Deep-fried tofu that is crisp and golden brown on the outside and amazingly white and soft on the inside! Serve with your favorite Asian dish or dipping sauce. Store leftovers in an airtight container in the fridge for up to several days or freeze for several weeks.

1 (12 ounce) package extra-firm tofu
½ teaspoon salt
vegetable oil for frying

Steps:

  • Wrap tofu in a clean towel and place onto a plate. Set another plate on top, and place a 3- to 5-pound weight on top. Press tofu for about 20 minutes; drain and discard the accumulated liquid.
  • Cut tofu into 1-inch by 2-inch chunks. Sprinkle 1/4 teaspoon salt onto one slide; flip over and sprinkle remaining 1/4 teaspoon on the other.
  • Heat oil in a wok or large skillet. To test if the oil is ready, dip a chopstick or wooden spoon in it; if bubbles rise, it is ready. If the oil smokes, it is too hot.
  • Gently place 5 to 8 pieces of tofu at a time in hot oil using metal tongs. Be very careful as oil may splatter; use a splatter guard if possible. Fry tofu until golden, 3 to 4 minutes.
  • Drain tofu on a plate lined with several paper towels. Allow to cool slightly before serving.

1 package (14 ounces) extra-firm tofu, drained
1/3 cup cornstarch
1/4 cup safflower oil
Coarse salt
1/3 cup mayonnaise
1 tablespoon Sriracha
Chopped scallion greens and lime wedges, for serving

Steps:

  • Cut tofu crosswise into eight 1/2-inch slabs, then cut each slab lengthwise in thirds. Arrange tofu in a single layer on a baking sheet lined with several layers of paper towels. Top with more paper towels and another baking sheet; weight with canned goods. Let tofu drain, about 30 minutes.
  • Dredge tofu in cornstarch, patting with fingers to help adhere. Heat oil in a large heavy-bottomed skillet over medium. Add tofu in two batches; cook until very light golden, turning gently to cook all sides, about 5 minutes. Transfer to plate lined with paper towels. Season immediately with salt.
  • Mix mayonnaise and Sriracha. Serve tofu with sauce, scallions, and lime wedges.

One 8-ounce package udon noodles
4 tablespoons roasted peanut oil, or 3 tablespoons sesame oil mixed with 1 tablespoon vegetable oil
One 12-ounce package firm tofu, cut into 12 pieces
Kosher salt and freshly ground pepper
One 11-ounce package Asian cooking greens or baby spinach
1 bunch scallions, thinly sliced diagonally
Large pinch of red pepper flakes
3 tablespoons soy sauce
Pinch of sugar

Steps:

  • Cook the udon noodles as the label directs. (Don't overcook or they will get mushy.) Drain, reserving about 1/3 cup of the cooking water.
  • Meanwhile, heat 2 tablespoons oil in a medium skillet over medium heat. Pat the tofu dry and season all over with salt and pepper. Add the tofu to the skillet and sear until golden brown, about 2 minutes per side. Set aside and keep warm.
  • Add 1 tablespoon oil and the greens to the skillet. Cook, tossing, until just wilted. Add the scallions, red pepper flakes, the remaining 1 tablespoon oil, the soy sauce and sugar. Add the reserved cooking water; heat to create a broth. Divide the noodles and greens among 4 bowls and top with the tofu.

The Best Pan-Fried Tofu image

I have had MANY people ask me how I pan fry my tofu and get it so crispy and firm. There are a few reasons why:-). First I either use a non-stick or cast iron pan, I don't overcrowd the surface, I drain my tofu REALLY well, use only extra firm Chinese style and MOST important of all, I leave it undisturbed while cooking and this allows the golden crust we all love on pan-fried tofu to develop! Please find detailed instructions below on how to make the best pan-fried tofu ever!

1 lb extra firm tofu (extra firm only)
1 1/2-3 tablespoons canola oil or 1 1/2-3 tablespoons peanut oil
salt
cayenne pepper

Steps:

  • Take your block of tofu and wrap it in several layers of paper towels.
  • Gently press the tofu with your hands or against the counter top to release the liquid. This will take about a minute.
  • Slice the tofu into pieces about 1/2 an inch thick.
  • Set tofu aside.
  • If you are using a non-stick pan heat it slightly on medium-high heat (about 30 seconds) before adding oil.
  • If you are using a cast iron pan, please heat for about 1 minute to 1 1/2 minutes on medium-high heat. Cast iron is very thick and you want the pan to be heated evenly before adding the tofu.
  • Add oil to heated pan.
  • Gently spread oil over the entire surface of the pan.
  • Set the tofu pieces in the pan, leaving ample room between them. They should sizzle when placed in the oil. Sprinkle the tops with salt and a little cayenne pepper.
  • Now, the MOST IMPORTANT step is -- LEAVE THEM ALONE for about 6 or 7 minutes. Just gently shake them to make sure they don't stick to the pan. Do NOT turn them or agitate them in any other way. When you see a golden crust beginning to creep its way up the sides of the slices, turn them and spice the other side. Add more oil if the pan seems too dry.
  • The second side will only take about 4 minutes to cook.
  • When they are evenly browned take them out of the pan and place them on paper towels to drain.
  • These are very simply seasoned and basic and can now be used any way you like. I like these with steamed broccoli and peanut sauce -- or in a sandwich with grilled peppers and mushrooms and aioli -- or just eaten with ketchup:-).

1 (1 pound) package chopped collards
½ cup water
1 tablespoon cider vinegar
½ teaspoon smoked paprika
¾ teaspoon salt, divided

½ teaspoon garlic powder
½ teaspoon onion powder

Steps:

  • Heat 1 tablespoon oil in a large pot over medium heat. Add collards and water; cover and cook, stirring occasionally, until soft and wilted, about 8 minutes. Remove from heat and stir in vinegar, paprika and 1/2 teaspoon salt. Cover to keep warm.
  • Meanwhile, cut tofu crosswise into 8 equal pieces. Blot with paper towels to remove excess water. Whisk buttermilk, garlic powder, onion powder and cayenne in a 7-by-11-inch baking dish. Add the tofu and turn to coat. Let stand, turning once, for 5 minutes.
  • Place panko on a plate. Dredge the tofu in the panko, coating both sides.
  • Heat 3 tablespoons oil in a large nonstick skillet over medium-high heat. Add the tofu and cook until brown and crispy on one side, 4 to 5 minutes. Turn the tofu over and drizzle in the remaining 2 tablespoons oil. Cook until browned on the other side, about 4 minutes more.
  • Sprinkle the tofu with the remaining 1/4 teaspoon salt and serve with the collards and hot honey, if desired.

This is my family's fried tofu recipe with minced meat. This recipe is unlikely a familiar dish for the non-Chinese, as you may not find this in the Chinese restaurants outside Asia.

300 g egg tofu (2 tubes)
90g minced meat
2 dry Shitake mushrooms
1 onion, about 100g, chopped
3 cloves garlic, minced
OIl for frying
1 tablespoon oyster sauce
1 teaspoon light soy sauce
1/4 teaspoon sugar
1/4 teaspoon sesame oil
A dash of ground white pepper
1/2 teaspoon cornflour
1/4 cup of mushroom water
Chopped scallion
Chopped red chili

Steps:

  • Chop the onion and mince the garlic.
  • Soak the dry shiitake mushroom until fully hydrated. Cut it into small pieces.
  • Cut the tube of egg tofu disc shape, about 1cm thick.
  • Deep fry the tofu until golden brown. Remove and drain on the kitchen paper towel.
  • Add 3 tablespoons of oil to the pan.
  • Saute the chopped onions and garlic until aromatic.
  • Add the minced meat and stir-fry until it turns color.
  • Add the mushroom and the seasoning. Cook over low heat until it starts to thicken.
  • Spoon the minced meat mixture on the tofu as the topping.
  • Sprinkle some chopped scallion and red chili on top to garnish.

2 lbs Extra firm tofu (cut into 12 pieces)
3 tbsp Salt
1/2 cup Pineapple juice
2 tbsp Tamari (or soy sauce)
10 cups Water (to completely cover the tofu)
2 tbsp Boxed egg replacer + 3/4 cups water (mixed well)
2 cups Unsweetened non-dairy milk
2 tbsp Apple cider vinegar
2 cups All purpose flour
2 tbsp Nutritional yeast
2 1/2 tsp Black Pepper
2 tsp Salt
1 tsp Sugar
3/4 tsp Paprika
1/2 tsp Rosemary
1/2 tsp Ground ginger
1/2 tsp Savoury
1/2 tsp Thyme
1/2 tsp Sage
1/2 tsp Dill
1/2 tsp Marjoram
1/2 tsp Onion powder
1/2 tsp Coriander
1 Pinch of cayenne pepper ( or more to taste)
1 Pinch of red pepper flakes (or more to taste)
Oil (enough for deep frying)

Steps:

  • Dice the tofu to your desired size.
  • In a large bowl, mix together the 3 tbsp of salt, 1/2 cup of pineapple juice, 2 tbsp of soy sauce, and 1 tsp of apple cider vinegar.Fill the rest of the bowl with water and let sit for 2-4 hours refrigerated.
  • Gather the buttermilk mixture and mix them in a large bowl. Place the marinated tofu in the mixture and let sit while you prepare the breading mix.*Note: At the last minute I realized that I was all out of Almond Milk and decided to try subbing for water. Worked great!
  • Gather up all of your seasonings along with the flour and nutritional yeast. Whisk together.*Note- I did not have the following seasonings: savoury, sage, dill, marjoram, or coriander. Still turned out great!
  • In a pan that's appropriate for frying, fill with enough oil to cover most of the tofu. Set the stove a bit under medium, but not too low. If you have a cooking thermometer, it should stay between 350 and 375. Once the oil is hot (should sizzle when splashed with water), begin frying the tofu by dipping each piece of tofu in the buttermilk mixture, then in the breading, then BACK in the buttermilk and AGAIN in the breading. Cook until golden brown and edges are crispy. Rotate as needed.
  • Once finished cooking, remove them from the grease and transfer to a plate covered with paper towels in order to absorb some of the grease. Enjoy! These are so good! You'll love them! Note: These pair very well with BBQ sauce!

  • to make marinade, mix tamari, garlic powder, and cayenne in a plate.
  • slice tofu into medallions, and place in marinade. let sit, turning occasionally, for a minimum of twenty minutes, and as long as you like,.
  • heat oil in pan over med-high heat.
  • carefully place marinated tofu in pan, and fry until golden, crispy edges form.
  • remove tofu. pour off excess oil if you feel there's too much left in the pan.
  • remove to plate to rest, and drizzle with remaining marinade for extra spice, if desired.
  • add garlic to pan and fry until it just begins to turn golden.
  • quickly add chard and salt. it might be a good idea to chop the stems a little smaller than the leaves, so the cooking time is similar.
  • cook until stems are tender, about 5-10 minutes
  • place tofu on plate and top with greens.

Two 14-ounce packages extra-firm tofu
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 pound green beans, trimmed
1/3 cup low-sodium soy sauce
2 tablespoons rice wine vinegar
2 tablespoons mirin
1 heaping tablespoon brown sugar
1 to 2 teaspoons chili-garlic paste or sambal (add amount to spice level preference)
1 teaspoon cornstarch
3 cloves garlic, smashed whole
2 scallions, thinly sliced

Steps:

  • Drain the tofu, wrap each block in several layers of paper towel and set on a large plate. Place a heavy pan on top (cast-iron works great for this) to press excess liquid from the tofu; allow to rest for 15 minutes.
  • Slice each tofu block into six 1/2-inch-thick slices. Drain the large plate of any excess liquid, wipe dry and place the tofu slices back on the plate. Put 1 tablespoon of the oil in a small bowl and use a pastry brush to coat both sides of the slices with the oil. Season both sides of the slices with 1 teaspoon salt and several grinds of pepper.
  • Preheat the air fryer to 400 degrees F.
  • Lay the tofu slices flat in the basket of the air fryer and cook, flipping halfway through, until lightly golden and crisp, about 20 minutes. Transfer to a plate.
  • Preheat the air fryer to 400 degrees F again.
  • Toss the green beans in a large bowl with the remaining 1 tablespoon oil, 1/2 teaspoon salt and several grinds of pepper. Cook the beans, tossing halfway through, until tender and blistered, about 10 minutes.
  • While the beans cook, combine the soy sauce, rice wine vinegar, mirin, brown sugar, chili-garlic paste, cornstarch, garlic and 3 tablespoons water in a small saucepan and stir until the cornstarch is dissolved. Cook over medium-low heat, stirring occasionally, until the sauce is slightly reduced, thickened and shiny, 5 to 7 minutes.
  • Transfer the beans to a large serving plate and shingle the tofu slices on top. Drizzle the sauce over the tofu and beans and garnish with the scallions.
