My Mom's Marinated Vegetables were a summer cookout staple when I was growing up. These colorful crunchy fresh vegetables marinated in sweet dressing, are the perfect pot luck or picnic side dish!

Number Of Ingredients 11

1 small head of cauliflower, cut into bite sized pieces (about 4 cups)
5 carrots, sliced (about 2 cups)
5-6 Stalks of celery, sliced (about 2 cups)
1 small sweet onion, chopped (about 1 cup)
1 sweet bell pepper, diced (about 1 cup)
cherry or grape tomatoes, to taste (about 2-3 cups/1 pint)
Black olives, whole or sliced, your choice, optional (6 ounce can)
1/2 cup sugar
1/2 cup vegetable oil
1/4 cup ketchup
1/4 cup white vinegar

Steps:

  • Chop veggies into bite sizes pieces place in an airtight container.
  • Whisk dressing together, pour over veggies, cover and refrigerate overnight, or for a full day even.
  • Serve chilled.

2/3 cup olive oil
1/3 cup balsamic vinegar
1/4 cup minced onion
1 tablespoon chopped fresh basil
1 teaspoon minced garlic
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Combine all ingredients and mix well.
  • Marinade cut vegetables for 3 to 4 hours and then grill or brush marinade onto vegetables as you grill.
  • Yield 1 cup marinade.

½ cup thickly sliced zucchini
½ cup sliced red bell pepper
½ cup sliced yellow bell pepper
½ cup sliced yellow squash
½ cup sliced red onion
16 large fresh button mushrooms
16 cherry tomatoes
½ cup olive oil
½ cup soy sauce
½ cup lemon juice
½ clove garlic, crushed

Steps:

  • Place the zucchini, red bell pepper, yellow bell pepper, squash, red onion, mushrooms, and tomatoes in a large bowl.
  • In a small bowl, mix together olive oil, soy sauce, lemon juice, and garlic. Pour over the vegetables. Cover bowl, and marinate in the refrigerator for 30 minutes.
  • Preheat grill for medium heat.
  • Lightly oil grate. Remove vegetables from marinade, and place on preheated grill. Cook for 12 to 15 minutes, or until tender.

2 cups fresh cauliflowerets
1-1/2 cups fresh baby carrots
2 celery ribs, cut into 1/2-inch pieces
1 medium zucchini, sliced
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and quartered
1 can (6 ounces) pitted ripe olives, drained
1 jar (4-1/2 ounces) whole mushrooms, drained
DRESSING:
3/4 cup vegetable oil
1/3 cup cider vinegar
1 teaspoon garlic salt
3/4 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning

Steps:

  • In a large salad bowl, combine the first eight ingredients. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Pour over the vegetable mixture and toss to coat. , Cover and refrigerate for 8 hours or overnight, stirring occasionally.

I've made this salad many times over the last 25 plus years and it's always been a hit. It's originally from an issue of Southern Living. You can add some red bell pepper to this as well as thinly sliced carrots. Chilling time is cook time.

4 stalks fresh broccoli
8 large fresh mushrooms, sliced
1 medium bell pepper, diced
3 stalks celery, cut into about 1/2 inch slices
1 small head cauliflower, broken into bite-sized flowerettes
1 cup sugar (I've used Splenda)
2 teaspoons dry mustard
1 teaspoon salt
1/2 cup cider vinegar
1 1/2 cups canola oil (I've used less)
1 small onion, grated
2 tablespoons poppy seeds

Steps:

  • Remove flowerettes from broccoli and cut into bite-sized pieces. Reserve stalks for another use or peel and cut into bite-sized pieces and use in salad.
  • Combine broccoli, mushrooms, pepper, celery, and cauliflower in a large bowl and toss lightly.
  • Combine remaining ingredients, mix well, and pour over vegetables.
  • Cover and chill at least 3 hours.
  • *Note: I've put all the dressing ingredients into a food processor along with the onion, diced, and pulsed it to "grate" the onion. Stir in the poppy seeds and pour over the salad.

2 tablespoons balsamic vinegar
1/4 cup finely snipped fresh parsley

  • Combine the vegetables in a large glass or ceramic bowl.
  • Mix dressing ingredients and pour over vegetables.
