For mushroom filling
1/4 cup minced white onion
2 tablespoons unsalted butter
1/2 lb mushrooms, trimmed
2 teaspoons chopped freshepazote leaves, or 1/2teaspoon crumbled dried
1/4 teaspoon salt, or to taste
For tortilla masa
2 cups masa harina ("masa mix") such as Maseca or Quaker
1/2 teaspoon salt
1 1/3 cups warm water
For cheese and squash blossom filling
5 oz queso fresco (Mexican fresh cheese), ricotta salata, or feta, crumbled (1 cup)
1/4 cup Mexican crema or crème fraîche (omit if using ricotta salata)
5 squash blossoms, petals torn into 20 pieces and remainder discarded
For frying
About 3 cups vegetable oil
Accompaniment: guacamole
Special Equipment
a tortilla press or a rolling pin; a deep-fat thermometer

Steps:

  • Make mushroom filling:
  • Cook onion in butter in a medium nonstick skillet over moderately low heat, stirring, until softened.
  • Pulse mushrooms in a food processor until coarsely chopped and add to onion along with epazote and salt.
  • Cook over moderate heat, stirring, until mushrooms are softened and any liquid is evaporated, about 7 minutes. Remove from heat and cool filling completely.
  • Make masa and form quesadillas:
  • Stir together masa harina, salt, and warm water in a large bowl with a wooden spoon until it forms a dough. Knead dough in bowl with heel of your hand 1 to 2 minutes.
  • Pinch off small pieces of dough and roll into about 40 (scant 1-inch) balls. Transfer balls as formed to a plastic-wrap-lined tray and cover with more plastic wrap.
  • Cut 2 (5-inch) squares from a small plastic bag and use 1 to line lower half of tortilla press. Put a ball of dough in tortilla press and top with second square of plastic. Close tortilla press, pushing gently on lever to flatten dough to a 2 1/2- to 3-inch round. If press doesn't flatten evenly, rotate tortilla 180 degrees and gently flatten again. (Alternatively, use rolling pin to flatten dough between squares of plastic.)
  • Remove top square of plastic and put 1 teaspoon mushroom filling, or about 1 teaspoon crumbled queso fresco with 1/2 teaspoon crema and a piece of squash blossom, in center of round.
  • Fold round, still in plastic, over filling to form a half-moon and pinch edges together to seal. Gently peel off plastic, then transfer quesadilla to another plastic-wrap-lined tray and cover with a second sheet of plastic wrap. Repeat with remaining dough, making about 20 quesadillas of each filling.
  • Fry quesadillas:
  • Heat 1 inch of oil in a deep 10-inch heavy skillet over moderately high heat until deep-fat thermometer registers 375°F, then deep-fry quesadillas in batches of 6 to 8, turning once or twice, until golden, about 4 minutes. Transfer with a slotted spoon to paper towels to drain and return oil to 375°F before adding next batch.
  • Serve quesadillas immediately.

¼ cup chopped onion
½ red bell pepper, finely chopped
¼ cup frozen corn kernels, thawed
1 serrano chile pepper, seeded and diced
1 clove garlic, minced
1 (15 ounce) can HORMEL® Mary Kitchen® Roast Beef Hash
1 canned chipotle chile in adobo sauce, minced, or more to taste
3 tablespoons vegetable oil for frying, or as needed
8 corn tortillas
1 cup shredded mozzarella cheese
¼ cup chopped onion
¼ cup chopped fresh cilantro
1 cup salsa
½ cup sour cream

Steps:

  • Heat a skillet over medium heat. Add olive oil. Cook and stir onions and red bell pepper until starting to soften, about 3 minutes. Add corn and serrano pepper; cook 2 to 3 minutes. Add garlic and cook 1 minute more.
  • Reduce heat to medium-low. Add HORMEL® MARY KITCHEN® Roast Beef Hash and chipotle pepper. Cook until the hash is heated and well mixed with the rest of the ingredients, about 2 or 3 minutes.
  • Heat tortillas in a skillet, turning once, until they are soft and can be folded without breaking.
  • Heat vegetable oil in a skillet over medium heat.
  • Spoon 2 tablespoons of the hash filling and 1 1/2 tablespoons of mozzarella cheese on each tortilla. Fold tortillas in half. Fry in vegetable oil until quesadillas are golden and crispy, about 3 minutes on each side. Transfer to a paper towel-lined plate.
  • Mix cilantro and onions together in a small bowl.
  • Serve the quesadillas with salsa, sour cream, onions, and cilantro. Enjoy!

This is SUCH a yummy recipe. It was passed on to my mother-in-law from a Columbian immigrant family. It's easy, but not necessarily quick...but SO rewarding. I usually make a double batch at my house, they make great leftovers too!

4 -6 chicken breasts, diced
2 bell peppers, diced
1 large onion, diced
1 (16 ounce) can black beans, drained and rinsed
3 tablespoons garlic and herb seasoning
1 teaspoon sea salt
1 bunch fresh cilantro, chopped
12 -15 flour tortillas
3 cups mozzarella cheese, grated
olive oil (as needed)
season salt (to taste)

Steps:

  • Season chicken with 2 tablespoons of garlic and herb seasoning and salt.
  • Cook chicken in large skillet (you may choose to use a bit of olive oil).
  • Set chicken aside (you could make this ahead and refrigerate).
  • In the same skillet, cook onions until tender.
  • Add peppers and cook for additional 3 minutes.
  • Add black beans, remaining garlic plus and fresh cilantro and mix with the chicken in a large mixing bowl.
  • Assembling the quessadillas:.
  • Heat a large, flat-bottom frying pan to medium high heat.
  • Place a small amount of olive oil in the pan and spread it around and shake desired amount of season salt into the frying pan.
  • Place one tortilla on the bottom of the pan, and add a large spoonful of chicken mixture onto one half of the tortilla.
  • Spread the mixture so that it is flat and evenly distributed, and then top with a handful of cheese.
  • Fold the tortilla in half.
  • Place another tortilla on the other half of the pan (allowing half of it to lay on top of the first tortilla) and fill with chicken mixture and cheese and fold the tortilla in half.
  • After a short while, you will need to flip the quesadillas carefully (hint, I place one on top of the other to help this process).
  • If they are getting too dark, too fast, you will need to turn down the heat.
  • Continue this process until all of your filling/tortillas are used up.
  • You may want to put finished quesadillas in the oven to keep warm while you work.
  • Serve with salsa, sour cream and guacamole.

Nice quick lunch for yourself or for you and your honey. Recipe can be cut in half to make for one. We like to add 1 or 2 of the variations, there's always something left over in the fridge to be used up, use your imagination. (the oil can be replaced with veggie cooking spray, it works just as well) Our standard is deli chicken slices, a mix of cheddar and parmesan, green pepper sticks, and chopped green onions and fresh cilantro, served with hot salsa. Yummy!!!

  • Cook until cheese melts.
  • Remove tortilla to plate.
  • top with guacamole or salsa if desired.
  • Any one or more of the variations ingredients can be added.
  • Fold in half, cut into quarters and serve hot.
