EASY LEFTOVER FRIED RICE
Just love Fried Rice so I tried to create from a restaurant that we go to often. In a pinch you can use canned peas and carrots (drained). You could also try adding some diced ham and green onions.

Steps:
- On medium high heat, heat the oil in a large skillet or wok.
- Add the peas/carrots, onion and garlic.
- Cook until tender about 1 to 2 minutes.
- Lower the heat to medium low and push the mixture off to one side, then pour your eggs on the other side of skillet and cook until scrambled.
- Now add the rice and soy sauce and blend all together well.
- Stir fry until thoroughly heated.

DAY BEFORE PAY DAY FRIED RICE
This fried rice uses leftover vegetables and meat--a great way to use leftovers for a dish that can be ready in about 30 minutes. It tastes so good that my son and husband fought over the last helping!

Steps:
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Pour in the eggs; cook and stir until scrambled and firm. Remove from wok, and set aside.
- Put remaining 2 tablespoons of oil in the wok and turn heat up to high. Stir in rice until each grain is coated with oil. Stir in chicken, celery, carrot, peas and green onions. Reduce heat to medium, cover and allow to steam for 5 minutes. Stir in scrambled eggs and soy sauce, and cook until eggs are heated through.

Steps:
- whisk the egg.
- set stove on medium heat and place a frying pan on the stove (a deep frying pan is highly recommended).
- pour the rice in the pan and stir
- add in the egg and stir more let the rice cook for 1 mins.
- add the chopped celery, carrots and onion and stir. let it cook for 2 mins (cover it with a lid if u have one).
- add in the oyster sauce and soy sauce then stir again.
- stir every 2 mins until everything is cooked.
