Nonstick cooking spray, for the pan
1 cup granulated sugar
3/4 cup all-purpose flour
1/2 cup cake flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon kosher salt
1 large egg, at room temperature
1 cup full-fat coconut milk, at room temperature
1 tablespoon lemon juice
1 teaspoon vanilla bean paste or vanilla extract
1/2 teaspoon coconut extract
1/4 cup coconut oil, melted but not hot
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup powdered sugar
Pinch kosher salt
1/2 teaspoon vanilla bean paste or vanilla extract
2 tablespoons full-fat coconut milk, at room temperature
1/2 cup shredded coconut
20 ounces white chocolate
1 teaspoon neutral oil or coconut oil
Oil-based food coloring, optional
Mini dark chocolate chips, optional (for bowling balls)

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease an 8-inch round cake pan with cooking spray and line the bottom with parchment paper.
  • Whisk together the granulated sugar, all-purpose flour, cake flour, baking powder, baking soda and salt in a large bowl. Whisk together the egg, coconut milk, lemon juice, vanilla and coconut extract in a medium bowl until combined. Whisk in the coconut oil. Add the wet ingredients to the dry ingredients and stir to combine. Pour the batter into the cake pan.
  • Bake until a toothpick inserted in the center comes out clean, 25 to 30 minutes.
  • Let cool in the pan for 10 minutes, then remove to a rack to cool completely.
  • For the frosting: Beat the butter with a stand mixer fitted with the paddle attachment on medium speed until creamy. Reduce the speed to low and gradually add the powdered sugar, beating to combine. Beat in the salt, vanilla and coconut milk.
  • For the assembly: To make the cake balls, crumble the cake into a large bowl with your hands. Mix in the coconut, then mix in the frosting until it's combined. Line a quarter-sheet pan with parchment paper. Roll smooth 1/4-cup-sized balls and place on the parchment. Freeze until firm to the touch, about an hour.
  • Melt the white chocolate in a double boiler or a microwave for 30-second increments, stirring after each. Stir in the oil. Add a few drops of food coloring, if using, and swirl it around. Do not mix it all the way together, so that the swirl is still visible. Using two forks, dip the chilled balls in the chocolate to coat evenly, then allow any excess to drip off. Place back on the parchment to harden at room temperature, about 30 minutes. Before it fully hardens, add three chocolate chips to each to look like a bowling ball!

2 quarts peanut oil
1 pound mozzarella
1/4 pound thinly sliced prosciutto
1 cup all-purpose flour
1/2 tablespoon garlic powder
1/4 tablespoon onion powder
1/4 tablespoon paprika
3/4 cup buttermilk
1 egg
1/4 cup panko bread crumbs
1/4 pound Parmesan, finely shredded
1 cup sour cream
1 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon paprika
1 tablespoon celery salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon salt
1 tablespoon freshly ground black pepper
1/2 pound blackberries

Steps:

  • Heat the peanut oil in a deep-fryer or heavy-bottomed pot to 375 degrees F.
  • Cut the mozzarella into 1/2 by 1/2 by 2-inch strips and wrap them with prosciutto. Mix the flour, garlic powder, onion powder and paprika together in a bowl. Add the buttermilk and egg and whisk until combined. In a shallow bowl, combine the panko and finely shredded Parmesan.
  • Insert skewers into the mozzarella, dip them into the batter, then coat them with the panko mixture.
  • Deep-fry, in batches if necessary, until golden brown, approximately 2 minutes. Transfer the mozzarella to a serving platter.
  • Combine all of the dipping sauce ingredients, except the blackberries, in a medium bowl. Mash the blackberries through a metal strainer to remove the seeds.
  • Mix the blackberry juice into the dipping sauce and serve with the cheese sticks.

Steps:

  • Combine chicken, cream cheese, almonds, mayonnaise, mango chutney, curry powder, and salt in a large bowl. Mix well.
  • Roll 1 tablespoon of the mixture into a ball. Repeat with the remaining mixture. Roll each ball in grated coconut to coat.
