Just as South and Central American countries have their fried plantains, the Vietnamese have fried bananas, usually sold on the streets by women in front of their houses. The firmer the bananas, the better.

6 tablespoons all-purpose flour
2 tablespoons sugar
1 egg, beaten
1/4 cup milk
1 pinch salt
4 medium bananas (the firmer they are, the better)
peanut oil (for frying)

Steps:

  • Mix together the flour, sugar, egg, milk and salt to make a smooth, paste-like batter.
  • Leave to rest for one hour.
  • Peel the bananas and slice each one in half lengthwise, then across into chunks about three inches long.
  • Dip the banana pieces into the batter and shallow fry in hot oil for a few minutes or until golden brown all over.
  • Drain quickly on a wire rack or paper towel, and serve warm.
  • If you like, serve them with real maple syrup, powdered sugar, or honey, for extra sweetness.

  • Cut each banana half into 3 or 4 pieces.

One 4-ounce bar semisweet chocolate, chopped
Small pinch cayenne pepper (less than 1/16 teaspoon)
1 tablespoon unsalted butter
4 slightly underripe bananas, split lengthwise in half, then cut crosswise in half
1/4 cup light brown sugar
1/3 cup sliced almonds, toasted

Steps:

  • For the chocolate sauce: Combine the chocolate and 1/4 cup water in a heavy small saucepan. Stir over medium-low heat until the sauce is melted and smooth. Remove from the heat. Stir in small pinch cayenne pepper. Set aside.
  • For the bananas: Place the brown sugar in a pie dish or on a plate. Toss the bananas in the brown sugar until nicely coated. Melt the butter in a heavy large skillet over medium-high heat until the butter becomes golden brown. Add the bananas to the hot pan cut-side down. Turn the bananas over as soon as they are golden brown and the sugar forms a crunchy coat on the bananas, about 30 seconds per side (do not allow bananas to become soft and mushy). Divide the bananas between 2 shallow bowls or plates. Spoon the chocolate sauce over the bananas. Sprinkle with the toasted almonds, and serve immediately.
  • Cook's Notes: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
  • An alternate way to melt the chocolate is to combine the chocolate and water in a small metal bowl over a small saucepan of simmering water, and stir the chocolate mixture until melted and smooth. Remove the bowl from over the water and set aside.

1 cup all-purpose flour
1/2 cup club soda
1/2 cup milk
2 tablespoons powdered sugar plus more for serving
1 teaspoon cornstarch
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
2 ripe bananas, peeled and cut into 1-inch-thick diagonal slices
Canola oil, for frying
Chocolate Fondue (see recipe below)
Additional assorted dippers for serving, such as strawberries, pears, marshmallows and raspberries
10 ounces good quality semi-sweet dark chocolate (62%), chopped
3/4 cup heavy cream
1 teaspoon vanilla extract

Steps:

  • Add the flour, club soda, milk, powdered sugar, cornstarch, vanilla and salt to a medium-sized bowl. Whisk to combine and break up any lumps. Add the sliced bananas and stir them around to coat them completely in the batter. Cover the bowl and refrigerate while you make the chocolate fondue and heat the oil for the bananas.
  • For Frying: Add about 1-inch of oil to a Dutch oven or heavy bottomed skillet. Attach a candy thermometer and bring the heat up to 350 degrees F. Once the oil is hot, remove the bananas from the fridge, letting any excess batter drip back into the bowl, and transfer them to the oil. Fry until golden brown, 1 to 2 minutes per side. Use a slotted spoon to remove the bananas to a wire rack. Let the bananas cool for 1 minute. Dust with powdered sugar and serve immediately with the Chocolate Fondue and other dippers using fondue forks of wooden skewers.
  • Add the chocolate, heavy cream and vanilla to a large bowl set over a double boiler. Heat over medium-low, stirring occasionally, until the chocolate is completely melted and incorporated with the cream, about 5 minutes. Keep warm on the double boiler until ready to serve. Once ready to serve, carefully transfer the chocolate fondue to a fondue pot to keep warm.

1/2 cup good quality chocolate syrup
1 teaspoon Chinese five-spice powder
Vegetable oil, for frying
1 1/2 cups all-purpose flour
3/4 cup cornstarch
1 1/2 tablespoons baking powder
1 1/2 cups seltzer water
4 bananas, cut in half on the diagonal
1/4 cup powdered sugar
Lavender honey, for drizzling
Creme fraiche, for garnish
Small chunk dark chocolate, for garnish
Fresh mint sprigs, for garnish

Steps:

  • Stir the chocolate syrup and 5-spice powder together and set aside.
  • In a deep fryer or large heavy saute pan with deep sides, heat the oil to 375 degrees F.
  • In a large mixing bowl, combine the flour, cornstarch, and baking powder. Add the seltzer water in a stream while whisking constantly. Dip the bananas in the batter to coat and fry until golden brown. Drain on paper towels and sift the powdered sugar over the top immediately.
  • Place 2 banana pieces on a serving plate and drizzle chocolate sauce over. Top with a drizzle of honey.
  • Top with a spoonful of creme fraiche. Grate chocolate over top. Garnish with a small sprig of mint.

Steps:

  • Peel banana and cut in half lengthwise.
  • Heat butter in a non stick skillet until slightly bubbly but not brown.
  • Place banana halves in the hot butter and fry for about two minutes, then carefully turn and fry other side for about two minutes, too.
  • The banana halves should be slightly browned, so fry a little longer if they aren't browned after those 2x2 minutes.
  • Serve hot, sprinkle with some cinnamon if you wish (I never did).

3 tablespoons dark rum (Cap'n Morgan of course!)
5 tablespoons sweet unsalted butter
1 lime, juice and zest of
4 bananas, firm, ripe, peeled, left whole
real vanilla ice cream, to serve (Tillamook of course!)

Steps:

  • Tip: to make your own superfine sugar, place the sugar in a clean coffee mill or mini-chopper. Blend until crystals are fine but still "sparkle". Be sure not to blend too long, or the sugar will turn to powdered sugar.
  • Over low heat in a large, heavy pan, combine the sugar, rum, butter, lime zest and lime juice.
  • Cook for a few minutes, stirring often to avoid burning. Cook until the sugar has dissolved.
  • Add the bananas to the pan, turning to coat them with the sugar/rum mixture.
  • Increase heat to medium, and cook the bananas for about 5 minutes or until the bananas are a beautiful golden color.
  • Remove bananas from pan and cut in half lengthwise.
  • For each serving, place two banana slices on a dessert plate. Serve with a scoop of vanilla ice cream and generous drizzle of the hot sugar/rum sauce.
