KAREN'S FRIED GREEN TOMATOES
This recipe comes from my mom and they are, hands down, the best fried green tomatoes. She makes these every summer with fresh tomatoes from her garden. My sister begs her to make them for her as soon as she sees tomatoes growing big and green on the vines. While most recipes call for breadcrumbs and oil, this one calls for flour and has you fry the tomatoes in butter, which helps give these an incredible flavor.

Steps:
- Season each tomato slice with sugar, salt, and pepper.
- Beat milk and eggs together in a bowl. Pour flour into another bowl.
- Gently press each tomato slice into flour to coat; shake off the excess flour. Dip tomato slices into egg mixture, then press again into flour. Place breaded tomato slices onto a plate while breading the rest; do not stack.
- Melt 1/2 cup butter in a large pan over medium heat. Place tomato slices in melted butter and cook until golden brown on one side, 5 to 7 minutes. Flip and cook on the other side until golden brown. Add more butter as need while frying.

- In a mixing bowl, combine the flour, cornmeal, salt, pepper, and buttermilk. Use a fork to mix the ingredients into a pancake-like batter. Use more buttermilk to thin the batter, if needed.
- Heat 2 inches of oil in a skillet until hot enough to fry. Dip tomato slices in batter, letting the excess batter drip back into the bowl. Put the dipped slices immediately into the frying pan. The oil should sizzle strongly but not pop when the tomatoes hit the oil-- if the oil pops or splatters, it's too hot. Let it cool down a bit before proceeding.
- Fry the tomato slices in batches of 4 or 5 at a time (don't crowd the pan) for 2-3 minutes per side, turning carefully with tongs when the coating turns golden brown.Transfer to a colander or wire cooling rack to drain. To keep the tomatoes from getting soggy before they're served, Fannie suggest standing them up like wheels in the serving dish instead of stacking them.
- To make the sauce, whisk together the mayonnaise, ketchup, and cayenne in a bowl. Taste and season more, if needed. Serve sauce over the fresh fried green tomatoes.Fried green tomatoes are best eaten fresh out of the frying pan, they will become soggy fast if you don't enjoy them within a few minutes of frying.

SOUTHERN FRIED GREEN TOMATOES RECIPE

- In a large shallow bowl combine flour and spices. Whisk or stir to combine and set aside.
- .Use a mandoline slicer or a sharp knife and cutting board to slice each tomato into 1/4 inch pieces (no larger). Lay the sliced green tomatoes out on a large cookie sheet or plate and sprinkle with salt and pepper.
- Next dredge each slice in the flour mixture until coated shaking off the excess. Return to the cookie sheet and let sit for 5 minutes. After 5 minutes the tomatoes will begin to soak up some of the flour mixture. Once this happens dredge the tomatoes through the flour mixture a second time shaking off the excess.
- Add vegetable oil to a large deep skillet and heat over medium heat. You want the oil about an inch deep. Once the oil is shimmering, add your green tomatoes in and fry for 3-5 minutes per side until they are brown and crispy.
- Once golden brown remove from the oil and place on a paper towel lined plate and continue to fry in batches until all the tomatoes are fried. Serve warm with hot mayo sauce.

- Slice tomatoes 1/2 inch thick. Discard the ends.
- Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.

- For the fried green tomatoes: Pour the vegetable oil into a Dutch oven or heavy-bottomed pot and attach a deep-frying thermometer. Heat the oil over medium heat to 350 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- Set up 3 low-sided dishes to make a breading station: To the first dish, add the flour, salt and black pepper and stir to combine. In the second dish, beat the buttermilk with the eggs. In the third dish, stir together the cornmeal and panko.
- Using one hand, dredge both sides of the tomato slices in the seasoned flour, shaking each piece to remove any excess. Next, using the other hand, dip the tomato slices into the egg mixture, allowing it to drip before moving onto the third dish. Using your first hand, coat the tomato slices in the breadcrumb mixture evenly on both sides.
- Working in batches, carefully place the breaded tomatoes into the hot oil. Fry until golden brown and crispy, about 30 seconds per side. Transfer to the cooling rack and sprinkle each slice generously with more salt.
- For the dipping sauce: Put the mayonnaise in a bowl, add the hot peppers and pepper juice, paprika, sugar and salt and stir to combine. Serve the fried tomatoes immediately with the dipping sauce on the side.
FRIED GREEN TOMATOES - SWEET
Summers best bounty, even your greatest skeptic will like these sweet fried green tomatoes. My husband doesn't like fried green tomatoes, but he does like these. What else are ya gonna do, with all those green tomatoes at summers end?

- 1. Pour milk into medium sized bowl. Place Miracle Maize into a shallow bowl (I use a paper plate.)
- 2. Remove stem and core from tomatoes, wash and pat dry. Slice tomatoes into medium sized slices and place in bowl of milk.
- 3. In skillet, begin to heat oil over med-high heat. (you want enough oil to come half way up the side of the tomato slices)
- 4. Remove tomato slices from milk and dredge both sides into Miracle Maize, then dip back into milk and then back into Miracle Maize.
- 5. Place breaded tomato slices into hot oil and fry until browned, turn and fry second side until golden. Remove from skillet and drain on paper towel. Repeat for any remaining tomato slices. Keep eye on tomato slices, they will burn easily as they fry. Serve hot with your favorite condiment. The hubs likes mustard on his. When I was a kid, we ate them on bread with mustard. Yummy!
BUTTERMILK FRIED GREEN TOMATOES
I did a search and came up with many fried green tomato recipes on here, but this one is different in that it uses buttermilk, and no cornmeal. Culinary lore says that ripe red tomatoes felt so much like human skin that eating them was considered improperly erotic. In any case, there was something suspect about this New World member of the nightshade family that the Spaniards first brought back to Europe. One solution to it's naughty nature was to eat green tomatoes, which are firm and not nearly as sweet as ripe ones. This version is delicious. Cook times are guestimates.

- In a bowl, mix together the eggs and buttermilk.
- Whisk in the 1 TBS flour, 1/2 the salt and 1/2 the pepper.
- Soak the tomatoes in this liquid for about half an hour.
- Whisk together the remaining flour, salt and pepper.
- Heat about 1 inch of oil to 350*F in a heavy skillet.
- (I use my cast iron one).
- Dredge the tomato slices, one at a time in the seasoned flour, shaking off any excess.
- Fry the slices in hot oil.
- Do NOT crowd.
- (slices should not overlap as they cook).
- Fry each side until it begins to turn brown.
- Turn in the oil and fry until golden brown and crisp.
- Drain on paper towel.
- Salt to taste.
- Serve with tomato chutney.
- Yummy!

FRIED GREEN TOMATOES
Fried green tomatoes are delectably moist in the inside, deliciously crunchy and crispy on the outside. Here's my take on this traditional southern recipe.

- Wash and slice your tomatoes into thick slices, not less than 1/4-inch, not more than 1/2-inch.
- Heat plenty of lard or vegetable oil over medium heat in your favorite thick-bottomed skillet.
- In the meantime, set flour aside in a small bowl or plate. Whisk eggs in another, and use the third plate for cornmeal.
- Dip the tomato slices first in flour, then the egg mixture, lastly in the cornmeal. Make sure the last layer is nice and thick for a spectacular crunch.
- Once the lard/oil is hot, place the coated tomatoes one by one into the hot fat and fry until they are golden brown. If they cook too fast, they will be crunchy inside and out. So, don't rush. Cook them slowly enough, about 3 minutes on the first side, before flipping.
- When done frying, place them on a wire rack to chill.

- First, cut your tomatoes at 1/8 inch and lay out to dry -- I lay down paper towel and then place tomatoes on a cooling rack and then layer more paper towels on top. THIS STEP IS VERY IMPORTANT!
- While tomatoes are drying, mix together flour, black pepper, Italian seasoning, and cayenne pepper.
- Dip tomatoes slices into egg and milk mixture and then coat with flour and seasoning mixture.
- Place in a hot skillet with oil and fry for about 3 minutes on both sides or until browned.
- I usually place them back on the cooling rack so they don't get soggy when they are finished.
- Serve immediately!

- For the mayo: In a food processor, puree the basil, mayonnaise, lemon juice and mustard. Season with salt and pepper and set aside. For the sandwich: Place the pancetta slices in a large nonstick saute pan set over medium heat and saute on both sides until crispy, about 3 minutes per side. Set aside on a paper towel-lined plate until ready to assemble the sandwich. For the tomatoes: In a large shallow dish, add 1/4 cup flour. In a separate baking dish, beat the egg, buttermilk, baking powder and baking soda. In a separate large shallow dish, add the remaining 3/4 cup flour, cornmeal, salt and cayenne pepper. Place the tomatoes on a wire cooling rack set inside a rimmed baking sheet. Repeat the process with all the tomatoes. Pour a 1-inch layer of vegetable oil into a cast-iron skillet. Heat the oil over high heat until it reaches 350 degrees F. Carefully add 4 tomato slices to the oil and fry until the tomatoes are golden brown, about 2 minutes on each side. Transfer the fried tomatoes to a baking sheet or plate lined with paper towels, season with salt and cool. Repeat with the remaining slices. To assemble the sandwich: Slather each slice of bread with a generous amount of the basil mayo. Top 4 of the bread slices with 4 pieces of crispy pancetta, 2 fried green tomatoes and top with arugula. Finish by topping the sandwich off with the other slice of bread.;
