Steps:
- Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
- In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
- Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.

SKILLET RED POTATOES RECIPE
This easy Skillet Potatoes recipe is one of my favorites because it comes together so quickly! My kids love it with a little bit of cheese on top . . . but these red potatoes are delicious and flavorful without it.

SKILLET RED POTATOES & ONIONS
Skillet potatoes and onions are braised and then roasted right in a cast iron pan. Delicious bits of crispy edges, golden brown onions and bits of bacon give this potato side dish an edge that is versatile as a side dish. Use baby red potatoes for the most iconic flavor!

Steps:
- Slice raw red potatoes (leaving skin on) in half. Be sure to cut them right down the middle so you do not end up with one size significantly larger than the other side. This helps keep potatoes cooking even.
- Dice half a white onion and cut 4 pieces of bacon into 1 inch strips (kitchen scissors work well for this).
- Place halved red potatoes, cut side down, in a cast iron skillet .
- Add 2 cups of cold water, diced white onion, cut bacon slices and a dash of salt and pepper to the same pan.
- Heat skillet over medium-high heat until water is boiling. Lower heat to medium and place lid on pan.
- Potatoes will continue to simmer and get tender, which takes about 15 minutes.
- Remove lid and simmer potatoes and onions until water evaporates out of the pan. Depending on the size of the pan and potatoes, this may take about 10 minutes. If for some reason all the water doesn't evaporate but the potatoes are totally done, I have occasionally put the lid on the pan and using safety gloves, carefully draining excess water out of pan into the sink before placing back to stove top.
- Turn skillet on medium-high (after water is gone) and let potatoes and bacon continue to brown in skillet. Please note that the potatoes will not fully brown but leave small crispy brown spots as they heat up. It is fine to scrap bottom of pan for extra char flavor and flip potatoes a few times.
- Once potatoes and onions are ready, sprinkle on chopped green onion for some additional flavor and color.
- Other herbs that go great with skillet potatoes are fresh thyme, dill weed, and fresh rosemary. Additionally minced garlic and garlic salt can be delicious additions.
- Serve while hot!

SPICED FRIED POTATOES
Almost utterly changed from a recipe in "Leaves from the Inn of the Last Home". The recipe originated in the "Chronicles" trilogy, by M. Weis and T. Hickman. The original recipe made by fans called for only cayenne. A recent book mentioned a garlic scent. This version is GOOD. I loved it. Everyone who entered the house loved the smell. I used about 2 tbsp jar garlic, and estimated amounts on the other spices. This does take a good while to fry, so if you use it in a meal, make it first. In my experience, with a 1.5" layer of potatoes, it takes a bit more than half an hour to fry them. It takes much longer to fry them if you don't boil first. I also tend to use quite a bit of pepper, usually a mix of cayenne and habanero. The servings depend on how good they smell. I can eat the whole recipe with no problem, though they are an excellent side dish. Please don't forget to adjust the spices to your taste. Especially the garlic.

CRISP SAUTéED RED POTATOES RECIPE
I love new baby red potatoes. They're simple to prepare and you don't need much to make them delicious. You don't even need to bother with peeling the skin. Actually the thin skins are delicious; crisp with a sprinkling of course salt. Mmmm.

Steps:
- Heat a large skillet over medium heat and add 1 Tbsp butter and 2 Tbsp olive oil. Once butter is melted and hot, arrange potatoes in the skillet, cut-side-down in one layer. Cook uncovered and undisturbed 8-10 minutes or until golden brown crust forms on the bottoms.
- Turn potatoes then cover and cook another 5 minutes or until golden brown on the second side, you'll hear it spit and splatter under the lid; just be careful when you first lift of the lid as juices from the lid can dribble into the pan and splatter. Keep the wee ones away from the stove. In hind sight, a dutch oven with taller walls might have been a better choice to cook these.
- Turn the potatoes again, cover and cook another 5 minutes or until you can easily pierce potatoes with a knife. Remove from heat and sprinkle with salt & pepper (I used about 3/4 tsp salt and 1/8 tsp pepper), toss with 2 Tbsp chives. Sprinkle with more fresh chives just before serving and enjoy.

Steps:
- In the Instant Pot: Put about a cup of water in the bottom of the pot. Set a wire rack inside and place red potatoes on the rack. Close and seal the lid, then cook on STEAM for 5 minutes.
- In the oven: Place red potatoes directly on the oven rack. Turn oven on to 350 and bake for 30-40 minutes. Test with a fork; remove potatoes from the oven when a fork can pierce the potatoes somewhat easily.
- Set cast iron frying pan on high heat to warm.
- Cut potatoes into 1/2 - 3/4 inch cubes.
- Pour oil into frying pan, allowing it to heat up for a minute or so.
- Slide cubed potatoes into the hot frying pan. Use caution as the oil may splatter.
- Shake frying pan back and forth so the potatoes slide in the oil. Repeat several times. Sprinkle with salt and pepper.
- Allow potatoes to cook for about 10 minutes without disturbing them, then use a spatula to flip them. Cook for another 10 minutes, or until red potatoes are fried to a crispiness you like.
