • Whisk the flour, ginger, cinnamon, baking soda, cloves and salt together in a medium bowl. Set aside.
  • Beat the butter and sugar together in a large bowl with an electric mixer on medium-high speed until well combined, about 3 minutes. Add the molasses and egg and beat until lighter in color, about 3 minutes. Add the flour mixture and mix on low until well blended.
  • Using a tablespoon, form the dough into 1-inch balls and roll in sugar. Place each ball 2 inches apart on the prepared baking sheets. Bake until golden and crackled, 12 to 15 minutes; the cookies will still be a little soft. Baking these in 3 batches one sheet at a time gets you the nice, crackly top. The second sheet of cookies can stay on the counter until ready to bake. Form the remaining dough, roll the balls in sugar and place on the now cooled first baking sheet. Allow the cookies to cool for 5 minutes on the baking sheet, and then remove to a rack to cool completely.

6 quarts half-and-half
2 vanilla beans
48 egg yolks
1 3/4 pounds granulated sugar
2 bananas, roasted
2 1/2 cupS all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
7 ounces unsalted butter
3/4 cup granulated sugar
1/3 cup dark molasses
2 tablespoons cold coffee
1 tablespoon powdered ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2 cups pasteurized yolks
6 cups whole milk
2 cups hreavy cream
1 1/2 cups sugar
8 ounces milk chocolate
1 vanilla bean

Steps:

  • To make the ice cream, scald half-and-half with vanilla beans. Combine eggs and sugar. Temper with half-and-half mixture. Continue to cook at low heat until the mixture coats the back of spoon. Process the ice cream in an ice cream maker according to manufacturer's instructions. Fold in the roasted bananas and keep chilled.
  • To make the ginger molasses cookies, combine the dry ingredients. Cream together butter and sugar. Add dry ingredients, then wet. Finish by adding spices. Be careful not to over mix.
  • Preheat the oven to 375 degrees F.
  • Form in 1-inch balls and placed on greased cookie sheet 2 inches apart. Bake for 8 to 10 minutes.
  • To make the chocolate sauce, prepare an ice bath, strainer, and container. Combine yolks in a bowl. Bring the milk, cream, sugar, chocolate, and vanilla bean to a boil. Temper the egg yolks and return to low heat, stirring constantly until thickened. Strain into a container placed in an ice bath.
  • To serve, spoon desired amount of ice cream on top of a cookie and sandwich. Drizzle with chocolate sauce and serve immediately.

You thought Ginger Molasses Cookies couldn't get any better, but you were wrong. Smash them together with a thick schmear of vanilla buttercream frosting and they turn into Molasses Sandwich Cookies, my favorite Christmas cookie! They are soft and perfect.

1 recipe for Soft and Chewy Molasses Cookies
1 cup salted butter (softened*)
4 cups powdered sugar (divided)
4-6 tablespoons cream (or milk, divided)
2 & 1/2 teaspoons vanilla (good quality)
1/4 teaspoon salt (optional (taste it!))

Steps:

  • Click here to get the recipe for Soft and Chewy Ginger Molasses Cookies. Bake them exactly as the recipe states. Do NOT over bake! You need these cookies to be nice and soft so that when you bite into them with the frosting in between, they do not crunch. The should be super soft, even on the edges. You should get about 30 cookies. Let cool completely on a wire rack.
  • In a large bowl or stand mixer, use the whisk attachment (if you have one) to beat the softened butter until it is fluffy, about 2-3 minutes.
  • Add half of the powdered sugar and 2 tablespoons cream or milk. Beat well. Scrape the sides and bottom of the bowl.
  • Add the remaining powdered sugar and 2 more tablespoons of cream or milk. Beat well.
  • Add salt and vanilla extract. Beat well. Scrape the sides and bottom of the bowl.
  • Add remaining 1-2 tablespoons of cream, if needed.
  • Generously frost the flat side of one ginger molasses cookie. Smash the flat side of another ginger molasses cookie on top.
  • IF you can stand to wait, let the cookie sandwiches sit in a covered tupperware for about an hour before serving. You can even make them a day ahead of time. As the frosting sits with the cookie, it softens the cookies even more!
  • Store in a tupperware on the counter for 2-3 days. Honestly mine have never lasted that long.
  • These cookies freeze very well! I can't promise that the presentation after freezing would be nice enough for gifting, but you could certainly eat them yourself. Freeze for up to 2 weeks, then let thaw on the counter in a sealed container.

1/2 teaspoon baking soda

1 cup packed light-brown sugar

1 large egg
1/4 cup light unsulfured molasses
12 tablespoons (1 1/2 sticks) unsalted butter, softened
3 tablespoons light unsulfured molasses
2 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees. In a small bowl, whisk together flour, baking soda, cinnamon, and salt; set aside.
  • In a large bowl, with an electric mixer, beat sugar and butter until combined. Beat in egg, then molasses, until smooth. On low speed, gradually add flour mixture until a dough forms.
  • Drop rounded measuring teaspoonfuls of dough onto 2 ungreased (or parchment-lined) baking sheets, about 1 1/2 inches apart.
  • Bake until centers are dry to the touch, 12 to 15 minutes; rotate pans from top to bottom and front to back halfway through. Cool 1 minute on baking sheets; then transfer to a rack to cool completely.
  • Make Creamy Molasses Filling: Whisk butter with molasses until smooth. Gradually whisk in confectioners' sugar; whisk until smooth and spreadable. Makes 1 1/2 cups.
  • Spread a rounded measuring teaspoonful of Creamy Molasses Filling on the flat side of a cookie; place another cookie on top, and gently press. Repeat until all cookies are filled. Store in an airtight container at room temperature up to 1 day, or refrigerate up to 3 days (cookies may soften during refrigeration).

They were SO good and when she spoke of making them with her grandmother, you could tell that those memories were very special to her. Make them a part of your cookie jar stock!

1 cup buttermilk
1/4 cup shortening (Crisco is best)

Steps:

  • Preheat the oven to 375 degrees.
  • In a large mixing bowl, cream the butter and brown sugar.
  • Beat in eggs, molasses, and vanilla. Combine the flour, ginger, cinnamon, baking soda, salt, and allspice.
  • Add to creamed mixture alternately with the buttermilk.
  • Drop by tablespoonfuls 2-inches apart on a prepared baking sheet.

Let them cool on baking pan for about 3 minutes. Remove, from pan and let cook on a wire rack. These freeze well and pack well for shipping also the recipe is fine doubled.
