GRILLED VEGGIE SALAD WITH AVOCADO RANCH



Grilled Veggie Salad with Avocado Ranch image

Number Of Ingredients 15

1/2 large avocado
1/4 cup buttermilk
1/4 cup mayonnaise
Juice of 1 lemon (about 1/4 cup juice)
1/4 cup roughly chopped fresh chives, plus more for garnish
1/4 cup chopped fresh dill, plus more for garnish
1/4 cup fresh parsley leaves, plus more for garnish
4 ears corn
1 orange (or red or yellow) bell pepper, cut into planks
8 ounces fresh green beans, ends trimmed and snapped in half
5 teaspoons olive oil
Kosher salt and freshly ground black pepper
2 romaine hearts, roughly chopped
8 cherry tomatoes, quartered
1/4 small red onion, thinly sliced

Steps:

  • For the avocado ranch dressing: Add the avocado, buttermilk, mayonnaise, lemon juice, chives, dill and parsley to the jar of a blender and puree until smooth and bright green. Set aside.
  • For the salad: Heat a grill or grill pan over medium-high heat. Drizzle each ear of corn, peppers and green beans with olive oil, then sprinkle with a pinch of salt and a few grinds of black pepper. Add the vegetables to the grill in a single layer. Grill on all sides until char marks begin to appear, a few minutes. Remove vegetables from the grill and set aside. When the corn is cool enough to handle, slice kernels off the cob.
  • Put the romaine into a large salad bowl along with the cherry tomatoes, onions, green beans, corn, peppers, 1 teaspoon salt and a generous amount of black pepper. Drizzle all of the dressing over the top and toss until well combined. Sprinkle with more chives, dill and parsley before serving, if desired.

1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup club soda
1 pound cheese curds
4 cups vegetable or canola oil
Marinara sauce, for serving

Steps:

  • In a medium bowl, mix the flour, baking powder and salt. Stir in the club soda and mix until smooth. Add the cheese curds to the batter and coat thoroughly.
  • Heat the oil in a large, heavy skillet or heavy-bottomed pot over medium heat until a deep-frying thermometer inserted in the oil reads 360 degrees F. Fry the cheese curds for about 1 minute, turning halfway through. Drain on paper towels. Serve the fried cheese curds with marinara or your favorite dipping sauce.

Ranch Seasoning, recipe follows
1 teaspoon dried parsley
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon sugar
Freshly ground black pepper

Steps:

  • Add the yogurt and Ranch Seasoning to a bowl and mix until evenly combined. Serve as a dip with vegetables or whatever you like!
  • Add the parsley, salt, garlic powder, onion powder, basil, thyme, sugar and some black pepper to a small jar with a lid. Secure the lid and shake until combined.

HARISSA CARROTS AND RANCH

2 pounds medium rainbow carrots, halved lengthwise
1/4 cup olive oil, plus more for drizzling
1 teaspoon kosher salt
1/4 cup maple syrup
2 tablespoons harissa paste
2 teaspoons ground cumin
2 cloves garlic, grated with a fine zester
Zest of 1 lemon
Freshly ground black pepper
1/4 cup ranch dressing
1/4 cup roasted and salted pistachios, coarsely chopped
Flaky salt, for sprinkling

Steps:

  • Preheat a grill or grill pan over medium heat. (See Cook's Note.)
  • Put the carrots in a large bowl and drizzle with olive oil. Sprinkle with salt and toss to coat. Place the carrots on the grill and cook, flipping halfway through, until fork-tender, 10 to 12 minutes.
  • Meanwhile, combine the olive oil, maple syrup, harissa, cumin, garlic, lemon zest and black pepper in a small bowl. When the carrots are almost cooked, brush with the harissa glaze. Remove from the grill and transfer to a serving plate, then drizzle with additional harissa glaze. Follow with a drizzle of ranch dressing, then sprinkle on the pistachios and a pinch or two of flaky salt. Serve and enjoy!

1 cup all-purpose flour
¾ cup beer
½ teaspoon salt
2 eggs
2 pounds cheese curds, broken apart

Steps:

  • Heat corn oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Whisk together milk, flour, beer, salt, and eggs to form a smooth, rather thin batter. Place cheese curds, about 6 or 8 at a time, into the batter, stir to coat, and remove with wire strainer. Shake the curds a time or two to remove excess batter. Deep fry the curds until golden brown, 1 or 2 minutes. Drain on paper towels; serve hot.
