A cool pop of lemon frosting dresses up this dessert, and is the perfect topping for the chewy, tangy bar cookies.

1/2 cup butter, softened
1 cup Gold Medal™ all-purpose flour, sifted
1/4 cup powdered sugar, sifted
2 eggs
2 tablespoons freshly squeezed lemon juice
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons butter, softened
1 1/2 cups powdered sugar, sifted
4 teaspoons freshly squeeze lemon juice
1/2 teaspoon lemon zest (or more to taste)

Steps:

  • Heat oven to 350°F. Grease bottom and sides of an 8-inch square pan.
  • In medium bowl, mix butter, flour, and 1/4 cup powdered sugar with a pastry blender or two knives until mixture becomes crumb-like. Press evenly into bottom of pan.
  • Bake 20 to 25 minutes or until edges of crust begin to brown. DO NOT over bake.
  • Meanwhile in medium bowl, beat all filling ingredients with electric mixer on medium-high speed until smooth.
  • Pour filling mixture over warm crust. Return pan to oven; bake for an additional 25 minutes or until filling is set.
  • Cool completely before frosting.
  • In small bowl, beat butter and 1 1/2 cups powdered sugar with electric mixer on low speed until blended. Add remaining ingredients; beat on high speed until well blended. Spread frosting over filling.
  • Cut into 4 rows by 4 rows. Serve chilled or at room temperature.

4 large eggs, room temperature
2 teaspoons lemon extract
1-3/4 cups all-purpose flour
1/2 teaspoon salt

4 ounces cream cheese, softened
2 tablespoons butter, softened
2 cups confectioners' sugar
2 teaspoons lemon juice
1-1/2 teaspoons grated lemon zest

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and extract. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in lemon zest., Spread into a greased 13x9-in. baking pan. Bake at 350° for 18-22 minutes or until center is set and edges are golden brown. Cool completely., For frosting, in a large bowl, beat cream cheese and butter until fluffy. Beat in confectioners' sugar, lemon juice and zest. Frost top and cut into bars. Store in the refrigerator.

1/2 cup cold butter, diced
1 cups all-purpose flour
1/4 cup powdered sugar
1 cold egg yolk
1 dash salt
1/8 cup ice cold water
1 1/4 cups sugar
1 tablespoon all-purpose flour
1 teaspoon baking powder
1 lemon, zested
3 lemons, juiced
4 medium eggs
8 ounces cream cheese, softened
1 1/2 cups confectioners' sugar
1 teaspoon lemon extract

Steps:

  • Preheat oven to 325 degrees F.
  • Dice the butter and put into a food processor with the flour, and sugar. Pulse in short intervals until the mixture is crumbly and resembles coarse bread crumbs. Add the cold egg yolk, salt and water to the mixture, this will make a pastry dough. Place the dough onto a floured surface and form into a ball. Wrap in plastic and place in the refrigerator until cold.
  • When the dough is cold, place on a floured surface and roll out to cover the bottom of a 13 by 9-inch pan. Bake for 20 minutes.
  • Whisk eggs together and set aside.
  • In a separate bowl mix the sugar, flour and baking powder together. Add the lemon zest and juice. Mix in the eggs until well combined. Pour the mixture over the par baked crust.
  • Place in the oven and bake for 30 minutes until the center has set firmly. Remove from the oven and allow it to cool. Cut into bars.
  • In a large bowl, mix all ingredients together and blend with a hand mixer on low until creamy. Pipe frosting onto lemon bars.

2 lemons, juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  • Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. This is one of my favorite cookies of all time, although technically they're closer to a pie than a cookie. Nothing prepares you for that intense, awesome sweet-tart lemon flavor and custard, perfectly contrasted against that crisp, sweet buttery shortbread cookie.

1 cup all-purpose flour
½ cup unsalted butter at room temperature
¼ cup confectioners' sugar
¼ teaspoon vanilla extract
¼ teaspoon salt
2 large eggs
1 large egg yolk
1 cup white sugar
2 tablespoons all-purpose flour
¼ cup freshly squeezed lemon juice
1 tablespoon freshly grated lemon zest
1 teaspoon confectioners' sugar, or to taste

Steps:

  • Place an oven rack into middle position in oven and preheat oven to 350 degrees F (175 degrees C). Lightly oil an 8x8-inch baking dish.
  • Place 1 cup flour and butter in a mixing bowl and mash with the back of a spatula or wooden spoon until thoroughly combined. Mix in 1/4 cup confectioners' sugar, vanilla extract, and salt; mash mixture together until mixture looks like a slightly crumbly cookie dough.
  • Moisten your fingers with a little water and press dough into bottom of prepared baking dish. Use a fork to prick holes all over the crust.
  • Bake crust on center rack in the preheated oven until crust edges are barely golden brown, 22 minutes.
  • Beat eggs and egg yolks together in a bowl; whisk in white sugar and 2 tablespoons flour until smooth. Add lemon juice and lemon zest; whisk for 2 minutes. Pour lemon custard over crust.
  • Bake on center rack until custard is set and top has a thin white sugary crust, 25 minutes. Let cool completely before cutting into bars. Dip knife into very hot water, run around the edge, and cut into 16 squares. Dust cookies with 1 teaspoon confectioners' sugar.

15.25 ounces lemon cake mix
½ cup butter
1 egg (slightly beaten)
3 cups powdered sugar
4 Tablespoons butter (softened)
lemon juice
3-5 drops yellow food coloring
8 ounces cream cheese (softened)
2 eggs

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all of the ingredients for the cake layer in a mixing bowl. Press down in a 9x13-inch baking pan sprayed with nonstick cooking spray; set aside.
  • In a large bowl combine powdered sugar and butter.
  • Add enough lemon juice to form the consistency of a thick frosting.
  • Beat in cream cheese and yellow food coloring until smooth.
  • Set aside 1 cup of frosting to spread on top after baking (be sure to not skip this step!).
  • Add eggs to remaining frosting mixture and beat until fluffy.
  • Spread on top of cake mix in the pan and bake for 25-30 minutes, or until barely golden brown.
  • Let cool completely and then spread reserved frosting mixture on top and serve.

  • Heat oven to 325°F (if using dark or nonstick pan, heat oven to 300°F). Grease bottom and sides of 13x9-inch pan with shortening or spray with cooking spray.
  • In large bowl, beat 3/4 cup powdered sugar, the granulated sugar and butter with electric mixer on low speed until combined. Beat on medium speed until light and fluffy.
