The fried guacamole that Angelo Sosa serves at Abajo, his tequila bar, reminded me of the fried ice cream served at some Chinese restaurants. It's creamy, crunchy and cool on the inside. It's easier than you might think and it makes for a nice tidbit to enjoy with a drink, or as a first course with a salad. You can prepare the guacamole and freeze it early in the day, leaving only the frying for the last minute. The fritters can also be kept warm in a 150 degree oven for at least 30 minutes.

2 avocadoes, pitted and peeled
1 tablespoon minced, seeded jalapeño
1 tablespoon minced red onion
1 tablespoon minced cilantro
Juice of 1 lime
Salt
3/4 cup all-purpose flour
1/2 cup corn flour
Pinch baking powder
12 ounces seltzer
Vegetable oil for frying

Steps:

  • Mash one avocado until smooth. Dice the other and mix both together. Add jalapeño, onion, cilantro, lime juice and salt to taste. Form mixture into 12 to 16 thick oval patties. Place on a foil-lined baking sheet and freeze at least 1 hour.
  • Place 1/4 cup of the flour in a small bowl and lightly dust the frozen guacamole patties with it. In another bowl, mix remaining flour with corn flour, baking powder and a teaspoon of salt. Stir in seltzer.
  • Heat oil to a depth of 1/2 inch in a large skillet. Coat floured guacamole patties in batter and fry on medium-high until golden brown, about 3 minutes. Turn to fry second side. Drain on absorbent paper and serve.

Fried Avocado Bites image

Creamy on the inside and crispy on the outside, these tempura-fried avocado bites are the perfect appetizer for your next get-together.

Three 8-ounce avocados, halved and pitted
Fine salt
2 tablespoons fresh lime juice
2 tablespoons sugar
1/2 teaspoon Asian chili garlic paste
Vegetable or canola oil, for frying (about 8 cups)
1 cup seltzer
3/4 cup all-purpose flour
1 large egg
1/4 cup loosely packed fresh cilantro leaves, for garnish
1 tablespoon Asian fish sauce

Steps:

  • Special equipment: a deep-fry thermometer
  • Line a small rimmed baking sheet with parchment. Score the flesh of each avocado half to the skin with 2 lengthwise and 3 crosswise cuts, to make 12 chunks per half. Ease the chunks out of the skins with a large spoon, and spread them in an even layer on the prepared baking sheet. Sprinkle with 1/2 teaspoon salt, and freeze for 1 hour.
  • Meanwhile, make the dipping sauce: Whisk together the lime juice, sugar, fish sauce and chili garlic paste in a small bowl until the sugar is dissolved; set aside.
  • Fill a large, heavy-bottomed pot or a Dutch oven with about 1 1/2 inches of oil. Attach a deep-fry thermometer, and bring to 360 degrees F over medium heat.
  • Whisk together the seltzer, flour, egg and 1/4 teaspoon salt in a medium bowl until smooth. Submerge half the avocado chunks in the batter. Scoop them out with a slotted spoon, letting excess batter drip back into the bowl, and add them to the hot oil, being careful not to splash. Fry the avocado chunks, turning frequently, until deeply golden brown, about 4 minutes. Transfer them to a paper towel-lined plate, and sprinkle right away with some salt. Bring the oil temperature back up to 360 degrees F. Repeat with the remaining avocado chunks. Transfer all the chunks to a serving plate, and garnish with cilantro leaves. Serve immediately with the dipping sauce.

These little guacamole bites are over the top addictive! They are so unique as well. A great addition to any appetizer platter. Serve with a salsa based dip for a perfect balance of flavour. :-) These do require some prep time, but are well worth the effort for these once in awhile, indulgent, treats. **note** prep time does NOT include freezing time

3 medium avocados
1/3 cup red onion, minced
1/4 cup pickled jalapeno pepper, finely chopped
3 tablespoons cilantro, minced
1 teaspoon lime zest, grated
2 teaspoons lime juice
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 large garlic cloves, minced
3 large eggs
3/4 cup all-purpose flour
2 cups dry breadcrumbs, unseasoned
vegetable oil, as needed for frying
sea salt, to taste

Steps:

  • Peel and pit avocados. In a bowl, coarsely mash avocados; fold in onion, jalapenos, cilantro, lime zest and juice, salt, pepper, and garlic.
  • Line an 8-inch square baking pan with wax or parchment paper. Spoon avocado mixture into pan; spread into an even layer. Place another sheet of parchment on top; freeze until solid, 6 to 8 hours.
  • At least 30 mins before serving, in a small shallow bowl, beat eggs with 3 tablespoons water.
  • Remove avocado mixture to a cutting board; cut into small cubes. Dip each cube in flour, then egg wash, breadcrumbs, and again in wash and breadcrumbs. Arrange in a large baking pan; cover and return to the freezer until firm, 20 to 30 minutes. (You can leave these overnight in the freezer if you want to have the prep work done ahead of time.).
  • When you are ready to cook these, in a deep skillet or pot, heat oil to 350°F Fry frozen guacamole bites in batches until golden; drain on paper towels.
  • Serve immediately sprinkled, if desired, with kosher salt. :-).

Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.

2 cups vegetable oil (for frying)
1 cup all-purpose flour
2 tablespoons salt-free herb seasoning blend
1 pinch ground cumin
1 avocado - peeled, pitted and sliced
1 egg, beaten

Steps:

  • Heat oil in a large heavy skillet or deep-fryer to 365 degrees F (180 degrees C).
  • In a small bowl, mix together the flour, seasoning blend and cumin. Place the beaten egg in a shallow dish. Dip avocado slices in beaten egg, and then in the flour mixture. You may repeat the dipping process if you prefer a thicker batter.
  • Fry the coated avocado slices in the hot oil for 3 to 5 minutes, until golden brown, turning once. Drain on paper towels, and serve hot.
