FRIED FETA WITH HONEY AND SESAME (FETA SAGANAKI)
You have to try this decadent fried feta appetizer that takes just 10 minutes to make! Feta cheese with a sesame seed crust is lightly pan-fried in extra virgin olive oil before being drizzled with warmed honey. Serve it warm with an ouzo cocktail and pita chips, or as part of a larger mezze spread.

- Break the eggs in a shallow bowl. Add 1 to 2 tablespoons water. Whisk to combine.
- In another shallow bowl add the flour, then add the sesame seeds in a third shallow bowl right next to the flour.
- Slice the block of feta into ½-inch thick slices.
- Take one slice of the feta and roll it in the flour (turn it over to make sure all sides of the feta are covered). Dip the feta in the egg mixture, then roll it in the prepared sesame seeds. Set aside. Repeat until all the feta slices are covered in the egg, flour, and sesame seeds.
- In a cast iron skillet, add extra virgin olive oil to cover the bottom of the skillet by about 1 inch (if you use a smaller skillet, you'll need less oil, but you'll need to work in batches).
- Heat the olive oil over medium-high heat until shimmering. Add the feta cheese slices so that they are each touching the hot bottom of the skillet. Fry on one side until golden brown, then turn over and fry on the other side until golden brown and crusty. Transfer the fried feta to a tray or plate lined with paper towel to drain excess oil.
- To serve, transfer the feta to a plate and drizzle with warmed honey (I simply warm the honey in a small skillet, and I like to add a dash of red pepper flakes). Serve warm.

- Sautee the Spinach. In a grill pan, heat 1 tablespoon extra-virgin olive oil over medium-high heat until shimmering. Add the spinach and cook for a couple of minutes, tossing, until wilted. Transfer the spinach to a plate for now and turn the heat off.
- Assemble the sandwiches. Open up the pita pockets (it helps to warm the pita so they don’t break when you open them). Spread the feta on the bottom followed by basil pesto. Spoon a bit of the wilted spinach on top. Add the mozzarella and sundried tomatoes.
- Grill the pitas. Heat the grill pan again over medium-high. Brush the pitas with extra virgin olive oil on both sides. Arrange the pita sandwiches in the heated pan, making sure they are all touching the hot pan. Cook for 1 to 2 minutes or so on one side, applying pressure on the top part of the sandwich with the back of a spatula, turn over and cook for another couple minutes, applying pressure again with your spatula, until the cheese is melted and the bread gains some beautiful char marks. Manage the heat to make sure the bread is well-crisped but not burned and the mozzarella is melted (you may need to cover the pan very briefly).

- Slice the feta block into little squares, about 1 inch long and 1/2 inch thick. Gently pat the feta dry with a paper towel before coating in the flour/breadcrumb mixture.
- Gather and assemble three shallow bowls: fill one bowl with the flour, one with an egg, slightly beaten, and one with the breadcrumbs.
- Take the feta squares and dip each in the flour. Coat all sides. Transfer the square to the egg bowl, all excess egg to drip back into the bowl. Finally dip the square in the breadcrumbs. Coat all sides and press the crumbs gently into the feta. Place the cheese on a small plate and continue this process until all of your cheese is ready to fry.
- Fill a small frying pan with olive oil, so that the oil is about 3/4 -1 inch deep. Place the pan over a medium high heat and heat until the oil sizzles when you flick a few water drops into the oil. When the oil is hot enough gently place the breaded feta in the oil. Fry for one minute or until golden brown, gently flip the feta over and fry for another minutes. Only fry a few squares of cheese at a time so that the pan doesn't overcrowd. If you overcrowd the pan your cheese may not crisp up and flipping may be difficult. After each side is golden brown, remove the cheese and place them on a plate lined with a paper towel to absorb the excess oil. Set aside to cool slightly while you prepare the salad.
