Confectioners' sugar, for sprinkling

Steps:

  • Pour some oil into a heavy-bottomed pot and heat over medium heat until a deep-frying thermometer registers 400 degrees F.
  • Cut the pastry scraps into thin strips. Drop the strips into the hot oil, in batches if necessary, and fry for about 30 seconds, flipping. Drain on a paper towel-lined plate and sprinkle with confectioners' sugar.

1 gallon oil, for frying
One 8-ounce pizza dough
1/4 cup all-purpose flour
4 tablespoons chocolate sauce
1/8 cup powdered sugar

Steps:

  • Preheat the oil to 350 degrees F. Dust the dough with the flour. Pound out the dough as thin as possible with your hands or with a rolling pin. Cut the dough into 2 pieces. Carefully place the dough into the hot oil. Cook until the dough is browned, 1 to 2 minutes, then repeat on the other side. Carefully transfer the dough from the oil to a paper-towel-lined plate.
  • Place the dough on a clean plate. Drizzle the chocolate sauce over the dough and dust with the powdered sugar.

1/4 teaspoon salt
1 tablespoon shortening
1/3 cup milk

Steps:

  • Mix dry ingredients in large bowl. Blend in shortening with pastry blender. Stir in milk with a fork until soft dough is formed.
  • On lightly floured surface, knead dough 2 or 3 times. Cut into fourths, form each piece into a circle. Roll to 1/2 inch thickness.
  • Place two at a time into the deep fat fryer, turning to brown evenly on both sides. Cook for 4-5 minutes. Drain on paper towels.

1 (1/4 ounce) package active dry yeast
1 cup water
1 1/2 cups all-purpose flour
1 quart vegetable oil (for frying)
2 tablespoons confectioners' sugar

Steps:

  • Heat about 3 inches of oil in a saucepan to 375°F (119°C).
  • In a large bowl, dissolve yeast in 1/2 cup warm water; set aside for 10 minutes.
  • Stir the remaining 1/2 cup water into the bowl.
  • Add flour, beating vigorously until a soft dough forms.
  • Turn the dough out onto a smooth surface, and knead with greased hands until smooth.
  • Place dough in a greased bowl, and turn to coat the surface.
  • Cover with a damp cloth.
  • Let rise in a warm place until double in bulk, about 1 to 1/1/2 hours.
  • Fry golf ball sizes of dough in batches until golden brown.
  • Drain on paper towels.

This has been a Christmas morning tradition in our home for the past 43+ years. It is so easy and one that the family wouldn't want to be without. Serve it with butter and confectioners sugar, or maple syrup if you choose. Whatever way--they are yummy! By the way, my grandmother used to raise dough every Friday night for baking bread on Saturday and in the morning would snip off a little bit and fry them for my mom as a treat. I tried the homemade bread dough, and although it was good, I like the frozen bread dough better and my mom agreed.

2 loaves frozen white bread dough
cooking vegetable oil
cooking spray

Steps:

  • Spray a large platter or bowl with cooking spray.
  • Place the two frozen loaves on the platter or bowl and cover with plastic wrap that has also been sprayed (the spray will help the dough not to stick as you are cutting it off in the morning).
  • Place in an unheated oven, out of the way of drafts, about ten hours before you want to fry it.
  • In the morning, place the vegetable oil in a heavy pan about three inches deep.
  • Heat the oil on medium high so that when a very small piece of dough is dropped in the oil, it sizzles.
  • With a very sharp knife, slices off hunks of dough about the size of small baseball and pull them slightly so that they stretch out.
  • Place in hot oil and brown on one side and then turn with fork and brown the other side.
  • When done, drain on paper towels and repeat the process.
  • Serve hot with butter (and I like a little salt on them), sprinkle with confectioners sugar.
  • You may also try cinnamon and sugar or maple syrup.

2 cups king arthur unbleached all-purpose flour (use any brand)
2 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons cold unsalted butter, in 1/2-inch cubes
3/4 cup lukewarm water

Steps:

  • Mix the flour, baking powder, and salt.
  • Work in the cold butter, using a pastry blender, your fingers, or a mixer.
  • Stir in the warm water to make a soft dough. Cover and let rest for 15 minutes.
  • Divide the dough into eight pieces. Working with one piece at a time, roll into a thin 5" round, about 3/8" thick.
  • Heat about 3/8" vegetable oil to 375°F in an electric frying pan, or in a pan over a burner. If you're using a 10" diameter pan, this is 2 cups of vegetable oil. If you're not using an electric frying pan, use a candy thermometer to take the temperature of the oil; or guesstimate it by seeing if the first piece of dough fries nicely in the time specified.
  • Pick up one dough disk, and carefully lower it into the pan. Let it cook for 60 seconds (it'll puff up on top and become light brown on the bottom), then flip it over and cook until light brown on the other side, about 60 seconds. You don't want to cook these too dark; they'll become overly crisp.
  • Remove from the oil and set on a paper towel-lined baking sheet. Place in a 200°F oven to keep warm while you make the remaining fried doughs.
  • Serve warm, with maple syrup or cider syrup; confectioners' sugar, or cinnamon sugar; or the topping of your choice - some folks enjoy a savory version, with marinara sauce and cheese.
  • TIP:.
  • Peanut oil is our favorite deep-frying oil; it has a higher smoke point, and neutral flavor.
  • Up to 1/4 of sugar may be added if desired.

1/2 cup milk
3/4 cup water
1 tablespoon canola oil
1 teaspoon salt
1/4 cup sugar
3 cups flour
2 teaspoons yeast

Steps:

  • Add to the bowl of a bread maker and set on the dough cycle. Or, mix vigorously in a large mixing bowl and let rise until double in bulk.
  • Turn the dough out onto a floured surface. Punch down and knead.
  • Roll out to about 1/8 inch thick.
  • Cut into strips 2 ½ inches wide and cut the strips into squares. Or just grab some dough and streach it into the shape of an elephants ear.
  • Cover and let rest for about 10 minutes.
  • Using a large fry pan, fill with about three inches of cooking oil. Heat until the temperature of the oil is 360 degrees. If the fat is too cool, the dough will absorb the oil and if the fat is too hot, the dough will brown before it is cooked in the middle.
  • Lower the dough gently into the cooking oil, two or three pieces at a time. When brown on one side, turn and brown on the other side. Lift from the cooking oil with a fork or tongs and drain on paper towels.
  • Brush the fried dough with melted butter and sprinkle with powdered or cinnamon sugar.

½ cup warm water (110 degrees F/45 degrees C)
5 teaspoons active dry yeast
1 pinch white sugar
1 cup warm milk (110 degrees F/45 degrees C)
⅓ cup white sugar
1 ½ teaspoons salt
1 teaspoon vanilla extract
3 beaten eggs
⅓ cup vegetable oil
5 cups whole-wheat flour, divided
1 quart vegetable oil for frying
2 cups white sugar
½ teaspoon ground cinnamon, or to taste

Steps:

  • Mix warm water, yeast, and 1 pinch of sugar in a large bowl, and let stand until the yeast begins to foam and form a creamy layer, about 5 minutes. Stir in milk, 1/3 cup sugar, salt, vanilla extract, eggs, and 1/3 cup vegetable oil until the sugar has dissolved. Mix in about half the whole-wheat flour, and stir until the dough is too stiff to add more flour. Turn the dough out onto a floured surface, and knead in more flour until the dough is no longer sticky. Knead until smooth and elastic, about 10 minutes. Form the dough into a ball, place into an oiled bowl, and cover. Let rise until the dough has doubled in size, about 1 hour.
  • Punch down the dough, knead a few times to reshape it, and pinch off a piece of dough about the size of an egg. Roll the dough ball out into an oval shape about 1/4 inch thick. Place finished fried dough on a cloth and cover while you finish rolling out the pastries.
  • Heat oil in a deep-fryer or large, deep skillet to 375 degrees F (190 degrees C). Oil should be at least 4 inches deep. Combine 2 cups of sugar with cinnamon to taste in a shallow dish or pie plate, and set aside.
  • Gently lower the pastries, one at a time, into the hot oil, and fry 1 to 2 minutes per side until golden brown. Blot excess oil from fried pastries with paper towels; gently press each pastry into the cinnamon sugar while still warm. Shake off excess sugar.
