These Maduros (Sweet Plantains) are a staple Puerto Rican side dish recipe. They're perfectly sweet, caramelized along the outside and deliciously warm on the inside!

2 overly ripe (black) plantains, peeled and sliced into 1-inch pieces
4 tablespoons butter
**Salt, optional garnish

Steps:

  • In a non-stick skillet over medium heat, melt butter.
  • Add plantains in a single layer (you will have to do multiple batches). Cook plantains on each side, for about 2-3 minutes, or until they reach a caramelized brown color.
  • Transfer to a plate covered with newspaper (or paper towels) and allow to drain for a minute or two. Then serve!

1 large yellow plantain
2 tablespoons canola oil
2 tablespoons butter
1 teaspoon cinnamon
1 teaspoon sugar
Hershey's chocolate syrup
Prepared whipped sweet cream

Steps:

  • Peel plantain and cut on bias into 1/2 inch pieces. In a skillet over medium heat combine oil and butter. Fry plantains until brown on one side (about 4 minutes) and turn to brown other side (3 to 4 minutes). Remove from pan to drain on paper towel. Sprinkle with cinnamon and sugar. Transfer to serving plate. Drizzle with chocolate syrup. Garnish with prepared whipped cream and serve immediately.

Tender in the middle and crisp at the edges, maduros, or sweet fried plantains, are served as a side dish throughout the Caribbean and Latin America. Plantains change color as they ripen: They are firm when green and unripe, then soften as they turn yellow, and eventually, black. Like bananas, plantains develop more sugar as time passes. For the sweetest maduros, use blackened plantains - they have the most sugar, and will yield a more caramelized result. If you can only find yellow ones at the store, buy them in advance and be prepared to wait over a week for them to fully ripen. They're worth it.

2 very ripe, blackened plantains (about 6 ounces each)
Neutral oil, such as vegetable or canola oil, for frying

Steps:

  • Use a paring knife to cut a slit along the length of the plantains, carefully avoiding cutting into the flesh. Remove peels and discard. Slice plantains at an angle crosswise into 1/2-inch-thick pieces (about 12 pieces per plantain).
  • In a large skillet, heat about 1/8 inch vegetable oil over medium-high. When the oil shimmers, add half the sliced plantains and fry until golden brown, turning once, 2 to 3 minutes per side. The plantains should be caramelized and slightly crisp at the edges but still tender in the middle.
  • Using a slotted spoon, transfer maduros to a paper towel-lined plate to drain. Repeat with remaining sliced plantains. Serve immediately.

The inspiration for the whipped cream came from Bon Appetit December 2002 issue. I've changed the measurements to my own taste. This whipped cream is delicious on anything with apples such as pie, cobbler and apple bread (see recipe 76946 for a great combo). Also would be nice on top of hot chocolate or coffee!

2 cups heavy cream
1/4 cup sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon vanilla extract

Steps:

  • Pour heavy cream into chilled glass bowl (I use a small but deep glass bowl).
  • Beat on high speed.
  • Slowly add sugar, cinnamon and vanilla.
  • Continue beating until stiff peaks form.
  • Tip: When making whipped cream I dampen a paper towel with vinegar and wipe the inside of a glass bowl with it.
  • Continue to wipe until dry and place inside freezer with beaters or whisk.
  • Leave in freezer for 10 minutes to chill then use to make whipped cream.

2 firm-ripe plantains (about 1 pound)
Kosher salt
1 cup sugar
1 1/2 teaspoons ground cinnamon
Rum Whipped Cream, recipe follows, or ice cream
3/4 cups heavy cream, chilled
1 tablespoon dark rum

Steps:

  • Heat about 1-inch of oil in heavy-bottomed saucepan over medium heat until a deep-fry thermometer inserted in the oil registers 340 degrees F. Line a large plate with paper towels.
  • Peel the plantains and discard the skins. Slice into 1/4-inch thick pieces. Fry the plantains in oil, turning occasionally, until a golden brown color, about 2 to 4 minutes. The longer the plantains fry the sweeter they are. Remove with a slotted spoon and drain on paper towels. Sprinkle the plantains with a little salt.
  • Put the sugar and cinnamon in a brown bag, drop the warm plantains into the bag, and shake to coat evenly. Serve with rum whipped cream or ice cream, if desired.
  • Whip the cream just until soft peaks form. Add the rum and whip again, taking care not to over whip your cream. Serve now or refrigerate until ready to serve.

6 ripe plantains
Glaze, recipe follows
Cinnamon ice cream, recipe follows
8 ounces butter
1 pound brown sugar
1 tablespoon ground cinnamon
3 ounces dark rum
3 cups heavy cream
1 cup whole milk
5 cinnamon sticks
4 ounces brown sugar
1 vanilla bean, split lengthwise
1 cup sugar
7 egg yolks
1/2 teaspoon ground cinnamon

Steps:

  • Pre-heat a grill to medium heat.
  • Place ripe plantains, with skin on, on grill for 15 minutes, or until skin is dark brown. Remove from grill. Slice plantains and peel off skin. Coat each with glaze and return to grill. Grill for 2 more minutes, or until plantains are a golden brown.
  • Remove plantains from grill. Serve on a plate with cinnamon ice cream.
  • In a medium saucepan, melt butter over medium heat. Add brown sugar and cinnamon and stir until sugar dissolves. Add rum and cook for 2 minutes. Remove from heat.
  • Combine cream, milk, cinnamon sticks, and brown sugar in a large saucepan over medium heat. Scrape seeds from vanilla bean into the pan and then add whole bean. Bring to a boil, and then remove from heat and let steep for 5 minutes.
  • In a medium mixing bowl, whisk sugar and yolks together until pale yellow. Gradually whisk in about 1/3 of the hot cream mixture to temper the eggs. Return the mixture to the saucepan. Stir over medium-low heat until custard thickens, about 4 minutes (do not boil). Strain into a large bowl. Whisk in ground cinnamon. Chill until cold, about 3 hours.
  • Transfer cold custard to an ice cream maker and process according to the manufacturer's instructions.
