1 (8 ounce) bone-in fully cooked ham steak
5 tablespoons butter, cubed
5 tablespoons brown sugar

Steps:

  • Cook ham steak in a large skillet over medium heat until browned, 3 to 4 minutes per side. Drain and remove ham.
  • Heat butter in the same skillet until melted; stir in brown sugar. Return ham to skillet and cook over medium-low heat until heated through and brown sugar is dissolved, turning steak often, about 10 minutes.

1 tablespoon butter
1 2/3 cups water
1 cup long grain rice
3 tablespoons oil, divided
2 large eggs
4 ounces cubed ham, cooked
1 small chopped onion
1 cup frozen green pea, thawed under running water
1 tablespoon soy sauce
1 tablespoon oriental sesame oil

Steps:

  • In med saucean bring butter and water to a boil over high heat.
  • Stir in rice.
  • Reduce heat to med low and partially cover the pan, simmering until most of the liquid is absorbed, about 5 minutes.
  • Stir the rice with a fork.
  • Reduce heat to low and cover and continue cooking until tender, about 15 minutes.
  • In a large skillet heat 1 TBS oil over med high, coating the pan.
  • In a small bowl beat eggs.
  • Add the eggs to the skillet and fry until set, turning once.
  • Transfer to plate and cut into 1/2 inch by 2 inch strips, then set aside.
  • In the same skillet heat another TBS oil.
  • Add ham and cook until lightly browned.
  • Transfer ham to eggs and set aside.
  • In same skillet, add final TBS oil.
  • Add onion and stir fry for 1 minute.
  • Stir in peas, cover and cook til tender 2-3 minutes.
  • Gently stir in the rice, eggs, ham, soy sauce and sesame oil.
  • Cook til heated through.
  • Serve immediately.

7 -10 lbs ham (bone in skin on)
marinade (optional,anything injectable)
peanut oil (for your deep fryer,aprox.5 gallons, less for a larger ham)

Steps:

  • Thaw ham completely and pat dry.
  • (When deep frying moisture on the surface will cause a lot of oil popping and splattering, be careful) Marinade (if using) Inject whatever marinade you want to use into several place throughout the ham (I recommend 10-15 spots).
  • Place the ham in the steamer basket that comes with most turkey deep fryers and CAREFULLY and SLOWLY lower the ham into the hot oil (350-375 degrees).
  • There is a lot of water in the ham!
  • Since I couldn't put it in otherwise you must cook the ham about 3 1/2 to 4 minutes per pound depending on the size of the ham and how much it cools down the oil.
  • Obviously a smaller ham will take less time if the oil is hotter and a bigger ham will take longer even with the oil hot.
  • If when you start the oil cools down don't worry just watch the temp and adjust your cooking time.
  • Also for a bigger ham you would want to use less oil in the deep fryer so it doesn't overflow when the ham is lowered inches.

  • Use a large skillet; pour enough oil to cover the bottom of the skillet.
  • Heat oil over medium heat.
  • On a plate, place enough flour to cover the plate.
  • Then rolled your ham in the flour until well coated.
  • When oil is starting to sizzle place ham in the skillet.
  • Cook until golden brown on both sides.
  • Placed on paper towels to drained the excess oil off.

3 tablespoons olive oil, divided
4 large eggs, lightly beaten
1/2 cup chopped onion
1 cup chopped celery
4 cups cooked long grain rice
3 cups cubed fully cooked ham (3/4-inch cubes)
1 package (10 ounces) frozen peas
1 package (10 ounces) frozen corn
2 tablespoons soy sauce

Steps:

  • In a large skillet over medium-high heat, heat 1 tablespoon of oil. Pour eggs into skillet. Add eggs set, lift edges, letting uncooked portion flow underneath. Remove eggs to a plate; set aside. In the same skillet, saute onion and celery in remaining oil until crisp-tender. Reduce heat. Add rice and ham; heat through. Stir in peas and corn; heat through. I was in the nursing profession many, many, years ago. When the nursing staff was allowed to take a lunch break, I would meander down to our hospital cafeteria and order up one of these sandwiches. Of course, the cafeteria chefs had a special "seasoned grill" that punctuated years and years of cooking delectable delights, the way it used to be cooked, without the use of microwaves, and or already prepared, "boiled - in - the - bag" foods that came from "Sysco". These amazing chefs even had special spatulas that you could easily imagine the pounding and flipping going on, being delicately tossed in the air, as somehow this made the food taste even more spectacular. After paying for the sandwich, I would sit down, and carefully open the wrapper, and inhale the aroma of freshly cut ham, the sweetest, most soft bread that I have ever known, and the mixture of ham juice and a bit of butter that warmed the ham prior to marrying with the bread. Needless to say, I always looked forward to this break, and on the occasion of visiting this hospital even today, I reflect back on those days of good ol' cooking as it used to be, and the delights these very special chefs produced. To this day I still make these at home, occasionally for lunch or a quick dinner. After the cafeteria chefs put this yummy sandwich together they would wrap it in (1) wax paper (2) then aluminum foil. By the time you got to your table, the tastes had developed and probably steamed in the combination of wax paper and foil. Either way, I guess these magical chefs will never be forgotten as this made my day complete, every single day. I hope you enjoy this sandwich as much as I. Try the wax paper and foil too, [if you have time].....you will see what I'm talking about.

4 slices bread (suggested country white-any will do)
2 ounces deli ham (sliced in slivers)
1 small onion, sliced very thinly
1 tablespoon mayonnaise (can be reduced fat)
1/2 teaspoon butter (or margarine) (optional)

Steps:

  • Spray skillet with cooking spray. If using optional butter, melt this in pan until completely melted.
  • Toss in onion and cook until translucent. (about 2/3 minutes).
  • Add ham on top of onion, and continue to warm on medium heat for 3/4 minutes.
  • Flip over ham/onion and continue to warm for 2 more minutes.
  • Spread bread with mayonnaise add warmed ham/onion mixture.
  • Press down tops of bread, and kinda "smash" together.
  • Cut in half and devour.
