Steps:
- Heat oil in a large, heavy pot (preferably cast iron) to 365 degrees. In a medium bowl, whisk together flour, cornstarch, 1 teaspoon salt, and baking powder. Gently whisk in club soda; do not overmix (there may be some lumps). Let stand 15 minutes.
- Pat fish very dry; season with salt and pepper. Working with a few pieces at a time, dip fish in batter, then transfer directly to hot oil with tongs. Cook until crisp and golden brown all over, about 3 minutes. (Be sure to keep oil temperature between 345 degrees and 365 degrees.) Transfer to paper towels to drain. Serve fish hot on rolls, with tomatoes, pickles, chips, and tartar sauce, and lemon wedges alongside.
OVEN "FRIED" FISH
The other day, my husband was asking for fish and chips but with my high cholesterol, I have to avoid things like that. I found in a magazine at the doctor's office this recipe for oven fried fish, which is nice and crispy like the deep fried kind but without all the fat. This is excellent served with evelyn/athens' Spicy Oven Fries and your favourite cole slaw recipe.

CRISPY PAN FRIED FISH
Recipe video above. 3 key tips to ensure your pan fried fish comes out beautifully golden and crispy every time: pat the fish dry, press flour on well but shake excess off well, and heat the pan first before adding the oil or use a heavy duty non stick pan. With a good fish, well seasoned and crispy skin, I don't need a sauce....but I've added a couple in the notes just in case! :)

Steps:
- Use scrunched up paper towels to pat the fish dry on both sides. This is especially important if you are using thawed frozen fish.
- Season the fish well on both sides with salt and pepper (key!).
- Mix the flour and paprika on a plate.
- Coat fish on both sides with flour, pressing down firmly so it adheres, but shake well to remove excess. (Note 2)
- Heat a heavy based skillet (normal or non stick) over medium high heat until you see wisps of smoke. Add oil and swirl to coat the pan - it will heat within seconds.
- Add fish - it should sizzle straight away. Shake the pan lightly to move the fish. Cook for 2 minutes until golden and crisp, pressing down gently, then flip. Cook the other side for 2 minutes until crisp then remove.
- If it's browning too quickly, just remove pan from the stove briefly. If it's stuck, don't move - it will release naturally once golden.
- Serve fish immediately with lemon wedges and garnished with dill or parsley, if using. It starts to lose crispiness after 5 minutes.

Steps:
- Heat a few inches of your cooking oil in a large skillet over medium-high heat or in a deep fryer.
- Season all sides of your fresh cod fillets with salt, then slice into 8 even pieces.
- Shred your cabbage with a sharp chef's knife or a mandolin slicer.
- Place all of your batter ingredients in a shallow mixing bowl - all-purpose flour, sea salt, cayenne, egg, and Mexican beer. Whisk together the mixture until you create a smooth batter. Set aside.
- In a medium-sized mixing bowl, whisk together the Baja fish taco sauce recipe - mayonnaise, crema, lime, cilantro, and honey.
- Once well mixed, toss in the sliced cabbage mix until well-coated. Set aside.
- Grab some heat-safe tongs or use your fingers to dip each piece of cod into the batter bowl. Hold the cod above the bowl for a few seconds to allow the excess batter to drip off before carefully placing it into the preheated oil.
- Fry the cod in the oil until both sides brown; you'll likely need to gently flip the fish over halfway as it often floats at the top.
- Remove the fish with a stainless steel mesh scoop, then transfer to a large dinner plate lined with a few paper towels. Lightly salt.
- Continue the deep-frying process until you've cooked all your cod.
- Use a tortilla warmer to heat your tortillas, then top them with a piece of cooked fish.
- Top with your cabbage slaw in Baja sauce
- Add your final fish taco toppings - a squeeze of fresh lime, cilantro, salsa verde, or pico de gallo.
- Immediately serve and enjoy your fried fish tacos with slaw!

HOW TO REHEAT FRIED FISH - 6 BEST WAYS - HOWCHIMP
From howchimp.com
Estimated Reading Time 8 mins
- Oven. Using the oven is arguably the best way to reheat fried fish because it preserves the taste more, and you can conveniently control the way you reheat.
- Toaster Oven. The same procedure as the oven applies to reheating your fried fish in the toaster oven. The toaster oven is smaller than your regular oven, but it provides a gentle and even reheating of your fish.
- Broiling or Steaming. This method is one healthy way to reheat your fried fish. You don’t introduce additional oil and allow the natural flavor of the fish to resurface.
- Grilling. Grilling is another useful option to reheat your fried fish. It would help if you were more careful with this cooking method, as you could significantly increase the risk of crumbling your fried fish.
- Deep or Shallow Frying. Some would say that deep or shallow frying is the best way to reheat fried fish; however, the added oil is unhealthy. To help remedy this problem, you can use non-stick skillets.
- Microwave. This method should be your last option because it tends to dry your fish and ruin the flavor. The microwave oven is one of the quickest ways to reheat your fried fish, but it’s not the most ideal.

- STEAMED BROCCOLI. Steamed broccoli is one of the best sides you can make with your fish fillet because it’s packed full of nutrients. It doesn’t have to be served hot, but having some warm broccoli next to your fish will give it a great taste.
- PEACH SALSA. Salsa is a great addition to fish, especially when you throw in some peaches. Peach salsa is unique because it has a hint of sweetness, but you can spice it up with jalapenos or serranos if you want more heat.
- CORN AND TOMATO SALAD. When you need a light and refreshing salad, try this corn and tomato salad. It’s very colorful and tastes even better than it looks.

- Popeyes Seafood Po'boy. Popeyes continues to change the game with its under-appreciated po' boy lineup, featuring your choice of hand-breaded chicken strips, fish fillets, or battered shrimp, dredged in the chain's signature blend of herbs and spices and crispy-fried to perfection.
- McDonald's Filet-O-Fish. After almost 60 years, could the sandwich that started it all, the one that summarily trounced Ray Kroc's visions of pineapple sandwiches way back in 1962, still hold its ground in a sea of similar fast food fried fish sandwiches?
- White Castle Fish Slider. Look, no one is as surprised to see this as high in the ranking as we are. After all, what could a chain made famous by steamed onion burger bites possibly know about the fried fish sandwich game?
- Arby's Crispy Fish Sandwich. The Crispy Fish Sandwich from Arby's isn't always available at every location all year long, but when this limited time offering returns, it's worth snapping up.
- Culver's North Atlantic Cod Sandwich. Culver's has quite the eclectic menu; there aren't a lot of places that carry things like a pork sandwich and a pot roast sandwich.
- Captain D's Giant Fish Sandwich. If you have a Captain D's in your area, you know the score. For those who aren't as lucky, think of it as a Long John Silver's with a southern flare — it might not be the exact same, but it's not too far off.
- Long John Silver's Classic Fish Sandwich. Hang on! Before you jump in your vehicle of choice and head down to the local Long John Silver's to try a sandwich, you better make sure they actually have a sandwich on the menu.
- Burger King Big Fish. Evaluating fast food fish sandwiches can be tricky business, mostly because there are so many variables in preparation that can make even a potentially great fish sandwich wildly unpalatable.
- Hardee's/Carl's Jr. Redhook Beer Battered Fish Sandwich. If Hardee's/Carl Jr. (which is the same place, basically) were a state, they'd be Texas. Everything they carry is just big, and they're proud of it.
- Chick-fil-A Fish Sandwich. Naturally, during the Lenten season, quick serve restaurants will promote their fish products even more. Probably the last place you'd expect to see one is Chick-fil-A, but even they jump in with an offering available for 40 days at select locations.
