- Toss 2 pounds sweet potatoes (cut into wedges) with 3 tablespoons olive oil, 1 1/2 teaspoons each brown sugar and salt, 1/4 teaspoon each cumin and chili powder, and a pinch of cayenne. Roast cut-side down on a baking sheet in a 425 oven until crisp, 30 minutes, turning once.

- Preheat the oven to 400 degrees F.
- Place the sweet potato "fries" on a foil-lined baking sheet and toss with the olive oil. Bake until golden, about 45 minutes.
- Meanwhile combine the basil, salt, and pepper in a small bowl. In another small bowl combine the mayonnaise, garlic, and lemon juice, and stir to combine.
- When the sweet potato fries come out of the oven, sprinkle with the basil salt. Serve with the garlic mayonnaise alongside for dipping.

- Preheat oven to 425*F.
- Spray cookie sheets(or baking pans) with nonstick cooking spray(you may line with foil for quicker cleanup if you wish). Set aside.
- Mix potatos with 1/2 cup mayonnaise in a large bowl, toss to coat. Arrange in a single layer on cookie sheets.
- Bake 20 minutes. Rotate pans and bake an additional 15 minutes or until poatoes are golden.
- Combine remaining 1/2 cup mayonnaise with 1/4 cup barbeque sauce in a small bowl.
- Serve with fries. Enjoy!
SWEET POTATO FRIES WITH CHIPOTLE MAYONNAISE (YAM FRIES)
Taste of 2008! This is a nice change from regular fries and these definitely will tempt your taste buds. Served along with a nice spicy chipotle mayonnaise it satisfies many cravings! Although these fries are done in the oven if you prefer you can deep fry for a more crispy effect. Enjoy!

- Preheat oven to 425°.
- Mix together seasoning. In a bowl combine 1 Tbsp oil and 2 tsp seasoning per sweet potato. Toss and place on greased baking pans. Making sure that potatoes are spread out in pan. Bake for 30-40 minutes turning every 10 minutes.
- Serve with chipotle mayonnaise to prepare mayonnaise combine mayonnaise,* chipotle pepper, 1 tbsp adobe sauce and 2 drops Tabasco sauce. (*I use Chipotle peppers in a can that are in the adobe sauce already, found usually in Mexican food aisles of the supermarket).
- *Save remaining seasoning mixture in ziploc bag for next time.

A great recipe found in Jean Pare's Company Cookbook "Fish and Seafood" We used whitefish caught in Lake Superior. Great appy or main course as fish patties. We doubled the recipe and served as an appetizer

Steps:
- Cover fillets with water in saucepan. Bring to a boil.
- Simmer covered for 5 minutes until fish flakes when tested with a fork.
- Drain, cool and flake.
- Beat 1 egg with fork in bowl. Add next 9 ingredients. Add fish. Mix well.
- Let stand 10 minutes so crumbs absorb moisture.
- Shape mixture into 1 inch balls.
- Beat 2 large eggs and 2 tbsp water together with fork.
- Dip ball in egg mixture and coat with crumbs.
- Deep fry in hot 400F fat until browned.
- Serve with picks and seafood sauce.
- To make as patties, form into 4 patties and dip in bread crumbs.
- Brown on both sides in 2 tbsp hard margarine not butter.
CRISPY FISH OR CHICKEN SANDWICH WITH SPICY MAYONNAISE
A recipe for 2; easily doubles. Panko crispy fish or chicken with a wonderful spicy mayo. Looks like a lot of ingredients, but can be thrown together quickly. See "Note" at bottom of directions for the chicken version.

- Spicy Mayonnaise: In a small bowl combine mayonnaise, lemon juice, hot sauce, and rice vinegar until blended. Set aside.
- Preheat oil in saute pan.
- Wash fillets and pat dry with a towel. Lightly sprinkle with Cajun seasoning on both sides.
- In one bowl, place flour mixed with 1 1/2 tablespoons Cajun seasoning. In a separate bowl place the panko and in a third bowl, beat together the egg, Dijon mustard and 1 1/2 tbs. water.
- Dredge fillets into flour, then the egg mixture and lastly, the panko. Add fish or chicken to oil and fry until golden brown, about 5-6 minutes depending on thickness. Remove to a paper towel lined platter.
- To assemble, spread the Spicy Mayonnaise mixture on both inner sides of the toasted pistolettes then layer within the hot fish (or chicken) fillets, romaine, tomatoes and onion slices.
- NOTE: For the chicken version, with a mallet pound skinless, boneless breast fillets to a 1/8" thickness then proceed with recipe instructions.
